LMCU Ballpark is home to the West Michigan Whitecaps. Started in 1994, this Midwest League team is a High-A Affiliate of the Detroit Tigers. “The Whitecaps were affiliated with the Oakland Athletics before they joined the Tigers’ farm system in 1997.” (Wikipedia)

Where is LMCU Ballpark?

LMCU Ballpark is located in Comstock Park, MI, approximately 7 miles north of downtown Grand Rapids. It sits just west of the Grand River. It’s just off US 131, at exit 91.

LMCU Ballpark is one of many sporting venues in Grand Rapids, Michigan. The Grand Rapids Griffins are the AHL affiliate of the Detroit Red Wings and play at Van Andel Arena. Van Andel Arena is also home to the Grand Rapids Gold basketball team, which is an affiliate of the Denver Nuggets.

Danielle O’Connor, Food & Beverage Operations Manager for the West Michigan White Caps, shared the following information with me.

The way we approach gluten free items on the menu, is whether the whole menu item can be considered gluten free. For example, our tortilla chips are gluten free. However, the cheese contains wheat, so we don’t list tortilla chips under gluten free because it’s not an item that can be purchased without the cheese. The gluten free menu focuses on items, while our full allergy menu focuses on ingredients.

Please Tell Me More about Your Gluten Free Buns

Gluten free buns are kept in their packaging until given to the fan, and handled with new gloves. Depending on the capability of the specific area, some are kept in a warmer and some are left out to thaw. We have our gluten free buns available at all locations where the item is served, not just specific concession stands.

What Steps Does LMCU Ballpark Take to Prevent Cross Contact?

We always ask guests to state that they need to order a gluten free items. We do keep our gluten free items in a separate spot, but we also want to make sure it’s fully being taken seriously and there’s no risk of miscommunication between food runners and cashier staff. Staff are always willing to change gloves and use separate utensils.

We cook hot dogs and bratwursts separately from our hamburger patties, which contain wheat. Quesadillas are made on a panini press and not the flat top, so there is no cross contact there.

What About Those With Peanut Allergies?

They offer nut free games in May! Danielle O’Connor shared the following with me.

One of the nut free games is one of our school day games. So many kids take field trips and I love how we at LMCU Ballpark can provide a safe environment for the kiddos to come and enjoy! Does LMCU Ballpark Have Gluten Free Beer?

Yes, LMCU Ballpark serves New Grist Gluten Free Beer. In addition, they also sell Long Drink Seltzer, Nutrl Vodka Seltzer, White Claw Seltzers, and hard cider.

*Can I Bring my Own Gluten Free Food To a Whitecaps Game?

The LMCU Ballpark Food Service Policy states “No outside food or beverage will be allowed LMCU Ballpark with the exception of pre-determined items agreed on by both parties.”

When I spoke with staff, they told me “We do allow fans to bring in their own food for medical, religious, and otherwise dietary needs.”

Where Should I Park If Going To a Whitecaps Game?

LMCU Ballpark offers parking on premises. They charge $10 per car. Their website states “Parking lots will open 2.5 hours prior to first pitch/ event start. All lots are first come first serve. (Fridays open 3.5 hours prior to first pitch).”

What Other Gluten Free Dining Options are Near LMCU Ballpark?

The ballpark is located in Comstock Park, and Amore Trattoria is only 4 miles west of the ballpark. Drive 4 miles to the east to to Belmont, MI and dine at Archival Brewing, which has a dedicated fryer!

Grand Rapids has many amazing gluten free dining options, including a few dedicated gluten free dining establishments. Papa Chops, which serves burgers, fries, pizza and more, is approximately 20 minutes from the ballpark. Fika, owned by the same people as Rise Authentic Baking, is 100% gluten free and vegan. It’s a 10 minute drive from the stadium.

Craving something sweet after the game? You’re only 5 miles away from Frosty Boy on Plainfield, which is one of the best places in Michigan to get GF ice cream. If you need dairy free ice cream, take a 20 minute drive to Tastefull Vegan Ice Cream. Everything there is gluten free and dairy free.

Why do you choose to offer gluten free items at 5 Lakes Brew Pub?

I have had Celiac for 20 years. When we joined our partners in this restaurant venture 5 years ago, gluten free was one aspect we wanted to add to the menu because I know first hand the difficulty of going out to eat and eating safely.

Is your menu at 5 Lakes Brew Pub also free from other allergens?

Our menu is only marked for gluten free. However we train managers to check ingredients for customers should other allergen concerns arise. For example, our managers are aware of the ingredients in our buns because they are questioned about them often.

What kind of oil do you use for frying/ cooking?

We use soybean oil.

Do you use gluten free wheat starch or oats in your gluten free meals?

No. If we need a starch for a gluten free entree, we use cornstarch/ We typically only use it in soups.

Do you have a separate gluten free menu at 5 Lakes Brew Pub?

No. We mark our regular menu with a symbol of the many items that can be ordered gluten free.

Do you have a separate prep area for gluten free dishes?

Yes. we do have a separate gluten free prep area! It is completely separated from the rest of the cooking line. Our gluten free area has its own fryer, grill, table, utensils, microwave, and food storage.

What training do your staff receive on preparing GF meals safely?

Only approved people are allowed to make gluten free food. Our Kitchen Manager makes sure they are well versed. Plus. I watch the area like a hawk to make sure they are following protocol.

Do you have picks or special plates that denote a GF meal?

Yes we use wooden gluten free picks

Do you have gluten free vegetarian or vegan options?

Yes, it is not noted on the menu, but our staff are always willing to help customers find something to meet their dietary needs.

Is there an upcharge for gluten free items, and is it noted on your menu?

