Is Your Home Totally Gluten Free? How Do You Prevent Cross Contact?

As a celiac, eliminating the possibility of cross contact is of critical importance to me, both personally and for my small business. Therefore, we have zero wheat flour in the home. However, I do stock premade cereals and pasta that contain wheat in my home.

I take extensive precautions to eliminate cross contact. This includes fresh and clean clothing, I pulled my hair back and keep it covered. In addition I scrub my hands and nails as well as surfaces, utensils, baking pans and mixers prior to baking. The floors and cabinets are cleaned and wiped down before and after baking. We also restrict who can be in the kitchen when I’m baking.

UPDATE – Products Made at Proud Mitten Shared Kitchen

Rolling Scones recently started selling their products at Cantoro’s, Red Dot Coffee Co, and Ground Control Coffee Roasters. However, to do so, they must be made in a licensed kitchen.

Therefore, Rolling Scones started producing some of their scones at the Proud Mitten Shared Kitchen in Plymouth. To protect gluten free customers, they took the steps to certify these commercially baked products as gluten free.

“While” we do use a shared convection oven, before we bake, that oven is dismantled and cleaned out; this involves removing and cleaning all of the racks as well as all of the inside and outside surfaces.”

“Our commercial partners are aware that we do bake in a shared kitchen, and we do share all the same information with them.”

Our cottage food baking for farmers markets, public events, as well as in state orders and deliveries are still done in our gluten-free kitchen at home.

What inspired you to become a baker? Why focus on gluten-free?

When I received my Celiac Disease diagnosis in 2012, giving up gluten-laden tasty breads and baked goods was difficult and unsatisfying. I turned my attention from mass produced, store bought items to home baked goods at local farmers markets.

My husband and I often visited the farmers market in Plymouth on Saturdays, always on the lookout for a gluten free treat I could REALLY sink my teeth in. However time after time I left disappointed with the selection, the taste or the price!

Gluten Free Scones that AREN’T Dry and Crumbly

Frustrated, I studied gluten free baking, learning all I could about the pros, cons, ins, outs, and dos and don’ts. As techniques and products have evolved, so has my baking. My first non-cookie bake was scones. I figured, scones are supposed to be dry and crumbly so how could I possibly mess it up with gluten free flour!

Surprisingly, they were tasty and moist! Not at all what I expected. I expanded my flavors and to my delight, my kids LOVED them. My family encouraged me to sell them at the Farmers Market. Therefore, The Rolling Scones Gluten Free Bakery was formed! I have since diversified our menu to include cupcakes, cinnamon rolls, rosemary focaccia and bagels, with more to come.

What Other Allergens are Your Baked Goods Free From?

Our baked goods are free from peanuts and sesame. (as well as no fish, nor shellfish.) I can make dairy or egg free scones upon request.

Our only tree nut-containing scone is our Almon-Delite which contains almonds, almond paste and natural almond extract. I make this scone LAST on bake day to prevent cross contamination; as I would do with any special allergen specifics bakes/requests or products that in the future might contain nuts (granola).

Our scones that contain chocolate chips of any kind also list soy lecithin as an ingredient which MOST soy-sensitive people are ok with. Our Smore’s scones also contains NON-vegan marshmallows; also indicated on the ingredient label.

What steps do you take to ensure that your ingredients are gluten free?

I verify that all our products are certified gluten free and follow purity protocols when required. This includes flours made by King Arthur, Namaste and single flours like rice, sorghum, and tapioca.

Do you use oats or oat milk? -I use Chobani Oat milk in my non-dairy options and I’m starting a line of gluten free granola snacks using certified gluten free oats, from One Degree Organic. At this time, I do not bake with oats.

Can you share a testimonial from people who have purchased Rolling Scones gluten free baked goods? 

I had a repeat customer at the Plymouth Farmer Market place large orders of mini scones for her mother who was homebound and needed to eat gluten free. She said her mom looked forward to their visits a little more, knowing she would get our scones. That made me feel so good!

