Where is Republica Gastropub?

Republica Gastropub is located in the quaint town of Berkley, Michigan. Berkley is situated approximately 20 miles north west of Detroit and 3 miles northwest of Royal Oak. It’s less than a 10 minute drive from the Detroit Zoo.

Why does Republica choose to offer gluten free items? 

We are a family operated business, open since 2013. My mom and business partner lives with Celiac Disease. When we opened 11 years ago, there were very few restaurants offering gluten free options. (Other than a salad) We decided to be intentional in offering a wider selection of gluten free options on our made from scratch menu.

Is your menu also free from other allergens? I.e, nut free, dairy free

We maintain a peanut free kitchen. Many of our menu items can be made free from other allergens, by request. However, please understand that we do stock dairy, eggs, fish, etc in our kitchen.

What kind of oil do you use for frying/ cooking?

We cook in butter and olive oil. Our dedicated gluten free fryer uses beef tallow and our regular fryer uses vegetable oil. We prepare all of our salad dressings with extra virgin olive oil, with the exception of our greek dressing. This classic recipe uses vegetable oil. 

Do you have a separate gluten free menu? 

We list all of our gluten free options on our main menu, except for our secret gluten free fish and chips. Our menu also highlights vegetarian and low glycemic index options, such as our Tomato Burrata Flatbread, which is also gluten free.

Do you have a separate prep area for gluten free dishes? 

We are not a certified gluten free kitchen. However, we have a dedicated gluten free fryer as well as a dedicated area to toast gluten free buns. All of our items cooked on the flat top are gluten free until they hit the bread, leaving little opportunity for cross contact.

Our salad area is completely gluten free at all times. Our food is all cooked to order in its own pan and washed between each use. We do use great care when cooking our gluten free menu options.

What steps do you take to prevent cross contact in the kitchen? 

Do staff change gloves for gluten free orders?

Yes, our staff knows to change gloves between all orders. 

Separate cutting boards/ knives/ utensils

Staff wash and sanitize cutting boars and knives between each use. 

Separate pots for boiling water?

We do not offer gluten pasta or any gluten items that require boiled water.

Dedicated gluten free fryer?

Yes, we maintain a dedicated gluten free fryer. This means that you can enjoy our award winning Platos Potatoes. These french fries are topped with feta, lemon and oregano.

Dedicated toaster/ waffle maker?

There is no toaster or waffle maker in our restaurant.

Are orders cooked in a clean pan vs shared griddle top? 

We prepare all gluten free orders in clean pans and/ or on a dedicated gluten free flat top. 

What training do your staff receive on preparing Gluten Free meals safely?

We require all staff to be Serve Safe Trained. “The ServSafe Food Handler program is comprehensive and provides training on the following Intended Learning Outcomes: Basic Food Safety, Personal Hygiene, Cross-Contamination and Allergens, Time & Temperature, & Cleaning and Sanitation”

Do you have picks or special plates that denote a GF meal?

We do not serve gluten free meals on special plates, nor we use use allergen picks.

What’s your most popular gluten free menu item?

By far, customers repeatedly order Ma’s Meatloaf, which is gluten free. We serve it with mashed potatoes, roasted Brussels sprouts, and top our meatloaf with caramelized onions. We do NOT use oats in our meatloaf.

Does Republica offer gluten free desserts?

Yes, we offer gluten free desserts at Republica. Our desserts are all made in house by my mom. We rotate our desserts daily and frequently offer gluten free options. We also offer custom orders should you need a dessert for a special occasion. 

Do you offer gluten free beer/ hard cider/ wine?

We always have gluten free items on the bar menu. Our cider & wine is always gluten free. We occasionally offer a gluten free beer. 

Do you have parking on premises?

There is public parking in the back of the restaurant. In addition, there is plenty of FREE street parking in downtown Berkley.

Do you have patio seating? Are dogs allowed outside?

Yes and yes! We love dogs.

Do You Offer Any Weekly Specials?

Every Tuesday, kids 12 and under receive a FREE MEAL, with purchase of one adult entree. On Wednesdays, we offer half off all bottles of wine.

We offer Happy Hour every Mon & Tues from 4-6 pm and Wed – Fri from 1-6 pm. During this time we offer $9 Happy Burgers. (Gluten Free Buns are $3 extra.)

In Spring of 2026, Republica launched their brunch menu. Gluten free brunch items include

The Unique History of Salt Springs Brewery

Salt Springs Brewery, located in Saline Michigan, resides in an old church. Built in 1899 as a Saline Methodist Episcopal Church, the building maintains beautiful stained glass windows. Read more about the building’s history in this Sun Times article.

