<h3 class="wp-block-heading">Where is Ann Arbor? </h3>



<p class="wp-block-paragraph">Ann Arbor is a huge tourist destination in Michigan. Being the home of one of Michigan&#8217;s two Big Ten athletic teams, that brings a lot of visitors. In fact, the Ann Arbor Convention and Visitor&#8217;s Bureau estimates<a href="https://www.mlive.com/business/ann-arbor/index.ssf/2015/03/aaacvb_by_the_numbers.html" target="_blank" rel="noopener noreferrer"> 5.6 million people</a> visited there in 2014.</p>



<p class="wp-block-paragraph">If we figure that 1% of the population has Celiac Disease, we could estimate that 50,000 people are in need of gluten-free dining options while in the area. So to help make your trip a little bit easier, here are my list of top Ann Arbor gluten-free restaurant suggestions. (Plus two dedicated gluten free bakeries!)</p>



<h3 class="wp-block-heading">Zingerman&#8217;s Roadhouse</h3>

<p class="wp-block-paragraph">My first mention in my Ann Arbor gluten-free restaurant suggestions is <a href="https://miglutenfreegal.com/zingermans-roadhouse-gluten-free/" target="_blank" rel="noreferrer noopener">Zingerman&#8217;s Roadhouse</a>. Why? Because Zingerman&#8217;s is synonymous with the name Ann Arbor. The level of <a href="https://miglutenfreegal.com/2017/02/27/zingermans-roadhouse-gluten-free/" target="_blank" rel="noopener noreferrer">care that they take with their food prep</a> is PHENOMENAL.</p>



<p class="wp-block-paragraph">With dedicated fryers, toasters and waffle irons, it gives peace of mind while you&#8217;re enjoying your meal. I mean, look at those Bits &amp; Grits Waffles?! I wish I had a plate of them right now. Or their a gluten-free fried chicken. Fried Chicken folks! While you&#8217;re in the area, make a pit stop at <a href="https://miglutenfreegal.com/a-trip-to-ann-arbor-and-plum-marke/" target="_blank" rel="noreferrer noopener">Plum Market</a> across the street for <a href="https://miglutenfreegal.com/ethels-baking-co/" target="_blank" rel="noreferrer noopener">Ethel&#8217;s Baking Company</a> treats and other gluten-free goods.</p>



<h3 class="wp-block-heading">Frita Batidos</h3>

<p class="wp-block-paragraph">I think I&#8217;m in love with <a href="https://miglutenfreegal.com/frita-batidos-gluten-free/" target="_blank" rel="noreferrer noopener">Frita Batidos</a>. Even though their &#8220;fritas&#8221; are served bunless for us gluten-free eaters, it may be the most delicious beef patty I&#8217;ve ever tasted. Did I mention that their beef is locally sourced?  Their signature fries are cooked in a dedicated fryer. That&#8217;s a huge thing for those of us with Celiac Disease.</p>



<p class="wp-block-paragraph">Their batido milkshakes are wonderful. I could eat my weight in their cajeta, which is made-in-house salted goat&#8217;s milk caramel. Cover one of their sweet deep-fried plantains in the stuff and you&#8217;ll never want to leave. Add rum to their batidos and it truly is a happy hour.&nbsp;</p>



<h3 class="wp-block-heading">Condado Tacos</h3>

<p class="wp-block-paragraph">I&#8217;ve visited three different Condado Taco locations, and have had amazing meals every time. The majority of their menu is gluten free, and they have great protocols in place for dietary restrictions. <p class="wp-block-paragraph">Ann Arbor is a place with many eclectic flavors and attention to healthy eats.<a href="https://www.juicykitchen-a2.com/" target="_blank" rel="noopener noreferrer"> Juicy Kitchen</a> focuses fresh, local food with options for all kinds of eaters. Gluten-free? Check. Vegetarian? Check. Vegan? Yep, that&#8217;s covered too. </p>



<p class="wp-block-paragraph">This delicious gluten-free stuffed French toast is cooked on a dedicated griddle with clean utensils and bowls. Cooks never share the egg wash from the regular French Toast. I highly suggest taking a bite with a bit of strawberry.&nbsp;</p>



<h3 class="wp-block-heading">Core Life Eatery</h3>

<p class="wp-block-paragraph">The <a href="https://locations.corelifeeatery.com/corelife-eatery-b6a1d47669ef" target="_blank" rel="nofollow noopener noreferrer">Core Life Eatery</a> chain recently opened a new location in Ann Arbor. Apart from the bread made off site, everything at Core Life contains no gluten ingredients. You can create your own bowl, or order one of their popular entrees. They also feature some pretty amazing beverages, including hot bone broth.</p>



<h3 class="wp-block-heading">Anna&#8217;s House</h3>

<p class="wp-block-paragraph">This chain of restaurants originally started in Grand Rapids, and opened the Ann Arbor <a href="https://miglutenfreegal.com/annas-house-gluten-free-michigan/" target="_blank" rel="noreferrer noopener nofollow">Anna&#8217;s House</a> location in 2019. Gluten free meals are prepared in a dedicated prep space with dedicated utensils. While any meal here is stellar, their gluten free breakfast options are phenomenal. Pictured above is their breakfast lasagna.</p>



<h3 class="wp-block-heading">Buddy&#8217;s Pizza</h3>

Customers also enjoy their treats at local Sweetwater coffee shop locations. <h3 class="wp-block-heading">Blank Slate Creamery</h3>

Paesano&#8217;s</strong><br>I&#8217;ve heard lots of great things about <a href="https://www.paesanoannarbor.com/" target="_blank" rel="nofollow noopener">Paesano&#8217;s</a> over the years. A friend recently had dinner there, and enjoyed gluten free pasta and even tiramisu! They even serve gluten free bread. I need to return to Ann Arbor just to visit this restaurant.&nbsp;</p>



<p class="wp-block-paragraph"><strong>2. Pilar&#8217;s Tamales</strong><br><a href="https://www.pilarstamales.com/" target="_blank" rel="noreferrer noopener">Pilar&#8217;s Tamales</a> is a small Salvadoran restaurant on Liberty St. Corn flour comprises the base of almost every item on the menu. They do make a few non gluten-free desserts. I highly suggest the pupusas stuffed with cheese and loroco flower.</p>



<p class="wp-block-paragraph"><strong>3. &nbsp;Miki Japanese Restaurant</strong><br>My friend Jen Burch, from Blue Bear Aware, highly recommended this Ann Arbor gluten-free restaurant option to me. The biggest issue for any Asian restaurant is the presence of wheat in soy sauce. She reports that <a href="https://mikiannarbor.com/" target="_blank" rel="noopener noreferrer">Miki </a>offers gluten-free soy sauce for their dishes. If you get a chance to eat there safely, report back so I know!</p>



<p class="wp-block-paragraph"><strong>4. Totoro</strong></p>



<p class="wp-block-paragraph">If you&#8217;re in the mood for sushi, <a href="https://totoroannarbor.com/menus-2" target="_blank" rel="nofollow noopener">Totoro </a>has many gluten free sushi options. Gluten free options notated on menu.</p>



<p class="wp-block-paragraph"><strong>5. Stadium Market</strong><br><a href="https://www.facebook.com/Stadium-Market-117827304180/" target="_blank" rel="noopener noreferrer">Stadium Market</a> isn&#8217;t really a restaurant. It&#8217;s a party store with a functional kitchen, selling gluten-free pizza and breakfast sandwiches Again, Find Me Gluten-Free has many reviews about this place. I sought the advice of Valarie Mates, the moderator of the online Gluten-Free Ann Arbor Yahoo Group.</p>



<p class="wp-block-paragraph">She said that it&#8217;s &#8220;awesome.&#8221; Stadium Market reportedly has many gluten-free beers, and sells a selection of Udi&#8217;s products. If you can attest to their steps for preventing cross-contact, please let me know!</p>



<p class="wp-block-paragraph"><strong>6. Salt Springs Brewery</strong></p>



<p class="wp-block-paragraph"><a href="https://miglutenfreegal.com/salt-springs-brewery-gluten-free-options/" target="_blank" rel="noreferrer noopener nofollow">Salt Springs Brewery</a> is located in Saline, which is just outside of Ann Arbor. While I have not personally eaten there, I&#8217;ve been told they have a dedicated gluten free fryer for fried fish. However, I would check with wait staff before ordering, just to make sure. </p>