In addition I had a customer who previously lived in Paris. She said our scones were better than the ones she got at the local Parisian patisserie near her home. That was a HUGE compliment!

What would you like consumers to know about your products and your business?

I put a lot of time, effort, love and research into each and every Rolling Scones gluten free product I make. Everything I prepare is made in small batches using organic, locally sourced produce whenever possible.

Recently, I transitioned from artificial colors to natural colorants from organic produce whenever needed. For example, for my red velvet cake I use beets and beet juice, and no longer use Red No. 40. I thoroughly enjoy what I do and I look forward to sharing new products with my “Rolling Scones groupies”!

Our kitchen ingredients include foods from the other top allergens. We do offer gluten free vegetarian and vegan options, including a vegan cauliflower soup.

What Kind of Oil Do You Use for Cooking/ Frying?

For frying, we use canola oil. For general cooking and our dressings, we utilize a blend of olive and canola oil. Please note that we do not have a dedicated fryer for gluten free items.

Do you Have a Separate Gluten Free Menu?

Union Assembly does not have a separate gluten free menu. All gluten free options are marked on the main menu.

Gluten free options include handheld sandwiches, including our Paul’s Reuben sandwich, made with Detroit’s own Sy Ginsburg corned beef. We also offer salads.

What steps do you take to prevent cross contact in the kitchen?

We keep a dedicated prep area for gluten free meals. Staff know to change gloves, and use separate cutting boards and utensils when preparing gluten free orders. Gluten free orders are cooked in a separate pan instead of a shared griddle.

Do you have picks or special plates that denote a Gluten Free meal?

At this time, we do not have special plates or picks that denote a gluten free meal.

Do You Offer Gluten Free Desserts?

Yes! Our delightful cheesecake features a delicious gluten-free graham cracker crust.

What’s your most popular gluten free menu item?

 Our creamy and satisfying Gluten-Free Mac & Cheese is a definite crowd favorite!

Do you offer gluten free beer or hard cider?

While we don’t have gluten free beer at this time, we do offer gluten free hard cider. Join us Monday through Friday from 2pm-6pm during Happy Hour for $5 bites and drinks.

Do you have patio seating? Are dogs allowed outside? 

Absolutely! We have a lovely patio area, and yes, pups are welcome to join you there when the patio is open.

Who Plays at Comerica Park?

Comerica Park is home to the Detroit Tigers baseball team. Previously they played at Tigers Stadium, located at the corner of Trumbull and Michigan. However, the Detroit Tigers moved to Comerica Park in April of 2000.

Comerica Park is one of three major sporting arenas located in downtown Detroit. Little Caesars Arena houses the Detroit Pistons basketball team and the Detroit Red Wings hockey team, which opened in 2017. The Detroit Lions football team plays at Ford Field, which opened in 2002.

Since 2017, Detroit is the only U.S. city to have its MLB, NFL, NBA, and NHL teams play within its downtown district. ~Wikipedia

Where is Comerica Park?

Comerica Park is located at 2100 Woodward Ave, Detroit, MI 48201. Woodward Avenue, also known as M-1, runs thru the heart of Detroit, and thru most of Metro Detroit. It’s famous for the Woodward Dream (Car) Cruise, which takes place every August.

How Much are Tickets?

Single game ticket prices start around $30, and cost as much as $200+. Tickets prices vary due to seating location. Bleacher seats cost less than box seats. Visit the Detroit Tigers website to buy tickets.

What Steps Does Comerica Park Take to Prevent Cross Contact?

I asked David Comiska about cross contact in regards to hot dogs and sausages. In addition, I asked if staff change gloves when handling a gluten free order. Here is his reply.

All hot dogs and sausages are gluten free, until placed into a hot dog bun. The only thing cooked on those grills are diced onions, pepper onion blend, and sauerkraut. 

Our gluten free buns are not warmed at all or heated in any capacity, same as our regular hot dog buns. 

The gluten free hot dog buns come in a 4 pack. Generally, staff knows to change gloves. However, it never hurts for the guest to ask the person to change their gloves when dealing with gluten free buns, knowing that it is a special dietary need of said guest. 