Our chef’s cooking style naturally aligned with gluten-free preparation, which can be described as “simple food with skillful preparation.” His diverse experience in managing various restaurants and corporate dining settings has exposed him to a wide range of cuisines and techniques. By far our most popular gluten free dish is our Fish & Chips. We use Lake Superior white fish, prepared with gluten-free batter. We serve it with tartar sauce and french fries.

We offer two gluten free dessert options. Our most popular dessert is our GF Cookie Sundae. We serve this decadent dessert in a skillet, topped with Guernsey Farms vanilla ice cream, chocolate sauce, caramel sauce, Heath bits, and whipped cream. !

We also offer a GF Chocolate truffle cake, served with a tart passion fruit sauce. 

Do you offer gluten-free beer/hard cider/wine?

We offer our own hard cider, a seltzer, wine, and spirits. We do not have GF beer as our brewing equipment would not allow for the appropriate cleaning procedures.

Do you have any weekly specials?

We offer rotating weekly specials. Please check our current menu or social media for the latest offerings. Also, kids eat free on Tuesdays, and we offer happy hour Tuesday through Friday, from 3-5 PM. During this time we offer 50% off drafts & $2 off appetizers.

Do you have patio seating? Are dogs allowed outside?

We feature the best outdoor experience in the area. We recently constructed a new pergola. It includes infrared heaters, roll-down screens, and a louvered ceiling. It has all the amenities needed for the best enjoyment of the outdoors. We do not allow dogs.

What unique events do you have at your restaurant?

We offer a 5-course pairing meal once a month on Mondays. We haven’t done a gluten-free one yet, but we’ll make sure you’re the first to know when we do! Guests can view our event calendar at this link.

Do you have parking on premises?

There is convenient city parking surrounding our building. There is a parking lot behind our building with ample parking, and a handicap accessible entrance. You can find a map on our website which denotes parking near the building.

What Other Attractions are in Saline?

Saline is located about 20 minutes southwest of Ann Arbor, and situated on US 12. There is the most adorable candy store, Eleanor’s Sweets and Sodas, located across the street from Salt Springs Brewery. Rumor has it that Carrigan Cafe in Saline offers gluten free baked goods from Rumi’s Passion.

Per Ann Arbor.org, “special annual and seasonal events in Saline include Oktoberfest, the Saline Celtic Festival, the Summer Music Series, the Saline Summerfest, the Harvest of the Arts Oktoberfest, and the Saline Winterfest which are all held in the streets of downtown Saline.”

Saline also offers a weekly Farmers Market in the warmer months. Visit the Saline Main Street website to learn about more activities in the area.

Why did you decide to start offering gluten free options at Broasted Brothers?

We started offering gluten free because of both of  our wives’ gluten allergies. They asked us to offer it since the beginning of the store but we ignored them. now we hear “iI told you so.” Turns out just two weeks ago my brother has been tested and also has allergy issues to gluten and soy.

Do you accommodate other allergens? What kind of oil do you use?

The gluten free chicken is also dairy free. We have just recently switched from soy to canola oil about two weeks ago. We never use peanut oil.

What are your procedures for making gluten free orders?

We always change gloves or wash hands when dealing with gluten free orders. We prepare the gluten free inside of the walk-in cooler to best keep the wheat flour away from the gluten free chicken. Currently we have two separate gluten free fryers, used only for gluten free chicken and wedges.

What gluten free options are on your menu?

Any of our chicken can be made gluten free (bone-in, tenders, and wings). Also we just started a chicken sandwich and fish. We also will be starting gluten free shrimp in the near future. Also all of our sides are gluten free, except for the Mashed potatoes and the Macaroni and cheese.

Do you offer any gluten free desserts? 

All of our shakes are gluten free. Recently we added a chocolate Molten lava cake to our menu, and will be soon adding another chocolate cake.

What are your hours of operation? 

During the week we are open Tuesday thru Friday from 11AM-9PM. Saturday we are open 12PM-9PM, and Sunday we are open from 12PM-8PM.

Where should customers park?

We are located in the Sheldon Place Plaza on the corner of 5 mile and Sheldon Rd. There is ample parking in front of our store front. We’re in the same plaza as Busch’s Food Market, and across the street from St. Johns Resort.

Do you offer catering? 

Yes, we offer catering and we have hot boxes to hold the food warm for 6 hours. We also have chafing dishes as well. We can deliver with our catering van or it can be picked up.

What else would you like my readers to know about your business? 