<p class="wp-block-paragraph"><strong>Final Reminders about Eating Gluten Free in Ann Arbor</strong></p>



<p class="wp-block-paragraph">As always, I suggest calling restaurants prior to dining to <a href="https://miglutenfreegal.com/dining-out-gluten-free-questions/">ask about gluten free food preparation practices</a>. This allows you to get the best information without staff being distracted during a food rush. Luckily, Ann Arbor is a forward thinking city and there are plenty of options. You can even eat safely at <a href="https://miglutenfreegal.com/university-of-michigan-food-allergy/" target="_blank" rel="noreferrer noopener">University of Michigan</a> dining commons! And last I knew, there&#8217;s a gluten free stand at the football field. </p>

<p class="wp-block-paragraph">Salt Springs Brewery, located in Saline Michigan, resides in an old church. Built in 1899 as a Saline Methodist Episcopal Church, the building maintains beautiful stained glass windows. <h3 class="wp-block-heading">Why does Salt Springs Brewery choose to offer gluten-free options?</h3>



<p class="wp-block-paragraph">Our chef&#8217;s cooking style naturally aligned with gluten-free preparation, which can be described as &#8220;simple food with skillful preparation.&#8221; His diverse experience in managing various restaurants and corporate dining settings has exposed him to a wide range of cuisines and techniques. This allows him to create dishes that are both accessible and expertly crafted. The gluten-free aspect of our menu naturally complements his approach.</p>

<p class="wp-block-paragraph">Our menu is diverse with many options. We strive to accommodate various dietary restrictions and allergens. Our service staff can work with customers to identify safe menu options based on their specific needs.</p>

<p class="wp-block-paragraph">We use canola oil for frying.</p>

<p class="wp-block-paragraph">Our <a href="https://www.saltspringsbrewery.com/dining-menu">regular menu </a>clearly indicates gluten-free options, with special markings to help customers easily identify suitable choices. We offer multiple gluten free appetizers, gluten free buns for burgers and sandwiches, and many gluten free entrees.  </p>

<p class="wp-block-paragraph">Our kitchen is a mixed allergen environment. Please let us know of any allergies or restrictions so that we may take proper steps to eliminate cross contact.</p>

<p class="wp-block-paragraph">We implement several safety measures including:</p>

<p class="wp-block-paragraph">By far our most popular gluten free dish is our Fish &amp; Chips. We use Lake Superior white fish, prepared with gluten-free batter. We serve it with tartar sauce and french fries.</p>

<h3 class="wp-block-heading">Do you offer gluten-free desserts?</h3>



<p class="wp-block-paragraph">We offer two gluten free dessert options. Our most popular dessert is our GF Cookie Sundae. We serve this decadent dessert in a skillet, topped with Guernsey Farms vanilla ice cream, chocolate sauce, caramel sauce, Heath bits, and whipped cream. !</p>



<p class="wp-block-paragraph">We also offer a GF Chocolate truffle cake, served with a tart passion fruit sauce.&nbsp;</p>



<h3 class="wp-block-heading">Do you offer gluten-free beer/hard cider/wine?</h3>



<p class="wp-block-paragraph">We offer our own hard cider, a seltzer, wine, and spirits. We do not have GF beer as our brewing equipment would not allow for the appropriate cleaning procedures.</p>

Also, kids eat free on Tuesdays, and we offer happy hour Tuesday through Friday, from 3-5 PM. During this time we offer 50% off drafts &amp; $2 off appetizers.</p>



<h3 class="wp-block-heading">Do you have patio seating? Are dogs allowed outside?</h3>



<p class="wp-block-paragraph">We feature the best outdoor experience in the area. We recently constructed a new pergola. It includes infrared heaters, roll-down screens, and a louvered ceiling. It has all the amenities needed for the best enjoyment of the outdoors. We do not allow dogs. </p>



<h3 class="wp-block-heading">What unique events do you have at your restaurant?</h3>



<p class="wp-block-paragraph">We offer a 5-course pairing meal once a month on Mondays. We haven&#8217;t done a gluten-free one yet, but we&#8217;ll make sure you&#8217;re the first to know when we do! <p class="wp-block-paragraph">Saline is located about 20 minutes southwest of Ann Arbor, and situated on US 12. There is the most adorable candy store, <a href="https://www.eleanorssweets.com/">Eleanor&#8217;s Sweets and Sodas</a>, located across the street from Salt Springs Brewery. Rumor has it that Carrigan Cafe in Saline offers gluten free baked goods from <a href="https://miglutenfreegal.com/rumis-passion/">Rumi&#8217;s Passion</a>. </p>



<p class="wp-block-paragraph">Per <a href="https://www.annarbor.org/surrounding-destinations/saline/">Ann Arbor.org</a>, &#8220;special annual and seasonal events  in Saline include Oktoberfest, the Saline Celtic Festival, the Summer Music Series, the Saline Summerfest, the Harvest of the Arts Oktoberfest, and the Saline Winterfest which are all held in the streets of downtown Saline.&#8221;</p>

<h2 class="wp-block-heading">Zingerman&#8217;s Is a Michigan Icon</h2>



<p class="wp-block-paragraph">To me, the name Zingerman&#8217;s is synonymous with the word Michigan. Zingerman&#8217;s has been a fixture of the Ann Arbor community for what seems like forever. (For those keeping track, their deli opened in 1982. I would have been 4 at the time.) </p>



<p class="wp-block-paragraph">For years I&#8217;ve seen their baked goods at coffee houses, eateries and health food stores. With my Celiac Disease, it was a business I never thought I&#8217;d be able to personally enjoy. Upon my visit to Zingerman&#8217;s Roadhouse, I&#8217;ve learned that I (and other&#8217;s with Celiac Disease) can also be part of the family of customers.</p>



<h2 class="wp-block-heading">Researching Zingerman&#8217;s Gluten Free Options</h2>



<p class="wp-block-paragraph">My visit to Zingerman&#8217;s Roadhouse started, like always, with a <a href="https://miglutenfreegal.com/2016/05/27/eating-out-and-celiac-disease-resources/" target="_blank" rel="noopener">little research</a>. Gluten-free diners&nbsp;highly rated the restaurant on the <a href="https://www.findmeglutenfree.com/biz/zingermans-roadhouse/5737578" target="_blank" rel="noopener">Find Me Gluten Free app</a>. I reached out to my connection at the <a href="https://www.visitannarbor.org/" target="_blank" rel="noopener">Ann Arbor Convention and Visitor&#8217;s Bureau</a> to see if she had an email contact. Luckily she did. (Us &#8220;Margaret&#8221;s are resourceful like that.) </p>



<p class="wp-block-paragraph">The CVB connected me to the totally delightful Marcy Harris. (Later we realized we grew up in the same city and had some of the same friends. Of course!) Marcy&nbsp;impressed so much with her answers (which I will share below) that I eagerly made a reservation to dine there for breakfast.</p>

<h2 class="wp-block-heading">Gluten Free Waffles and More</h2>



<p class="wp-block-paragraph">So my husband and I arrived for <a href="https://www.zingermansroadhouse.com/menus/breakfast/" target="_blank" rel="noopener">breakfast </a>at 8 am, eager for breakfast and to get out of Ann Arbor traffic. We parked near the &#8220;Roadshow&#8221; which is an Airstream trailer outside of Zingerman&#8217;s Roadhouse. They serve hot beverages and baked goods. You can drive thru and they&#8217;ll serve you a warm cup of coffee and a genuine smile. </p>



<p class="wp-block-paragraph">We walked into the restaurant, and were warmly greeted by the waitstaff. I mentioned my scheduled meeting with&nbsp;Marcy and was promptly seated. It was a busy morning of regulars like Ron, who eats breakfast there every single morning.</p>



<h2 class="wp-block-heading">Zingerman&#8217;s Uses Fresh, Local Ingredients</h2>



<p class="wp-block-paragraph">Marcy joined our table. She was just as excited to meet me as I was to meet her! Our server got our drink orders and gave us a chance to look over the menu. I was impressed that the menus are printed daily, allowing for changes to the menu for the freshest of ingredients. </p>