Does Comerica Park Have Gluten Free Beer?

While I do not see any gluten free beers on their menu, they do serve hard cider and seltzers. Most notable, Blake’s Triple Jam Hard Cider is available at most bars.

The Meijer Market (Section 143) and the Miller Lite Market (Section 149) both have seltzers and canned cocktails. The Miller Lite Pitcher’s Pub (near Gate B) has a full bar.

Can I Bring my Own Gluten Free Food To Comerica Park?

I asked David Comiska this question, and this was his reply. “If after they see the allergy guide that is attached, and still cannot find something, I then coordinate with security. I allow them to bring snacks in that don’t take up much space. Any bags with gluten free snacks must follow our security team’s policy regarding bags.”

The bag policy states that “Single compartment bags, wallets and clutches smaller than 4″ x 6″ x 1.5” with or without a handle or strap are permitted. Bags, purses, clutches larger than 4” x 6” x 1.5” are prohibited.

Exceptions to this policy include bags, wallets and clutches needed due to medical necessity. Medical necessity includes diaper bags, breast pumps, oxygen, insulin, epi-pens and other medical devices. Authorized Diaper and Medical bags are required to be smaller than 16″ x 16″ x 8″.

Where Should I Park if Going to Comerica Park?

Parking in Detroit is crazy, even on a non game day. You can reserve parking spots through the Park Whiz on the Detroit Tigers website. There are 2 parking structures near Comerica Park, which are Tigers Parking Garage and the McLaren Garage. They are at the north end of the ball park.

You can park farther away from the ballpark, which is usually cheaper. Public transportation that runs near Comerica Park include The Q-Line station at Montcalm Street is near the stadium. You can also use the People Mover, and exit at the Grand Circus Station.

What Other Gluten Free Dining Options are Near Comerica Park?

Across Woodward, you can easily walk to Frita Batidos or Union Assembly. Buddy’s Pizza on Broadway, home of the original Detroit Style Pizza, offers gluten free pizza options. It’s about a 5 minute walk from the front of the stadium. You’ll find Detroit Water Ice Company, which has amazing Italian Ice, about a 10 min walk away, on Woodward. Most flavors are gluten free.

If you’re willing to travel a bit, you can go to Breadless on Larned, where EVERYTHING is gluten free. Everything at the Sushi Lounge inside Detroit Shipping Company is also gluten free. Baobab Fare, which is about 3.5 miles northwest of the ballpark, has a menu where everything is gluten free except for the bread. They have amazing African food.

Or, go to the old Corktown area and eat at Slows BBQ. Or Condado Tacos, located about a mile away on Selden St, has many gluten free options. I also like Folk Detroit for their gluten free waffles, which is on my Detroit Gluten Free Dining Guide. Make sure to scroll to the bottom for Metro Detroit gluten free dining suggestions.

Gluten Free Options at Other Michigan Sport Venues

Curious about other sports teams? I’m working on articles about Little Caesars Area and Ford Field. Interested in Minor League Baseball? Why did you decide to start offering gluten free options at Broasted Brothers?

We started offering gluten free because of both of  our wives’ gluten allergies. They asked us to offer it since the beginning of the store but we ignored them. now we hear “iI told you so.” Turns out just two weeks ago my brother has been tested and also has allergy issues to gluten and soy.

Do you accommodate other allergens? What kind of oil do you use?

The gluten free chicken is also dairy free. We have just recently switched from soy to canola oil about two weeks ago. We never use peanut oil.

What are your procedures for making gluten free orders?

We always change gloves or wash hands when dealing with gluten free orders. We prepare the gluten free inside of the walk-in cooler to best keep the wheat flour away from the gluten free chicken. Currently we have two separate gluten free fryers, used only for gluten free chicken and wedges.

What gluten free options are on your menu?

Any of our chicken can be made gluten free (bone-in, tenders, and wings). Also we just started a chicken sandwich and fish. We also will be starting gluten free shrimp in the near future. Also all of our sides are gluten free, except for the Mashed potatoes and the Macaroni and cheese.