We are family owned and operated and we love being part of the gluten free community. They really have embraced us and what we are doing.

Pacific Seafood makes gluten free AND wheat based products, so make sure you’re grabbing the right package. The gluten free products are certified thru the Gluten-Free Food Program. • Starfish Gluten Free Crispy Battered Cod (certified gluten free)

Starfish is actually part of the Pacific line. They sell their gluten free Cod, Haddock and Fish Sticks exclusively at Whole Foods. Click the link above to see the packaging, which is different from the Pacific packaging.

• AquaStar Crispy Breaded Alaskan Cod (certified gluten free)

The Gluten-Free Food Program states this brand has been in their certification program since 2014. Find these Aquastar gluten free fish fillets by using their store locator.

Gluten Free Fish Sticks

• Ian’s Gluten Free Fish Sticks

Ian’s Foods is known for their allergen free products. Free from 7 of the most common allergens, they do make fish sticks. (All products are sesame free, as well.) Find these fish sticks using the Where to Buy function on their website.

• Trader Joe’s Gluten Free Battered Halibut

This is back on shelves after a recall in 2020. Personally, I don’t think the new product tastes as good as what they used to offer. However, it’s a nice option for those wanting gluten free fish. 

• Captain Findus Gluten Free Fish Sticks

These Captain Findus Gluten Free Fish sticks are a product of Germany. Completely new to me, a follower noticed these at Olesen’s Food Stores in Traverse City. I believe someone mentioned that they’re also available at Plum Market?

I see no certification logo on these, and Captin Findus makes non-gluten free breaded fish items as well. I have reached out to them to see if they test their products to verify they contain under 20 ppm of gluten. I did not receive a reply.

Recently my husband and I had the wonderful opportunity to share the afternoon with the owners of De Food Truck, Toby and Joelle. While the food was absolutely amazing, the conversations with two of them was just as memorable. We sat and talked for hours!

Where is De Food Truck Located?

You can find De Food Truck is parked at the Blarney and Castle Gas Station in Mesick, Michigan. I included De Food Truck on my Traverse City Gluten Free Dining Guide.

What’s On the Menu?

Everything on De Food Truck menu is gluten free. They offer a variety of fried fish and seafood, plus chicken nuggets. In addition, they offer curry bowls. He fries everything in canola oil.

What Did You Order From De Food Truck?

My husband and I tried a variety of the fried fish and seafood. We both had perch and their amazing French Fries. These are no pre-bought frozen fries. Toby makes his fries from scratch, and fries them twice. Toby stated that they go thru as many as 100 lbs of potatoes on any given day!

My husband and I also tried their squid steak bites. I’ve never had squid before, so I wasn’t sure what to expect. It was great! Nice and firm, without tasting overly fishy. In addition, I had the fried shrimp, which was delicious.

What Kind of Breading is Used?

Since everything on this food truck is gluten free, you’ll find no wheat flour here. Toby uses a blend of rice flour and corn starch, and his own blend of spices. Everything we tried was perfectly cooked, and not soggy.

Does De Food Truck Have Vegetarian Options?

Yes! You can order their falafel, with or without fries. (Although, I highly recommend the fries!) Toby cooks the falafel in a dedicated fryer, away from the seafood and chicken. In fact, the fries and falafel are both vegan.

In addition, Toby makes this amazing Avo-Tar, which is a version of tartar sauce made with avocado. I could have put it on everything! Toby also said that he plans to switch to vegan mayo, so he can accommodate more people with dietary restrictions.

Why a Gluten Free Food Truck?

Toby has been in the food truck business, since 2006. He personally needs to follow a gluten free diet. After having operated a variety of trucks, he decided to finally open one that benefited him and others who have to eat gluten free. Where is Twigs Tavern and Grille?

Twigs Tavern and Grille is located in Rochester, Minnesota. Located about 1 mile from Mayo Clinic, it is THE best place to eat in town, if you have Celiac Disease. It is located inside the Centerstone Plaza Hotel.

So how does a Michigan girl end up in a Minnesota restaurant? Rochester was one of the stops on our epic road trip from the Great Lakes State to Sioux Falls, South Dakota. As we planned our route, a lady in a gluten-free Facebook group mentioned the awesomeness that is Twigs Tavern and Grille. So I sent the staff an email inquiring about visiting their restaurant, wanting to know more about their gluten-free story.

Why Did Twigs Tavern and Grille Set Up a Separate Gluten Free Kitchen?