<p class="wp-block-paragraph">While I knew what I wanted right away, it took my husband a few moments to decide. For me, the choice was obvious. I ordered the Carolina Gold Rice Grits and Bits waffles, with a side of housemade sausage, made from pigs raised here in Michigan. My husband, who has a pork and shellfish intolerance, went with the Huevos Rancheros. For him to find vegetarian refried beans definitely made his day.</p>

<h2 class="wp-block-heading">The BEST Gluten Free Waffles</h2>



<p class="wp-block-paragraph">In a word, the food was AMAZING. The Grits &amp; Bits waffles are crisp on the outside and almost creamy on the inside. That probably sounds weird, but trust me, it&#8217;s like heaven. Topped with bacon and cheese AND syrup?! It&#8217;s out of this world! </p>



<p class="wp-block-paragraph">And these waffles are ALWAYS gluten-free. They bake these circular waffles in a dedicated gluten-free waffle iron. (Regular waffles are rectangular.) This is intentional so that gluten-free items look different visually, adding another safeguard to the customer&#8217;s dining experience. </p>



<h2 class="wp-block-heading">What Other Gluten Free Options Does Zingerman&#8217;s Offer?</h2>



<p class="wp-block-paragraph">They also have gluten-free fried chicken, which is cooked in a dedicated fryer and served on&nbsp;a plate. (The&nbsp;regular fried chicken is served in a basket.) They also have gluten-free bread available, made at Zingerman&#8217;s Bakehouse. This is offered as a substitution for bread on any of their sandwiches, or in a bread basket. (See the bottom of my article for prep methods on their gluten-free bread.)</p>



<h2 class="wp-block-heading">Zingerman&#8217;s Roasts Their Own Coffee</h2>



<p class="wp-block-paragraph">My husband let me try his Huevos Rancheros. It was a bit spicy for my taste, but he adored them. He really enjoyed the coffee, which they roast at Zingerman&#8217;s Coffee Company and source from small estates that Zingerman&#8217;s personally visits. They always have their exclusively roasted Roadhouse Joe on brew, as well as a Coffee of the Month that rotates. You can purchase it in bags at the Roadhouse or visit&nbsp;<a href="https://www.zingermanscoffee.com/" target="_blank" rel="noopener">Zingermnan&#8217;s Coffee Company</a>. They even have a chart on the wall, displaying the best way to brew each coffee.</p>

<h2 class="wp-block-heading">Who Started Zingerman&#8217;s?</h2>



<p class="wp-block-paragraph">While we enjoyed our meal, Marcy shared some of the company&#8217;s history and unique facts. For instance, Ari Weinzweig and Paul Saginaw started Zingerman&#8217;s Deli for a very important reason. The quest to create an excellent Jewish Reuben sandwich. Things grew from there. </p>



<p class="wp-block-paragraph">Zingerman&#8217;s now owns 13 connected businesses. This includes the restaurant, a Creamery where they make their own cheese, the Bakehouse where they make their bread, and even a Korean restaurant named <a href="https://misskimannarbor.com" target="_blank" rel="noopener">Miss Kim</a>. If they can make their Dolsot Bi Bim Bap gluten-free, I would be ecstatic. Regardless of how large they&#8217;ve grown, <a href="https://www.zingermanscommunity.com/about-us/culture/three-bottom-lines-instead-of-one/" target="_blank" rel="noopener">their mission</a> and mindset never waivers- Great Food, Great Service and Great Finance.</p>

<h2 class="wp-block-heading">The Mission Behind Everything at Zingerman&#8217;s</h2>



<p class="wp-block-paragraph">As impressed with I am with the food, I was just as impressed with the philosophy of the business. Zingerman&#8217;s goal is to keep things local, regional and sustainable as much as possible. They own <a href="https://www.zingermanscornmanfarms.com/" target="_blank" rel="noopener">Cornman Farms</a> in Dexter, where they raise their own animals and grow their own produce. </p>



<p class="wp-block-paragraph">They place an huge emphasis on training. Not just about how to cook and serve food, but on finance and other topics of their interest. They even encourage employees to teach classes themselves. Zingerman&#8217;s offers training to others businesses as well. Their not intimidated by competition, but want to serve their community to make it a better place for everyone.</p>



<p class="wp-block-paragraph">In all honesty, I&#8217;m in love with this restaurant. From the waffles to the staff to the collection of over 3,000 salt and pepper shakers that line the dining room walls. Because when you&#8217;re here, you really do feel like family. And that&#8217;s exactly how Ari and Paul and the rest of the Zingerman&#8217;s staff want you to feel.</p>

<h2 class="wp-block-heading">How Zingerman&#8217;s Roadhouse Accommodates Gluten-Free and Food Allergy Needs</h2>



<p class="wp-block-paragraph">&#8220;Zingerman&#8217;s Roadhouse takes food allergies, Celiac Disease and other restrictions very seriously. We take several steps to make sure we are keeping our food allergy guests safe. Our practices start with our menu and our service interaction with the guests. </p>



<p class="wp-block-paragraph">Any item that is available on the menu as gluten-free is labeled with a &#8220;GF&#8221;. If an item can be made gluten-free, we add a note underneath that item indicating how it can be done. For example, we have a gluten-free fryer, so we might indicate that an item can be prepared in that fryer to make it safe. Our servers are trained to inquire about food allergies, and to ask specific questions to find out as much as we need to know about accommodating a guest&#8217;s needs.&#8221;</p>

<h2 class="wp-block-heading">How Do Wait Staff Handle Gluten Free Orders?</h2>



<p class="wp-block-paragraph">When a guest tells their server they have a gluten sensitivity, or any allergy for that matter, the server rings in the item with specific instructions detailing how it should be prepared. There are buttons in our Point of Sales system that denotes an allergy, what the allergy is, and the severity of the allergy. So for an individual who has Celiac Disease, we would use the buttons that say &#8220;Gluten Allergy, Allergy Severe&#8221;. This information is sent to the kitchen, who then prepares the meal using safe handling.</p>



<h2 class="wp-block-heading">How Do Kitchen Staff Handle Gluten Free Orders?</h2>



<p class="wp-block-paragraph">For any allergy, that means changing gloves, using a separate cutting board, knife, bowl, utensils, pan, waffle iron, toaster, or fryer. If an item cannot come into contact with the grill, for example, we&nbsp;prepare it in a fresh, separate sauté pan. Three pairs of eyes read the ticket with the allergy note : the person preparing the food, the chef running the line, and the manager expediting the food. This way, three people are responsible for keeping each other in check for making sure the food is safe.</p>

<h2 class="wp-block-heading">Does Zingerman&#8217;s Have a Separate Fryer?</h2>



<p class="wp-block-paragraph">If we are preparing gluten-free bread for a bread basket, or for a person&#8217;s toast in the morning, the bread is toasted in a toaster specifically for gluten-free bread. We do have rice flour available for our gluten-free waffle and gluten-free fried chicken, so it is imperative that we make sure to prepare these items in the gluten-free waffle iron or fryer. There are ways for us to distinguish these items from the others so that there is no mistake of mixing them up.</p>



<h2 class="wp-block-heading">Other Ways Zingerman&#8217;s Take Care of Customers</h2>



<p class="wp-block-paragraph">If a guest comes in regularly, we do take down their name and allergy information and enter it into our reservation system. This way we can print a ticket from the reservation computer and give a copy to the server and to the kitchen. </p>



<p class="wp-block-paragraph">I am actually in the process of updating an allergy &#8220;cheat sheet&#8221; that a manager created for our servers a couple of years ago. The laminated card is the perfect size to fit in the servers&#8217; order-taking books. The card categorizes different allergies and lists additional information about our menu items for each category that is critically important for the server to know.</p>

<h2 class="wp-block-heading">What About Their Gluten Free Bread? </h2>



<p class="wp-block-paragraph">At Zingerman&#8217;s we bake our own gluten-free bread, which is prepared in a shared bakery. (Zingerman&#8217;s Bakehouse would like to emphasize that it&nbsp;is not a dedicated gluten-free bakery. They make the gluten-free bread as a service to the Roadhouse and the Deli only.) We&nbsp;prepare it during specific production days and times&nbsp;when NO other breads are being made. Zingerman&#8217;s gluten-free breads are prepared in separate pans. </p>