Do you offer any gluten free desserts? 

All of our shakes are gluten free. Recently we added a chocolate Molten lava cake to our menu, and will be soon adding another chocolate cake.

What are your hours of operation? 

During the week we are open Tuesday thru Friday from 11AM-9PM. Saturday we are open 12PM-9PM, and Sunday we are open from 12PM-8PM.

Where should customers park?

We are located in the Sheldon Place Plaza on the corner of 5 mile and Sheldon Rd. There is ample parking in front of our store front. We’re in the same plaza as Busch’s Food Market, and across the street from St. Johns Resort.

Do you offer catering? 

Yes, we offer catering and we have hot boxes to hold the food warm for 6 hours. We also have chafing dishes as well. We can deliver with our catering van or it can be picked up.

What else would you like my readers to know about your business? 

We are family owned and operated and we love being part of the gluten free community. They really have embraced us and what we are doing.

Where is Detroit? 

Detroit is located in the southeast corner of Michigan. It is easily accessed via Interstate 75, which runs from Florida all the way to Michigan’s Upper Peninsula. While one can get close to Detroit by air, the Detroit Metro Airport is actually located in Romulus. Therefore, one still must drive 25 minutes to get from the airport to downtown Detroit. The Detroit River separates the city from Windsor, in Ontario, Canada. 

What is Detroit Famous For? 

Once the capital city of Michigan from 1805-1847, Detroit is best known for its Motown music heritage and its sports teams. One can still visit the home of Henry Ford, a pioneer in the car industry. In fact, Detroit is still referred to as the Motor City, and is home to GM Headquarters.

Parking in Downtown Detroit

Parking in Downtown Detroit can be hectic. Parking garages are located downtown, and street side parking is also available. The Park Detroit website and app allow you to pay for parking online. The app also helps you find available parking. Also keep in mind that Detroit offers the People Mover, an elevated train that manuevers around Downtown Detroit. Even if you can’t park near your destination, you may be able to park in a structure and take the People Mover to where you want to go. 

Festivals and Attractions in Detroit

Detroit is home to the America’s Thanksgiving Parade, and many more holiday events. For the car enthusiast, visit the yearly Detroit Auto Show.  In addition, one will find many museums, theater and concert venues, including the Masonic Temple. Gluten Free Dining in Downtown Detroit

I’m sharing eight restaurants that offer gluten free options. Only one restaurant, Breadless is 100% gluten free. At the end of this list, I’ve included an embedded map so you can find these restaurants, easier. In addition, I’ve included an additional section of gluten free options in Metro Detroit, near the Detroit Zoo. Despite its name, the zoo is actually in Royal Oak, which is 20 minutes away.

Gluten Free Options:

Everything on the menu at Breadless is gluten free! They make sandwiches wrapped in greens. Choose from fun wraps like the Cardi B (Swiss chard + sliced chicken, pepper jack cheese, cilantro avocado sauce ) or the What the Kale (Dino kale + halal roasted chicken, cheese, bbq sauce).  Recently Breadless has operated food stalls at Comerica Park, home of the Detroit Tigers, and Little Caesar’s Arena, home to the Pistons.

Cross Contact Prevention Protocols:

Because their menu contains no gluten, cross contact should not be possible.

Gluten Free Options:

Gluten Free options include burgers without a bun, french fries made in separate hot oil, and their “Best Snack Ever.” The BSE is layered dish of Coconut Ginger Rice, black beans, melted muenster and cilantro lime salsa. And I admit, it really is the best. Their Batidos, or cuban mikshakes, are also gluten free.

Other options include “Beef Frita lighter on romaine, Chorizo Frita lighter on romaine, Chicken Verde Bowl, Tropical Salad with or without seared tofu, Twice Fried Ripe Plantains, Loaded Plantains, Crisped Plantains, ‘Best Snack Ever,” Shoestring Fries, Garlic Cilantro Fries, Black Beans, Coconut Ginger Rice, Tropical Slaw, Cinnamon Sugar Plantains, Batidos (w/the exception of the Batido de Trigo available occasionally as a special and the same applies to our housemade Paletas in the Spring/Summer months), Avocado Spread and Cilantro Lime Salsa.” 