What a story it is! Imagine that you are the lead recipe developer for a restaurant. Then imagine that you receive a Celiac Disease diagnosis. This is exactly what happened to the owner of  Twigs Tavern and Grille, Michelle Salz, in 2010. Not only did it turn her own life upside down, it presented a problem for her business.

However, she turned adversity into ingenuity. The restaurant reinvented their cooking procedures. They created a separate gluten-free kitchen, complete with refrigerator, prep area, utensils, cookware and appliances. Gluten-Free guests even get fresh salt and pepper shakers.

What Gluten Free Options Does Twigs Offer?

Four pages. The gluten-free menu at Twigs Tavern and Grille is FOUR PAGES long! Living on a medically required diet usually comes with restrictions. However, at Twigs Tavern and Grille in Rochester, Minnesota, one can experience amazing culinary freedom. How is this possible? This restaurant boasts the only separate, dedicated gluten-free kitchen in the city!

How are Twigs Staff Trained about Dietary Restrictions? 

Michelle completely retrained her staff in the proper use of cooking and handling foods for those with special diets. Front of house staff now automatically ask incoming guests if they needed a gluten-free menu. Gluten-free guests receive menus that look different from regular menus, which immediately alerts the server to the dietary needs of the diner. Gluten-free meals are served with picks that denote that it is a gluten-free dish.

What Did You Order?

And what an amazing variety of meals they offer! After we were seated, it literally took me forever to figure out what to order. Our waitress highly recommended the onion ring frittis, so we started with those as an appetizer. They had everything from steak cooked on a hot rock, to fish tacos to shrimp on zucchini noodles.

I debated between getting their award winning Parmesan Polenta, the Applewood Smoked Meatloaf, and even the Tomato Trio with Crispy Risotto Cake. Finally, my curry loving self settled on the Country Captain Chicken. My husband ordered the Old English Fish and Chips, and we also ordered a small plate of the Twigs Tavern and Grille award winning gluten-free butternut squash ravioli.

The Best Gluten Free Ravioli I’ve Ever Eaten

What a treat! First off, let me wax poetic about their ravioli. The pasts is tender and pillowy, not tough like some gluten-free pastas. The butternut squash filling was beyond stellar. It was adorned with a sun-dried tomato and garlic cream sauce so good I wanted to lick the plate. (As this is a finer dining restaurant, I restrained myself.) Seriously, the ravioli left me speechless. One can order this ravioli as a small plate, or as a full dinner entree.

Does Twigs Tavern and Grille Offer Gluten Free Beer?

Since I stuffed myself with the majority of the ravioli, my husband enjoyed the onion ring frittis. In addition to the appetizer, he also ordered a Burning Brothers “Roasted” Coffee Ale. Like Alt Brew, Burning Brothers is a 100% gluten-free brewery. Burning Brother Brewing is located in St. Paul, about an hour and a half north of Twigs Tavern and Grille.

My husband commented that it was the second best coffee beer he’s ever tasted. Not just second best gluten-free beer. My husband, who doesn’t have to eat gluten-free, rated this higher than some regular gluten containing beers. That’s quite a compliment! It paired well with the onion ring frittis and his fish and chips. His exact review of the fish was one word – “awesome.”

Do They Offer Gluten Free Dessert? Do They Have Vegan Options?

While the Country Captain Chicken stated it came in a curry sauce, it tasted more like a paella to me. Which I LOVE! This dish comes adorned with pan seared chicken, and loaded with a great assortment of roasted vegetables. What really makes the dish pop is the currants and toasted almonds, making a great balance of savory and sweet. As full as I was from the onion ring frittis and the ravioli, I wanted to eat every last bite of that dish.

Finally, our waitress came by with the dessert tray. Out the six desserts they offered that night, FIVE of them were gluten-free! Have you ever heard of such a thing?! Due to our full bellies, we regretfully passed on dessert. (Kicking myself. I should have asked to take one to go!) What even impressed me more is that they attempting to make vegan gluten-free desserts as well. I love that this restaurant is so accommodating to those with multiple food restrictions.

Final Thoughts

If I had any complaints about our time at Twigs Tavern and Grille, it would be that the fried food seemed a tad soggy. Maybe they simply need to up the temperature on the fryer. In addition, please make sure when ordering the Burning Brothers Coffee Ale that you know it comes in tall cans.

Our waitress accidentally brought us a non-gf beer at first. I immediately noticed the difference as the beer she first brought came in a regular sized can. Mistakes happen even in the best of places during a busy dinner service. Overall, we had a great dinner and the staff provided excellent service. In conclusion, I highly recommend this restaurant to anyone!