<p class="wp-block-paragraph">Prior to production, we sanitize all utensils and ovens, OR use separate tools used designated only for gluten-free production. Because wheat particles can be present in the air, we send it to a third party lab for testing. Our test results came well within the government guidelines for parts per million of gluten. We do share this information with those that have a serious intolerance like Celiac, so that customers can determine whether this bread is the right fit for them.</p>

<h2 class="wp-block-heading">What is &#8220;Michigan Medicine?&#8221;</h2>



<p class="wp-block-paragraph">This title encompasses medical care thru University of Michigan. They offer services thru many locations. This includes the main hospital in downtown Ann Arbor. However it also includes offices and clinics in Ypsilanti, Chelsea, and even Flint. Michigan Medicine provides medical care for just about any health need.</p>



<h2 class="wp-block-heading">Where is the Michigan Medicine Celiac Disease Program?</h2>



<p class="wp-block-paragraph">This unique collaborative program doesn&#8217;t rely on a central location. Instead, the program functions at various locations in the greater Detroit area. These include the Brighton Center for Specialty Care, Northville, and Dexter. Sites also include U of M&#8217;s main hospital and Mott Children&#8217;s hospital, both located in An Arbor. Doctors in this program also have privileges in other locations. <p class="wp-block-paragraph">Why not have the program completely under one roof? When the program started in 2015, the doctors associated with the program felt multiple locations allowed their patients more accessability. For instance, those from Lansing or Flint can drive into Brighton, versus downtown Ann Arbor. Those who live in Ann Arbor or farther south may find the main campus easier to get to.</p>

<h2 class="wp-block-heading">What Kind of Doctors Work in the Celiac Disease Program?</h2>



<p class="wp-block-paragraph">Because Celiac Disease primarily affects the intestinal tract, most doctors in this program hold a specialty in gastroenterology. However, this program also includes almost a dozen dietitians who specialize in patients with gastrointestinal disorders. In addition, there is are 2 psychologists in their program, to help people cope with the psycho &#8211; social side of living with Celiac Disease.</p>



<h2 class="wp-block-heading">Pediatric Gastroenterologists that Specialize in Celiac Disease</h2>



<p class="wp-block-paragraph">The Michigan Medicine Celiac Disease Program sees patients young and old. Their pediatric gastroenterologist, <a href="https://www.mottchildren.org/profile/4054/grace-jennifer-lee-md">Dr. Grace Jennifer Lee</a>, sees patients at Mott Children&#8217;s Hospital, but also at other locations, such as Brighton. She also has privliges at Sparrow Hospital in Lansing. Dr. Lee also helps children transition to other doctors in the program once they become adults.</p>



<h2 class="wp-block-heading">Adult Gastroenterologists that Specialize in Celiac Disease</h2>



<p class="wp-block-paragraph">For adults, there are many <a href="https://www.uofmhealth.org/conditions-treatments/digestive-and-liver-health/celiac-disease/physicians" target="_blank" rel="nofollow noopener">gastroenterologists </a>who see patients. However, there are two I recommend, who specialize in Celiac Disease. First is <a href="https://www.uofmhealth.org/profile/254/shanti-lynne-eswaran-md" target="_blank" rel="noreferrer noopener">Dr Shanti Lynne Eswaran</a>, who gets wonderful reviews from many of my followers. <a href="https://www.uofmhealth.org/profile/1427170166/ryan-scott-fauble-md" target="_blank" rel="noreferrer noopener">Dr. Ryan Fauble</a> and <a href="https://www.uofmhealth.org/profile/1218/michael-david-rice-md" target="_blank" rel="noreferrer noopener">Dr. Michael Rice</a> also list Celiac Disease as their area of practice. Others have also mentioned Dr. <a href="https://www.uofmhealth.org/profile/137/john-del-valle-md" target="_blank" rel="noreferrer noopener">John Del Valle</a>. You can schedule appointments with them at the main campus in Ann Arbor, or at one of their satellite campuses, such as Brighton or Northville.&nbsp;</p>

<p class="wp-block-paragraph">For starters, not all dietitians are knowledgeable about Celiac Disease. <a href="https://www.uofmhealth.org/conditions-treatments/digestive-and-liver-health/gi-nutrition-therapy" target="_blank" rel="noreferrer noopener">Dietitians in this GI Program</a> not only help you after your immediate diagnosis, but can also help trouble shoot other persistent symptoms. Amanda Lynett comes highly recommended. Here&#8217;s how she offers guidance to her patients. </p>

<p class="wp-block-paragraph">Doctors in the Michigan Medicine Celiac Disease Program also see patients with non celiac gluten sensitivity. When talking to the main scheduling center, all cases involving Celiac Disease and gluten sensitivity are referred to these doctors. <a href="https://www.uofmhealth.org/profile/731/william-d-chey-md" target="_blank" rel="noreferrer noopener">Dr William Chey</a> is highly knowledgeable about the FODMAP diet and IBS/IBD. </p>



<h2 class="wp-block-heading">How Can I Make an Appointment for Any of these Services?</h2>



<p class="wp-block-paragraph">Right now, all appointments with Celic Disease program medical professionals go through the Michigan Medicine central system. However, remember that an appointment location closest to you may not always be the earliest appointment. Make sure to specify that you want an appointment with a gastroenterologist that specializes in Celiac Disease.&nbsp;</p>

<h2 class="wp-block-heading">Where is Condado Tacos?</h2>



<p class="wp-block-paragraph">Condado Tacos started in Ohio in 2014, and has expanded to Michigan, Pennsylvania, Indiana, Tennessee, Kentucky, and North Carolina. Michigan alone offers 7 locations, including Grand Rapids, Kalamazoo, Troy, Royal Oak, Detroit and Ann Arbor. I&#8217;ve visited the Polaris location in Columbus, as well as the Royal Oak location. Recently, I was invited to the grand opening of the Breton Village restaurant in Grand Rapids, which is their 40th location.&nbsp;</p>

<h2 class="wp-block-heading">What Gluten Free Options does Condado Tacos Offer?</h2>



<p class="wp-block-paragraph">Prior to attending the event, I reached out to Condado Tacos staff with a few questions. They were great at answering all of my questions in advance. In addition, they were generous with their time in answering additional questions while at the restaurant. Here at the answers to my most pressing questions.&nbsp;</p>

<li><strong>What gluten free options does Condado Tacos offer?</strong></li>
</ul>



<p class="wp-block-paragraph">Everything on the menu is gluten free except for the following items;&nbsp; Flour tortilla shells, Gochujang BBQ Sauce, and Korean BBQ Jackfruit. These items are never cooked in our fryers.&nbsp;</p>



<h2 class="wp-block-heading">How Does Condado Tacos Prepare Gluten Free Orders?&nbsp;</h2>



<ul class="wp-block-list">
<li><strong>What steps does Condado Tacos take to prevent wheat cross contact with gluten free orders?&nbsp;</strong></li>
</ul>



<p class="wp-block-paragraph">We do not have a separate dedicated gluten free prep space. However, if an item is marked specifically as &#8220;gluten free,&#8221; our team considers it an &#8220;allergy&#8221; and uses a set of protocols to keep our guests safe. This includes washing hands and putting on fresh gloves. In additioan, staff use an entirely separate cutting board and only pulls fresh product to avoid any cross contact. We also package those items separately into their own basket/tray or To Go bag.</p>

<li><strong>Does Condado Tacos have a Dedicated Gluten Free Fryer? What Oil Do You Use?</strong></li>
</ul>



<p class="wp-block-paragraph">We only fry the following items : Tofu (crusted with gf cornmeal), corn taco shells, corn tortilla chips, brussels sprouts (gf) and tater tots (gf). We use a highly refined soybean oil for our fryer. However, we also fry tofu in our fryer.&nbsp;&nbsp;</p>



<p class="wp-block-paragraph">(<a href="https://www.foodallergy.org/living-food-allergies/food-allergy-essentials/common-allergens/soy">From FARE-</a>&#8220;Highly refined soy oil is not required to be labeled as an allergen. Studies show that most people with soy allergy can safely eat highly refined soy oil as well as soy lecithin. If you are allergic to soy, ask your doctor whether you need to avoid soy oil or soy lecithin.&#8221;)&nbsp;</p>



<h2 class="wp-block-heading">What Food Allergen Training Does Your Staff Receive?</h2>