Cross Contact Prevention Protocols:

Eve, the owner of Frita Batidos, recently shared with me their newly updated gluten free food order protocols. That includes at dedicated fryer, available at their Detroit and Ann Arbor location. They also have a kit in a zipped bag with dedicated gluten free cutting board, Chef’s knife, pot, pan, etc. (Again, available at both locations.)

“We do ask that guests with Celiac Disease let us know, because we take extra precautions with this condition. For guests with Celiac disease, we specify on our order ticket, do a verbal call to the expeditor, write it on a white board and have a dedicated person in the kitchen prepare and package the order from start to finish.” Both servers and kitchen staff are trained on what Celiac Disease is, and cross contact.

Gluten Free Options:

“Our waffle and coffee cake are gluten free, and we have gluten free bread for sandwiches. Everything but our Crunchwrap and soba salad are able to be made gluten free. All of our gluten free options are marked on the menu along with dairy free, vegetarian, and vegan options.”

Cross Contact Prevention Procedures:

“Our space is small, so typically only one thing is being prepped at a time, and everything is cleaned and sanitized afterwards. We only have one waffle and it’s gluten free! For sandwiches, they are wrapped in foil before being put on the press. Gloves are worn to prevent any cross contact.”

Gluten Free Options:

Mudgie’s offers gluten free bread for any of their signature sandwiches. Choose from sandwiches like the Dad (ham and cheese with yellow mustard), the Mudgie (beef brisket, turkey breakfast, veggie cream cheese, lettuce, onion and honey mustard), or their Turkey Trot (turkey, cheddar dried cranberries, apples, walnut, honey mustard and mixed greens), and more. Certain sandwiches cannot be made gluten free, due to the toppings used. 

“We offer gluten free bread for any of our sandwiches with the exception of the the vegan corned beef reuben. This is due to the fact that the vegan meat is made from vital wheat gluten and therefore cannot be made gluten free.”

Buddy’s Pizza owns many restaurant locations across the state of Michigan. Detroit, which is the original home of the Detroit style pizza, offers gluten free pizza and salads. Please be advised that their gluten free crust contains dairy, and costs an additional $2. It is only available as a 4×4 square pizza.

When looking at the Slow’s BBQ main menu, most dishes are marked with a lowercase “g”, which means gluten free options are available. (Sadly, no gluten free mac and cheese.) They also offer gluten free buns from Rumi’s Passion.

Texas De Brazil offers a Special Diets menu on their webpage. It appears that the majority of their meats and salad bar contain no gluten. Their Brazilian cheese bread (like Brazi Bites) contain no gluten, nor does their jasmine rice or Sweet Fried Bananas. Dessert options include Crème Brûlée and Brazilian Flan

After spending her time working in a commercial bakery, Kelly LaMarra decided to start her own baking business. Her bakery job found her baking plenty of wheat based treats, not suitable for those who need to eat gluten free. So she decided to start her own home based baking business, Baked 4 U. Safe for those with Celiac Disease and dairy and tree nut restrictions.

Like so many other new gluten free bakers, Baked 4 U is home based. The Michigan Cottage Food Law allows Kelly to bake in her home, and sell directly to the consumer. 1. What inspired you to become a baker? Why the focus on gluten-free?

I have to admit that I have a sweet tooth. However, I eat gluten, dairy, and tree nut free due to food allergies. Gluten and dairy cause me to  have stomach issues, and I’m anaphylactic to tree nuts. As a result, I had to learn to make my own sweets. While some store bought treats are available, I felt I could provide better options.

2. Are there other highlights of your products?  Dairy-free, egg-free, nut-free etc?

As previously mentioned, all of my baked goods contain no gluten, tree nuts or dairy, due to my own food allergies and intolerances. I offer egg free options, but I’m still working on creating a completely egg free product line. In addition, most of my items contain no soy. I do not offer keto items.