<li><strong>What Training does Condado Staff Receive about Preparing Gluten Free Orders?</strong></li>
</ul>



<p class="wp-block-paragraph">All staff goes through allergen training during the initial onboarding process. We consider a gluten allergy as serious as any of the other main allergies like tree nuts, shellfish, and other commonplace allergies. Every Condado Tacos location has a common allergen guide guests can reference, and it is updated with any menu change we undergo.</p>

<li><strong>What Other Dietary Restrictions Do You Accommodate?&nbsp;</strong></li>
</ul>



<p class="wp-block-paragraph">We use no peanuts or tree nuts on our menu. (We do use pumpkin seeds, which may have cross contact issues with nuts, in processing.) In addition, we currently have no shellfish on our menu. (Our chipotle honey contains fish ingredients.) Our menu is easily modifable for dairy free, vegan, vegetarian, and gluten free eaters. Our menu has a key that denotes these options. We do not have dairy free cheese options, at this time.&nbsp;&nbsp;</p>

<h2 class="wp-block-heading">What Did You Order?</h2>



<p class="wp-block-paragraph">I was invited to a private event for the new Breton Village location. (In full disclosure, I was not charged for any of my beverages or my meal.) Condado Tacos is widely known for their margaritas, which they had available. However, I rarely drink alcohol, and appreciated they they had mocktails available. (Stay tuned for Condado&#8217;s new mocktails menu that will be released in April.) I thoroughly enjoyed their Cactus Juice, which is made from prickly pear juice, pineapple, lemon and ginger beer.&nbsp;</p>



<p class="wp-block-paragraph">This is my third time dining gluten free at Condado Tacos, and I love their queso. On this occassion, all guests were given an order of chips, queso and guacamole. This is their Three Buds menu option, which allows you to pick any three dips, and is served with chips. One of the new items on their menu is their Brussel Simmons queso, which may be the best queso I&#8217;ve ever eaten in my life. It&#8217;s topped with crispy shaved Brussel sprouts, bacon, and a balsalmic glaze.&nbsp;</p>

<h2 class="wp-block-heading">What Tacos are Gluten Free? What Proteins Are Offered?</h2>



<p class="wp-block-paragraph">Condado Tacos offers lots of gluten free options. You can order some of their Suggested Tacos, or build your own. I appreciate that their menu denotes which items are spicy, as my stomach doesn&#8217;t handle spice so well. When it comes to ordering, my server stated that one taco is a snack, two to three tacos are a meal. Since I wanted to try other items, I only ordered one taco.&nbsp;&nbsp;</p>



<p class="wp-block-paragraph">Their &#8220;Suggested Tacos&#8221; menu offers any protein choices, as well as vegetarian options. Choose from chicken, ground beef, brisket, pork, steak, or plant based tacos. They even offer veggie chorizo! I ordered their Plane Jane Taco, as I wanted to try their Kewl Ranch shell. If a taco you want is listed as being made with a flour tortilla, you can ask to sub a corn tortilla instead.&nbsp;</p>

<h2 class="wp-block-heading">What About Vegetarian Options?&nbsp;</h2>



<p class="wp-block-paragraph">With the option to build your own tacos, nachos and bowls, there are many vegetarian options. I chose to order a Rice and Black Beans bowl. I chose their Roasted Portabellas as my protein, which were AMAZING. My waitress was great in walking me thru how to add to my bowl, and was great with suggestions. Their creamy Avocado Ranch was the perfect topping for my bowl.&nbsp;</p>



<p class="wp-block-paragraph">Truth be told, I was so full from the Three Buds dip sampler, I took the bowl home and ate it for lunch the next day. It still tasted amazing, rewarmed the next day. I dare say this is better than any bowl I&#8217;ve ever ordered from Chipotle. Condado Tacos also offers Thai Chili Tofu as a protein, as well as Veggie Chorizo. Unfortunately, their Korean BBQ Jackfruit is NOT gluten free.&nbsp;</p>

<h2 class="wp-block-heading">Let&#8217;s Talk About This Art Work!&nbsp;</h2>



<p class="wp-block-paragraph">Each Condado Tacos location features hand painted art work by local artists. As you can see in the top right hand corner of the first photo, it says &#8220;Feb NO 40.&#8221; This marks the month this restaurant opened, and that it is the 40th Condado Tacos location. Sometimes artists include their instagram handle so you can follow them on social media. I didn&#8217;t get a chance to look for it, but I&#8217;ll defintely try the next time I go!&nbsp;</p>



<p class="wp-block-paragraph">&#8220;Condado Tacos celebrates the communities they join by hiring local artists to paint the walls and ceilings of each restaurant with unique, street-art inspired hand painted murals. For the Breton Village location, Condado Tacos is serving up scenes featuring &#8220;The Startling Tales of Condado #40,&#8221; where pages from our very own Grand Rapids Condado comic book series are strewn about the room.</p>



<p class="wp-block-paragraph">In each artist&#8217;s mural, you&#8217;ll find pages from each of the artists&#8217; different stories. Grand Rapids area references include Punk Island, the Griffins hockey team, the Grand Rapids cityscape, the geology of the Great Lakes, the Fishladder, Grab Corners (now Campau Square), Finny &#8211; a fin whale skeleton from the Grand Rapids Public Museum, and other hidden images local Michaganders will recognize and enjoy.&#8221;</p>

<h2 class="wp-block-heading">Excellent Customer Service</h2>



<p class="wp-block-paragraph">While the food was amazing, the customer service was just as wonderful. Staff were great at answering questions. I even told a server how impressed I was that I overheard him asking his guests if they had any allergies, prior to serving them. My server has been with Condado Tacos for 2 1/2 years. She said she personally appreciates Condado&#8217;s attention to allergens, as she and her friend both have dietary restriction.&nbsp;</p>



<p class="wp-block-paragraph">I was able to chat at length with Tina, one of the managers, and she was great at answering any additional questions I asked. She was very friendly, and easily approachable, as were all the other management staff. The CEO of Condado Tacos stated the goal of their restaurant is to encourage guests to &#8220;come as you are.&#8221; I left that evening feeling welcomed, and encouraged that this is the kind of place that will take my gluten free dining needs seriously.&nbsp;</p>

<p class="wp-block-paragraph">Small businesses are truly the backbone of the gluten free industry. While there are big name companies one may find at the grocery store, it&#8217;s small independent bakers who strive to meet our various health needs. Finding gluten free products can be difficult enough in itself. Imagine adding additional allergens to the &#8220;nope&#8221; list.&nbsp;</p>



<p class="wp-block-paragraph">Nirit&#8217;s Bakery hopes to help everyone. In fact, their business mission is &#8220;To share amazing gluten free delicacies with everyone. Everyone who has food allergies should eat the same as people without allergies, and we make that possible!&#8221; Learn more about this small business in my interview with owner, Nirit Vaknin.</p>

<h3 class="wp-block-heading">1. What inspired you to become a baker? Why the focus on gluten-free?</h3>



<p class="wp-block-paragraph">I am a retired scientist that always loved baking. I studied autoimmune diseases for over 20 years, especially arthritis and inflammatory bowel diseases (IBD). When health issues appeared at our home and no real solution from allopathic medicine improved our condition, we found that avoiding gluten really helped.</p>



<p class="wp-block-paragraph">Quite often, if you have any type of food sensitivity, it&#8217;s possible you may develop additional food intolerances. Thus, it is so important to eliminate it from your diet to allow your intestines to heal and avoid using medications.</p>



<p class="wp-block-paragraph">I am a true believer of the notion that we are what we eat, and food is our medicine. I have it as my main mission to spread the word and offer healthy and tasty baked goods from my kitchen to everyone in need.</p>

<h3 class="wp-block-heading">2. Are there other highlights of your products? Dairy-free, egg-free, nut-free etc.? Local ingredients?</h3>



<p class="wp-block-paragraph">We use high quality ingredients, which are mostly organic and non-GMO. Our baked goods include healthy vegetables and fruits, such as bananas, carrots, apples, blueberries, sweet potatoes, and pumpkin. For those who cannot consume eggs, we also produce a few egg-free, vegan products.</p>