3. What steps do you take to ensure that your Baked 4 U treats are truly gluten-free?

I keep a dedicated gluten free kitchen, and use only gluten free flours. Plus, I read ingredient lists for all other in products I use in my baking, for gluten free status. I use Bob’s Red Mill Gluten Free Oats in my oatmeal cookies.

4. Can you share a story of a customer who’s been greatly impacted by your business?

I started my business in 2019, so I’m still new to the market. A few happy customers have left reviews on my Facebook page. I look forward to serving more of the gluten free community! From the people I have sold to, a lot of them are grateful to find someone who does gluten free baking.

5. What would you like consumers to know about Baked 4 U?

I make an assortment of baked goods, including cupcakes, cookies, cakes and more. Under Cottage Food Law, I cannot ship. However, I will deliver for free within the Plymouth city limits. On my Facebook page, visit my “Services” tab to see my menu and prices. I look forward to baking for you!

Angela Phipps, owner of Gluten Free Sassy Bee, and I have one great thing in common. Understanding husbands. With her dietary restriction to gluten, he vows to keep the house free of wheat, rye and barley. It truly makes life so much easier.

What inspired you to become a baker? Why the focus on gluten-free?

After discovering gluten was the root of all my health issues, my family was disappointed. Premade gluten free desserts paled in comparison to the baking I’d done for them since they were small. They worried that all those cakes made with love would disappear.

I vowed to master gluten free baking so that everyone LOVED what we were eating. After that my friends and family encouraged me not to keep these cakes to myself but to offer them to others. Since November of 2018, I’ve had the blessing to make baked goods a thing of joy to those who need them.

Are there other highlights of your products? Dairy-free, egg-free, nut-free etc?

I can alter recipes to offer dairy free, soy free, egg free & nut free baked goods. Nuts are not present in my kitchen, and I own dedicated nut free equipment for customers with nut allergies. If someone orders a cake with nuts, I use a separate kitchen. I have separate and labeled equipment to use for various allergens, such as soy free, dairy free, egg free, etc.

What steps do you take to insure that Gluten Free Sassy Bee products are truly gluten-free?

Due to my own health issues, no gluten enters my home. I keep a dedicated gluten free kitchen & home. I mainly use certified gluten free products. To insure safety, I continuously research any ingredients that are not certified. In addition, my skin reacts to gluten, so it’s important everything I use is safe for me and the customer.

Can you share a story of a customer who’s been greatly impacted by Gluten Free Sassy Bee baked goods?

I know three stories I’d like to share. First, I prepared a cake for a 9 year old who’d never had a “real” birthday cake before. Another person started sobbing after eating my cupcakes. She thought she’d never taste her grandma’s chocolate cake again, but she said I “nailed it.” Finally, I was honored to bake for a little girl with multiple food allergies. She enjoyed her very first unicorn cupcakes, made completely gluten, egg, dairy, soy & nut free!

What would you like consumers to know about your products and Gluten Free Sassy Bee?

I’d like potential customers to know that I currently offer 28 cake/cupcake flavors. These include traditional flavors such as yellow, vanilla bean and chocolate. However I also offer unique flavors like Tutti Fruity Pebbles, Caramel Apple, Butterscotch and more. Find the complete list, pinned to the top of my Facebook page.  I’m always looking to add more flavors as I master them, as well! Cupcakes are $3 each, with a minimum order of 12.

Facebook Community Scores Again

Back in October, I shared my list of Michigan Gluten Free Dining Options on Facebook. As always, our community quickly highlighted other places I should try. Since more than one person mentioned Hidalgo Mexican Restaurant, I decided I definitely needed to stop in! Thanks to Amanda and GlutenFreeFoodieMI for the suggestion!