<p class="wp-block-paragraph">To avoid any chance of soy contamination, we buy our eggs from local farmers that do not use soy-based chicken feed. We also make our own vanilla extract. In addition, we use organic products such as superfood cocoa powder and aluminum free baking powder.</p>

<h3 class="wp-block-heading">3. What steps do you take to make sure Nirit&#8217;s Bakery products are truly gluten-free?&nbsp;</h3>



<p class="wp-block-paragraph">We are a strict gluten-free, dairy-free, soy-free, and nut-free bakery, and have been since 2016. You&#8217;ll find no glutenous products in our home whatsoever. We use no coconut in our baked goods, either.&nbsp;</p>



<p class="wp-block-paragraph">Our product line includes only one item that contains oats. For that, we use Trader Joe’s gluten free oats. However, I avoid using oat flour or oat milk in most of my baked goods, to accommodate individuals with Celiac who cannot tolerate oats.</p>



<h3 class="wp-block-heading">4. Can you share a story of a customer who&#8217;s been greatly impacted by your business?</h3>



<p class="wp-block-paragraph">A 6-year-old boy that was diagnosed with celiac was referred to us by a friend. His mom felt overwhelmed with his new dietary requirements. We assured her that it is possible to live a happy life under these conditions. </p>



<p class="wp-block-paragraph">In addition, we offered her a variety of products and shared many other tips. The 6-year-old boy enjoys the ability to eat everything at our booth in the farmer’s market. He&#8217;s definitely as happy as any kid in a candy store!</p>

<h3 class="wp-block-heading">5. What would you like consumers to know about Nirit&#8217;s Bakery and your products?</h3>



<p class="wp-block-paragraph">We are a small home-based bakery with very high standards for quality of ingredients. We have been selling in farmers Markets in the Ann Arbor area for over 4 years and have many repeat customers. Every product is baked fresh, handmade with love and attention. We try to accommodate everyone’s needs in terms of their food allergies or intolerances.</p>

<h2 class="wp-block-heading">The Golden Ticket to Amazing, Ethical Chocolate</h2>



<p class="wp-block-paragraph">My husband loves Willy Wonka. We own the director&#8217;s edition of the one with Johnny Depp in it. Oompa Loompa dance tutorials and all. So when I asked him if he wanted to join me for a tour at Mindo Chocolate, it was an easy &#8220;YES.&#8221;</p>



<p class="wp-block-paragraph">So we drove just outside of Ann Arbor, to Dexter, MI. This small town is home to Mindo Chocolate, a bean-to-bar chocolate producer doing some pretty amazing things. We arrived at their production facility (a.k.a the owner&#8217;s house) for a day of chocolate tasting and education. Trust me, the more I learned, the more I love them!</p>

<h2 class="wp-block-heading">From Farm to Kitchen</h2>



<p class="wp-block-paragraph">Alex McCoy, Mindo&#8217;s marketing specialist, greeted us at the door when we came in. She told us about how Mindo Chocolate started in Ecuador with an internet cafe and a batch of brownies. (Read more about the back story in this <a href="https://www.wemu.org/post/hidden-plain-sight-mindo-chocolate-makers-dexter" target="_blank" rel="noopener noreferrer">NPR &#8220;Hidden In Plain Sight&#8221;</a> article.) By the way, it&#8217;s pronounced &#8220;Mean-Dough.&#8221;</p>



<p class="wp-block-paragraph">She explained how Mindo trades directly with farmers in Ecuador. This means they see the fields for themselves and invest in the farmers. They grow cocoa pods under shade, which helps protect the soil and the ecosystem. Important, as the trees provide habitats to birds, of which Mindo has more species than any other place on the planet.</p>

<h2 class="wp-block-heading">From Bean to Bar</h2>



<p class="wp-block-paragraph">Cocoa pods produce 80 to 100 beans, each. Mindo Chocolate uses Nacional pods, the oldest of cocoa varieties. In fact, in the 19th century, producers desired it more than any other variety. After spending a day tasting Mindo Chocolate, I can see why!&nbsp; &nbsp;After workers harvest the pods, the chocolate ferments for 5-7 days. Mindo Chocolate harvests the liquid during that fermentation process, which they sell as Miel de Cacao. Think balsalmic cream, but made from chocolate.</p>



<p class="wp-block-paragraph">Then, they roast the beans at 200 Fahrenheit. Next, the beans are crushed to extract the cocoa nibs. Finally, they stone grind the cocoa nibs for 24-36 hours. A longer grind allows the chocolate to aerate, reducing bitter flavors. I could definitely taste the difference. I tried their 100% chocolate bar, and was surprised at its smoothness.</p>

<h2 class="wp-block-heading">The Long Way</h2>



<p class="wp-block-paragraph">Every step in the chocolate making process is intentional. Staff temper chocolate on marble slabs and reheat the chocolate to prevent blooming of the cocoa butter.&nbsp; They make every piece of chocolate from hand. They even wrap them by hand! The envelopes surrounding the chocolate bars adr made from recycled sugar cane pulp. Local brewers use the discarded cocoa bean shells to brew beer and tea.</p>



<p class="wp-block-paragraph">Mindo supports other Michigan brands as well. They use Calder Dairy in their creations. Chocolate bars are studded with Michigan blueberries and cherries. The eggs in their legendary brownies? Grown by their own family. Best yet for us? The entire kitchen remains free from wheat, rye, barley and peanuts. (Their white chocolate is soy free as well.)</p>

<h2 class="wp-block-heading">Mindo Chocolate Bars and More</h2>



<p class="wp-block-paragraph">Mindo offers three lines of bars. Their Chocolate of Origin bars are made right in Ecuador, providing further economic growth for farmers. The Signature Line includes bars made with cherries, blueberries and more. Finally, the Rustic line, made from courser ground chocolate, features flavors such as Hot Pepper &amp; Cinnamon.</p>



<p class="wp-block-paragraph">Mindo makes other products as well. They produce an excellent cocoa powder, with a higher percentage of cocoa butter than other companies.&nbsp; Mindo makes seasonal items, like the chocolate bunny I shared about in my <a href="https://miglutenfreegal.com/gluten-free-easter-candy-local-and-nationwide/" target="_blank" rel="noreferrer noopener">Gluten Free Easter Candy</a> post. They also making &#8220;Tasting Tiles,&#8221; small pieces of chocolate, which are great paired with mead from <a title="Michigan Gluten Free Beers and Brews" href="https://miglutenfreegal.com/2018/09/26/michigan-gluten-free-beers-brews/" target="_blank" rel="noopener noreferrer">Blom Meadworks</a>.</p>

<p class="wp-block-paragraph">I wish my pocket book allowed me to bring one of everything home. However,&nbsp; I restrained my self to three bars, and the cocoa powder. I used the Mindo cocoa powder to try to recreate their infamous El Quetzal Brownies. It needs some work, but the cocoa powder was definitely the right purchase. (The original recipe uses melted chocolate, not cocoa powder.)</p>

<h2 class="wp-block-heading">Where is Frita Batidos?</h2>



<p class="wp-block-paragraph">Ann Arbor is home to many amazing restaurants, and Frita Batidos rates high on that list. While it may appear similar to a burger and fry joint, Frita Batidos is a marriage of Cuban flavors that transport you to the tropics. I don&#8217;t know that I&#8217;ve ever eaten a better burger. And that coconut batido milkshake? Sweet and delectable. All this and they&#8217;re totally hip on safely preparing foods for those with food sensitivities.</p>



<p class="wp-block-paragraph">I contacted Paterno Johnson, the general manager at <a href="https://www.fritabatidos.com/" target="_blank" rel="noopener noreferrer">Frita Batidos</a>, prior to our midweek lunchtime visit. They&#8217;ve&nbsp;received great reviews on the Find Me Gluten Free app, but I wanted to inquire further. Reviewers piqued my interest, stating that Frita Batidos has&nbsp;a dedicated fryer. (Gluten-free French Fries are the way to this gal&#8217;s heart!) They have a guide that lays out their menu by special requirements, be it gluten-free, vegetarian, lighter side, and more. Paterno explained, via email, their step-by-step process for handling an order for a customer with food allergies.</p>

<h2 class="wp-block-heading">How Does Frita Batidos Handle Gluten Free Orders?&nbsp;</h2>



<p class="wp-block-paragraph">When you place your order at the counter, the front-of-house staff comes in the kitchen to talk to the expediter. The &#8220;expo&#8221; circles the allergy item in red sharpie on both the yellow and white tickets so the line cooks and &#8220;expo&#8221; is always aware.</p>



<p class="wp-block-paragraph">Line cooks wash their hands then don clean gloves as they prepare the food. When someone has an allergy to any item from the grill, we cook the item in a separate, clean and sanitized pan (with clean utensils) to avoid cross contamination. When the food is ready, they put the food in our food trays and give it directly to the expo. He or she clearly marks the tray and informs the Front Of House staff which item has the allergy.</p>



<h2 class="wp-block-heading">2022 Update</h2>



<p class="wp-block-paragraph">While working on my <a title="Gluten Free Detroit Dining Options" href="https://miglutenfreegal.com/2022/11/18/gluten-free-detroit-dining-options/" target="_blank" rel="noopener">Detroit gluten free dining guide</a>, I had the chance to connect with Eve, the owner of Frita Batidos. She shared the following information.</p>



<p class="wp-block-paragraph">&#8220;We do ask that guest with Celiac Disease let us know because we take extra precautions with this condition. For guests with Celiac disease we specify on our order ticket, do a verbal call to the expeditor, write it on a white board and have a dedicated person in the kitchen prepare and package the order from start to finish.</p>



<p class="wp-block-paragraph">We still have the essay question on our Restaurant Test asking each staff member to describe Celiac disease in detail. They study from a version of the test with answer but take the final test without the answers in order to work independently on the floor at Frita. This is part of our mandatory front of the house training.</p>



<p class="wp-block-paragraph">Over the past year and from our conversations with you, we realized we needed to focus more on training the back of the house to have the same level of understanding so that has been a big help all around! </p>



<p class="wp-block-paragraph">We have tried to constantly improve our practices and training &#8211; and have focused on it recently in thanks to a staff member who worked with us over the Summer who has Celiac disease and was able to point out areas we could improve.</p>



<p class="wp-block-paragraph">We do have a labeled, dedicated gluten free fryer, both in Ann Arbor and Detroit. We also have a kit in a zipped bag with dedicated gluten free cutting board, Chef&#8217;s knife, pot, pan etc&#8230;) in both Ann Arbor and Detroit! Hope all is well with you and yours and, as always, we are open to suggestions, feedback and areas to improve so I hope you will continue to do so! We SO appreciate your support!!!</p>



<h2 class="wp-block-heading">Does Frita Batidos Have A Dedicated Fryer?</h2>



<p class="wp-block-paragraph">For anything that needs to be cooked in the fryer (like their DELICIOUS French Fries) away from contaminated items, Frita Batidos maintains a dedicated gluten free fryer. Like everything else, line cooks wash their hands then use gloves as they prepare the food.</p>



<p class="wp-block-paragraph">Food delivery to the customer is the same as above. If a guest is eating with a group, their food will not be on the same tray to avoid cross contamination. Also, per requirements from the health department, a Frita Batidos has a manager that is <a href="https://www.michigan.gov/documents/mdard/Allergen_FAQs_496446_7.pdf" target="_blank" rel="noopener noreferrer">Serv Safe Allergen Certified</a>. While the law only requires one, Paterno understands the wisdom of having as multiple staff aware of the steps to keep food allergy guests safe.</p>

<h2 class="wp-block-heading">What Does Frita Batido Mean?&nbsp;</h2>



<p class="wp-block-paragraph">The name of the restaurant, Frita Batidos, refers to Cuban burgers named Fritas. They create traditional fritas from&nbsp;chorizo, served on brioche buns, topped with shoestring fries and a remoulade-style sauce. Right now, Frita Batidos doesn&#8217;t carry gluten-free buns.</p>



<p class="wp-block-paragraph">To be honest, I&#8217;m not sure it totally needs one. It was the MOST perfectly flavored patty I think I&#8217;ve eaten in my WHOLE LIFE. &nbsp;However, manager Paterno Johnson was receptive to&nbsp;my suggestion of a local gluten-free bakery, should they ever decide to carry a gluten-free bun. I really appreciate his willingness to listen to suggestion.</p>

<p class="wp-block-paragraph">As mentioned, alert the front of the house staff when you order, and they will cook them in a dedicated fryer. In addition to the regular fries, they also make garlic-cilantro fries that Paterno served to us with a lemon scented mayo. What a combination of flavor!</p>

<h2 class="wp-block-heading">What&#8217;s The &#8220;Best Snack Ever&#8221;?&nbsp;</h2>



<p class="wp-block-paragraph">Frita Batidos is more than just burgers, fries and milkshakes. They have some great sides as well. The staff aptly named this dish &#8220;The Best Snack Ever.&#8221; It&#8217;s comprised of coconut-ginger rice layered with black beans and melted Muenster, mixed with cilantro-lime salsa. I could seriously eat this every day.</p>



<p class="wp-block-paragraph">You also have to try the twice-fried plantains. They taste a bit like a baked potato, again topped with black beans, Muenster, cilantro-lime salsa, and the addition of avocado spread and creme fraiche. If you are a vegetarian eater, you can eat well with these items, sans meat.</p>

<h2 class="wp-block-heading">Does Frita Batidos Offer Gluten Free Desserts?</h2>



<p class="wp-block-paragraph">Of course, you have to save room for dessert. Although, life is short, so you might order one of their signature batidos first. Paterno gave us samples of the Coconut Cream and Passion Fruit batidos. I preferred the coconut, while my husband preferred the Passion Fruit. </p>



<p class="wp-block-paragraph">I want to go back to try the Chocolate Espanol batido, which is dark melted chocolate steeped with cinnamon. If you&#8217;re looking for something lighter, they&#8217;ll make one with crushed ice and less ice cream. Or take a regular one up a notch and add a splash of rum!</p>

<h2 class="wp-block-heading">Try the Deep Fried Plantains!</h2>



<p class="wp-block-paragraph">Frita Batidos is famous for their churros, which unfortunately are not gluten-free. However, Paterno was nice enough to give me a deep fried plantain, coated in cinnamon and sugar. </p>



<p class="wp-block-paragraph">With that, he served me some of that delicious chocolate espanol, as well as &#8220;cajeta.&#8221; Cajeta is slow cooked caramel made from goat&#8217;s milk. I can&#8217;t even begin to tell you how CRAZY delicious this is. Make a batido with that and chocolate espanol and I would be in HEAVEN.</p>



<h2 class="wp-block-heading">Frita Batidos Supports Local Michigan Businesses</h2>



<p class="wp-block-paragraph">Eve Aronoff is the creative chef and owner of Frita Batidos. She has won extensive awards for her cooking. After eating here, I can understand why. Eve and her staff are eager to support local, visiting local farms &amp; purveyors and expanding their cooking skills through culinary expeditions.</p>



<p class="wp-block-paragraph">They also place a high value on&nbsp;ongoing, continuing education for all staff. They take advantage of guidance from like minded businesses, such as&nbsp;<a href="https://miglutenfreegal.com/2017/02/27/zingermans-roadhouse-gluten-free/" target="_blank" rel="noopener noreferrer">Zingerman&#8217;s </a>Zing Train courses. This and more is what makes Ann Arbor a great dining destination. There&#8217;s room for all the flavors of the palate here in A2. I&nbsp;look forward to returning to Frita Batidos soon and often. &nbsp;Especially&nbsp;for happy hour, because there&#8217;s a discount on those amazing fries!</p>

<h2 class="wp-block-heading">Who is NSF?</h2>



<p class="wp-block-paragraph">NSF International, based in Ann Arbor, Michigan offers third party gluten free certification. Originally known as the National Sanitation Foundation, they have been ensuring consumer safety since 1944. In the 50&#8217;s <a href="https://www.nsf.org/about-nsf/mission-values-history" target="_blank" rel="noopener noreferrer">they created &#8220;standards</a> for the sanitation of soda fountain and luncheonette equipment.&#8221; Today they are an international company that tests products for many safety factors.</p>

<h2 class="wp-block-heading">Where is NSF and What is Their History of Certification?</h2>



<p class="wp-block-paragraph">I recently had the chance to tour their Ann Arbor headquarters. It contains 150,000 square feet of laboratory space. They take the integrity of their work and the privacy of the companies they certify very seriously. Therefore I wasn&#8217;t allowed into individual labs. A few times they covered up work stations as we walked past in the hallways.</p>