This restaurant intrigued me because someone mentioned Hidalgo Mexican Restaurant uses a dedicated gluten free fryer. I made sure to call prior to driving over, and the person on the phone assured me they did. They also verified the know to change gloves, etc when preparing gluten free meals. From the moment I walked in the door, staff guided me through what was and was not gluten free.

Attention to Detail

Besides my need to eat gluten free, my husband must also avoid pork. When asked about his needs, staff quickly answered that they use no lard in the restaurant. HUGE plus for us, as my husband rarely gets to eat authentic Mexican food. Plus, they distinguish the mild from the spicy salsa by putting a chip in the hot salsa. Since I can’t handle spicy food due to my hiatal hernia, I especially appreciated that.

So Many Gluten Free Options, What to Order?

In reality, very few things on the Hildago Mexican Restaurant menu were off limits to gluten free diners. The issue became “what to order”? So many choices! My husband ordered the Combo Plate. It consisted of 1 taco, 1 enchilada, 1 burrito and 1 tostada. Plus it came with a side of rice and beans. He loved it all and even shared a few bites with me.

I ordered the Chicken Flautas entree. It consisted of 3 fried corn chicken taquitos topped with lettuce, tomato, guacamole and sour cream. Like my husband’s meal, mine also came with rice and beans. I was so excited to be able to order something deep fried as my meal. That never happens!

If I can describe the food at Hidalgo Mexican Restaurant in one word, it would be “fresh.” Not just that the food is freshly prepared, but that’s it’s not covered up with spices. It doesn’t feel “heavy,” if that makes sense. Just good, Mexican food, cooked in the tradition of Hidalgo, Mexico.

Gluten Free Deep Fried Ice Cream

In all honesty, the deep fried ice cream originally drew me to Hidalgo Mexican Restaurant. I haven’t had deep fried ice cream since graduating college in December of 2001. (Remember Chi-Chi’s?) While my Mexican Unfried Ice Cream is delicious, it can’t quite compare to the crispy shell on this dessert. (And yes, I verified that the coating is gluten free and not made from Kellogg’s Corn Flakes.)

Great Food, Amazing Staff

While the food tasted great, I was really impressed by the staff. Kim, the manager, took time to chat with us for quite a while. She explained that customer requests for gluten free meals lead them to set aside a dedicated fryer. Before any new staff wait on tables, they must know gluten free procedures inside and out.

We were blessed to chat with the owner and cook, Tony, as well. Despite not having Celiac Disease issues himself, he’s passionate that all patrons get a safe meal. He even stands up to cooks at other restaurants who think gluten free is a “fad.” It’s so nice to have others sticking up for us!

After talking to staff, it was obvious that Hidalgo Mexican Restaurant is more than just a business. It’s family. While they may not be blood related, they’re dedicated to one another, and their customers. When you visit, keep an eye our for Tony’s plane. The staff put it together, and there’s even a miniature sized Tony flying the plane!

I met the owner of Rumi’s Passion, Steve Ciric, and his family years ago when I helped organized the Lansing Gluten Free Fair. People would flock from across the state of Michigan to buy their gluten free baked goods. While the fair no longer exists, people still travel far and wide to their store in Plymouth. Located only 15 minutes from IKEA, it’s great place for a road trip.

If you were to ask me my favorite items to buy there, it would be hard to choose. They offer a great selection of sweet treats. However, they also make pasties, pizza crust, and other savory items. They’re sliced bread gets rave reviews, as well. Learn more about this business in my Q&A, below.

1. What inspired you to become a baker? Why the focus on gluten-free?

I’ve been a baker for decades. In reality, my family has been in the baking industry for over 30 years. We owned Wild Flours bakery 8 years ago and customers began to ask about gluten-free options.

After some research I saw that I needed a dedicated facility in order to safely offer gluten-free items. So we closed down our conventional bakery and opened Rumi’s Passion in 2010. You can read more about our adventure in opening our business the Plymouth-Canton Patch.

2. Are there other highlights of your products? Low sodium, fat free, etc?

We offer dairy-free, soy-free, corn-free, and vegan options. Some of our items are sugar-free as well.

3. What steps do you take to insure that your products are truly gluten-free?

All of our ingredient suppliers provide us with fact sheets to confirm they are gluten-free.

4. Can you share a story of a customer who’s been greatly impacted by your business?

You can find many reviews from happy customers on our Facebook page, including this one –
“I special ordered unfrosted cutout cookies so my daughter could have the experience of frosting legit Christmas cookies. Rumi’s cookies are AMAZING! I truly wouldn’t have known they are gluten-free and dairy-free. Thank you so much!”

5. What would you like consumers to know about your products and your business?

We are able to do custom products for customers who have restrictions beyond a gluten-free diet.

While Rumi’s Passion offers a large assortment of baked goods, they also offer other gluten free pantry items. From chips and crackers, to tamari and snack bars, it’s a fantastic place to grab those items you may not be able to find anyhwere else. They also support other Michigan businesses, by stocking items from Full Flavor Foods and Old World Gluten Free. They also serve Great Lakes Coffee in their bakery, so you can get a hot cuppa with your gluten free donut!

They also supply items for area restaurants, such as the Union Joints chain of eateries and Mr. Mike’s Grill. You can find a limited selection of Rumi’s Passion products at Holiday Market, Nino Salvaggio, Plum Market and Westborn Market in the gluten-free freezer section. They do not ship.

A Long History of Feeding Others

Owning a restaurant is not an easy thing. It involves lots of hsours of work, every day. When you’ve been doing it for 40 years across the country, it has to be from a deep love of service. When Sammy and Hiyam Bajalieh bought Mr. Mike’s Grill in October of 2014, they did so with family in mind.

However, Hiyam also wanted to start feeding another part of her “family”. Those with Celiac Disease.

They wanted to include their children in their legacy of serving the community. Their daughter Angie is an integral part of the restaurant. While her parents are creating home-cooked meals in the kitchen, Angie helps out with the business side. She’s tending to customer service needs, both in store and on social media.

Celiac Owned and Operated

Hiyam, owner of Mr. Mike’s Grill,  has lived with Celiac Disease for years. She knows first-hand the frustration of not having gluten-free food available. Not just gluten-free, but prepared in a facility that’s safe and free of cross-contact. Hiyam was proud to show me the dedicated prep space in their kitchen. Here’s more of her story in her own words.

1. What inspired you to offer a gluten-free menu at Mr. Mike’s Grill?

I know the frustration when trying got eat out in social situations. Finding a “safe” eating location is difficult, and the selection on a menu is often lacking. I’ve personally experienced this myself many times on a night our with friends.

After 40 years in the industry, I wanted to own a restaurant and craft a menu that I personally would want to eat from. After working at it for over 11 months, I’m proud to say we have one of the largest gluten-free menus in the area. Our menu is reasonably priced, with prices ranging from $6-$10.

2. Are there other highlights of Mr. Mike’s Grill gluten-free menu?

Almost  100% of our menu is homemade. Our locally sourced corned beef is slow cooked in house for hours. Our burger patties are made fresh in house, never frozen. The meat sauce for our spaghetti is always made from scratch.

3. What steps do you take to insure that your products are truly gluten-free?

Mr. Mike’s Grill has a two-part kitchen. All of our gluten-free items are made in a separate part of the kitchen. Our staff have been trained to ask questions to make sure orders are taken and prepared carefully. They always know to ask me or my husband about any concerns about a customer’s order. We even have a dedicated fryer for fries!

4.  Can you share any reviews from grateful customers?

A member of the Tri-County Celiac Support Group drove here after reading a review in group’s newsletter. She really loved the food and said she’d gladly share the word. We have lots of regulars that come back frequently, including Deb from Gluten Free Foodie MI. She’s tried shared lots of pictures of our menu items on her Instagram feed.

5. What would you like consumers to know about your products and your business?

We use all the freshest ingredients, source our food locally and are constantly striving to improve our gluten-free menu. Our gluten free buns are provided by local Rumi’s Passion, and Old World Gluten Free makes the pierogi we serve.