<p class="wp-block-paragraph">In 2004, NSF acquired QAI, one of the largest certifying organizations of organic foods and products. QAI had a long history of certification standards, since 1989. NSF created their gluten free certification standards from the organic testing protocols from QAI. In addition, NSF and QAI had gluten free standards of 20 ppm per million long before the FDA did.</p>

<h2 class="wp-block-heading">What is NSF&#8217;s Process for Gluten Free Certification?</h2>



<p class="wp-block-paragraph"><strong>There are 5 steps to gaining gluten-free certification through NSF.</strong></p>



<p class="wp-block-paragraph"><strong>1) Application</strong> &#8211; Companies must submit an application, necessary documents &amp; a signed application.</p>



<p class="wp-block-paragraph"><strong>2) Product Review</strong> &#8211; NSF reviews the product, which includes product labeling, raw ingredients and the company&#8217;s allergen procedures and protocols.</p>



<p class="wp-block-paragraph"><strong>3) Onsite Inspection</strong> &#8211; A team member travels to the manufacturing plant and visually inspects the premises to make sure all things disclosed in the paperwork are accurate.</p>



<p class="wp-block-paragraph"><strong>4) Sample Testing</strong> &#8211; Staff take a random product sample while on premises. NSF staff then send back to the lab to verify it contains less than 20 ppm of gluten content.</p>



<p class="wp-block-paragraph"><strong>5) Certification</strong> &#8211; Once a product is certified, the NSF certification mark can be used on packaging. It is also allowed on advertising literature and on the company website. Certification is an ongoing process. NSF audits businesses every year. Also, they make unannounced visits to verify that companies are maintaining their standards.</p>

<h2 class="wp-block-heading">How Easy Is It To Get Certified thru NSF?</h2>



<p class="wp-block-paragraph">If you think this is a stringent process, you’re right. Brandon Rudolph, one of the writers of the gluten-free certification protocols, told me that many businesses never get past the second step. As someone with Celiac Disease himself, Brandon fully understands just how important this process is.</p>



<p class="wp-block-paragraph">Have you seen the NSF certification mark on products? It’s a blue circle with the letter “NSF” written in the center, in white. The NSF gluten-free certification logo also includes a white ring around it with the words “certified gluten-free.” Some products that bear this logo inclue&nbsp;Toffee-Tastic gluten-free girl scout cookies made by Little Brownie Bakers, and&nbsp;<a href="https://www.amazon.com/Twinlab-Gummies-Memory-Cognitive-Supplement/dp/B00NAWM7DS" target="_blank" rel="noreferrer noopener">Twin Lab children’s Wicked Smart Gummies.</a></p>

<h2 class="wp-block-heading">Why Is Third-Party Gluten Free Certification Helpful?</h2>



<p class="wp-block-paragraph">Living with Celiac Disease can cause trust issues when it comes to food. Even though the FDA has finally&nbsp;<a href="https://www.fda.gov/ForConsumers/ConsumerUpdates/ucm363069.htm" target="_blank" rel="noreferrer noopener">defined what gluten-free means</a>, it may not always mean that producers (or consumers) understand. Gluten can show up both in ingredient sourcing and in food production.</p>



<p class="wp-block-paragraph">When we’re trying a new product, we don’t necessarily know the manufacturer personally, or their level of gluten free knowledge. Having a process, audited by an outside organization, we can trust is beneficial. It may make items cost more due to the certification process costs they incur, but I think it’s worth it to keep our health.</p>



<h2 class="wp-block-heading">But Still Read the Label</h2>



<p class="wp-block-paragraph">Please know that, while certification logos are helpful, these processes aren’t fool proof. Companies sometimes add gluten ingredients to their products, even certified products. (They get recalled. Malt and barley are most often the culprit, or wheat in soy sauce.) Also, brands that are not certified occassionally use the logos without the organization’s permission. At the end of the day, you will&nbsp; always be your best advocate for your health. Read the label.</p>

<p class="wp-block-paragraph"><a href="https://www.tastysansgluten.com/">Tasty Bakery</a> is truly a fixture of the Ann Arbor community. When I first shared the Michigan&#8217;s Best GF bakery tour idea with the <a href="https://www.facebook.com/groups/GlutenFreeAnnArbor" target="_blank" rel="nofollow noopener noreferrer">Ann Arbor online support group</a> in 2016, this bakery was immediately suggested and written in by voters. Julie and Ran Rabinovitz first opened their gluten-free business in 2009, in a stall at a local farmer&#8217;s market.</p>



<p class="wp-block-paragraph">For that reason, and so much more, the Ann Arbor community has loved them back. They began a Kickstarter campaign to open a &#8220;brick and mortar&#8221; store, located on West Huron. &nbsp;The support they received was tremendous. <h3 class="wp-block-heading">1. What inspired you to become a baker? &nbsp;Why the focus on gluten-free?</h3>



<p class="wp-block-paragraph">As most stories go, I’ve been baking since I was a kid and always loved it. My Celiac Disease diagnosis came in 2006 while I was living in Brooklyn. I dabbled a bit in gluten-free baking but wasn’t really committed to the necessary diet as I should have been. That changed when we moved to Ann Arbor in 2007.</p>



<p class="wp-block-paragraph">It was then I decided to start baking gluten free more, and though I&#8217;d start a business. I knew the Ann Arbor Farmers’ Market would be a great place to test the waters. Since then, due to my own extended food allergies, we’ve included using organic coconut oil and sugar, baking more vegan items, and making sure our ingredients are soy and corn free. My husband believed so much in what I was doing, he jumped on board and helped me expand the business.</p>



<h3 class="wp-block-heading">2. Are there other highlights of your products? Dairy-free, egg-free, nut-free etc?</h3>



<p class="wp-block-paragraph">Everything we bake is soy-free and corn-free, and almost everything we bake is vegan. We’ve kept a few original items that have grass-fed butter and free-range eggs.. We try to use low-glycemic, organic coconut sugar or nectar in most of our creations. In addition, we offer grain-free options, including bread and cookies.</p>



<p class="wp-block-paragraph">We buy and use local and organic ingredients or buy from vendors who use organic practices whenever possible. We buy our chocolate from <a title="Mindo Chocolate – Michigan’s Chocolate Maker" href="https://miglutenfreegal.com/2019/04/03/mindo-chocolate-michigan-bean-to-bar/" target="_blank" rel="noopener noreferrer">Mindo Chocolate</a>, in Dexter. Our packaging is compostable, and our cleaning products are earth-friendly. We’re also starting to include soups, and light-meal options, such as quiche, salads and pizza to go.</p>

<h3 class="wp-block-heading">3. What steps do you take to insure that your products are truly gluten-free?</h3>



<p class="wp-block-paragraph">We are a dedicated gluten-free bakery and never bring gluten into our facility. All ingredients are purchased from reputable, gluten-free sources. We also make sure our sources are corn and soy free. We use <a href="https://goldenprairieoats.com/gluten-free" target="_blank" rel="noreferrer noopener">Golden Prarie Oats</a>, which are tested and verified to contain under 10 ppm of gluten, which is lower than the FDA standard of 20 ppm.</p>



<h3 class="wp-block-heading">4. Do you have any stories of customers who reported back to you how important your products have been in their life?</h3>



<p class="wp-block-paragraph">People tell us all the time how much they love and appreciate Tasty Bakery and our practices. We try very hard to use “clean” ingredients and believe it’s the reason our products are so good. <h3 class="wp-block-heading">5. What would you like consumers to know about your products and your business?</h3>



<p class="wp-block-paragraph">We want people to know that we put a lot of thought, care and love behind what we do. Even though most of what we do are desserts, we want to make sure that our benefits&nbsp; you;&nbsp; not only in taste &amp; pleasure, but nutritionally as well.We make things in small batches by hand. In addition, we wrap everything by hand in compostable packaging because we care about every batch and what we put into the environment.</p>



<p class="wp-block-paragraph">Plus, we want our bakery to be more than just a place to pick up cookies or bread. We have plans to use our space to teach classes and host community events. It will be a place where you can get a good cup of local coffee, sit and catch up with a friend, and just enjoy the vibe that is Ann Arbor.</p>