We do have an up charge for Gluten Free buns and wraps, and it is noted on the menu

What’s your most popular gluten free menu item at 5 Lakes?

This is a hard question to answer. We offer a wide variety of gluten free dining options. I think people (myself included) like to be able to come to our restaurant and be able to order whatever they want. They’re all fantastic.

An appetizer…got it, burger…got it, variety of sandwiches…got it, fries…got it, pizza…got it, pasta…got it, dessert…got it. There are so many places you go to and your only choice is salad. We strive to offer so much more than a salad at 5 Lakes Brew Pub

Do you offer gluten free desserts?

Yes. We have a Lava Cake and freshly baked Chocolate Chip Cookies. We serve both with ice cream.

Do you offer gluten free beer/ hard cider/ wine?

We do not currently serve a gluten free beer. We do serve hard ciders (4-5 on tap at all times), canned cocktails, wine and a full bar.

Do you have patio seating? Are dogs allowed outside?

We do have a patio that seats 30 people. Dogs are not allowed.

We do Trivia on Tuesday Nights.

There is also a social district right outside our restaurant with outdoor tables, mini golf, etc. to hang out. It’s a lot of fun for the whole family. In addition, Tanger Outlets features Friday Night concerts in the summer months in the social district area.

Do you have parking on premises? Any tips on traveling to your business?

We are in Tanger Outlet, so there is plenty of mall parking. The best place to park if you are visiting our restaurant is to park in the southeast corner of the mall. We are located right there. 5 Lakes Brew Pub is approximately 30 minutes south of LMCU Ballpark, on 131.

Why do you choose to offer gluten free options?

We have several friends and family members with gluten intolerance, celiac, and allergens to gluten. Therefore we strived to create and offer items that would be safe for those that cannot have gluten.

Is your entire menu also free from any other allergens?

We are also a peanut free facility. We have a few items that contain other nuts, and have pistachios in house for a couple dishes.

What kind of oil do you use for frying/ cooking?

We use soy oil for our fryers and many other dishes. We also use olive oil for a few items on our menu.

Do you use gluten free wheat starch or oats in your gf meals?

No. We primarily use Bobs Red Mill 1-to-1 GF pastry flour. We use Udi’s for our Gluten Free sandwich buns and Gluten Free pizza dough.

Do you have a separate gluten free menu?

No, we don’t have a separate gluten free menu. Our regular menu(s) indicates gluten free options with a “GF” or “GFO” for items. This highlights dishes which are already gluten free or can easily be made gluten free with optional ingredients.

Do you have a separate prep area for gluten free dishes?

No, we do not. We clearly state on our menu that we are not a dedicated gluten free facility. Our staff take extra precautions when preparing food allergen items.

What training do your staff receive on preparing gluten free meals safely?

We require everyone in of our management team(s) to have serve safe Allergens and Food Manager training complete within 60 days of employment. Any additional training is trickle down from Callee and myself, which is brought to and taught to the rest of the staff. They are all very aware of the severity and need for these precautions.

Do you have picks or special plates that denote a GF meal?

Yes we use a “Allergen” pick to indicate any and all allergens.

Do you have gluten free vegetarian or vegan options?

Yes we have a few items that are or can be GF and vegitarian. We do not have a large enough demand to offer many or any vegan items. We can substitute items to make a vegan dish or two.

Is there an upcharge for gluten free items, and is it noted on your menu?

Yes we do as this is an extra cost for us. We only do this to cover these incurred costs. This is clearly denoted on our menu.

Our most popular gluten free dish here at Archival Brewing is our Gluten Free Fish and Chips.

Do you offer gluten free desserts?

Yes, we offer gluten free desserts, which we make in house. Pictured above is out gluten free Basque Cheesecake.

Do you offer gluten free beer/ hard cider/ wine? 

We do not offer gluten free beer. However, we make meads and ciders, which are naturally gluten free. We create them in house, in dedicate gluten free equipment, and serve them on dedicated gluten free taps. We also offer 6 local wines, as well as a full cocktail bar with liquors. (bourbon, vodka, rum, gin, agave spirit, and several others)

For those avoiding alcohol we also serve mocktails and Michigan Made Detroit City sodas.

Do you have patio seating at Archival Brewing? Are dogs allowed outside?

We have a heated deck as well as a large beer garden with seating, yard games, and fire pits. Archival Brewing welcomes friendly dogs to all of our outdoor areas. We even offer a dog burger on our menu for our furry guests! Plus we always have treats available for them.

What unique events do you have at your restaurant?

We host weekly trivia on Thursdays, and we have live music every Friday throughout the year. In addition, we offer live music on Thursdays & Saturdays in the beer garden during the warmer months.

We offer a $15 burger and beer/shot & pop lunch combo. We also have Brunch on Sundays. That includes a Bloody Mary and mimosa bar, a Brunch combo for 2 people ($60 for any two brunch items and a bottle of sparkling wine that you can BYO mimosa).

We also host private events. In 2026, Revue Magazine nominated Archival Brewing for the best small venue in their Best of the West contest. We host anything from large groups to weddings, graduation open house, corporate events, holiday parties…etc. We also offer (new this upcoming winter) igloos in our beer garden with full service of food and drinks.

Who Owns Vigilant Sweets in Grand Rapids, MI?

Like many small baking businesses in Michigan, Vigilant Sweets is a woman owned company. After living in North Carolina for 12 years and working in early childhood education, she decided to follow her passion for baking and trained as a pastry chef and cake decorator.

After relocating back to Michigan, I started my own home bakery. Like many small business owners, she also works outside of her business. This allows her to keep building Vigilant Sweets with the goal of turning it into a full-time career.

She chose the name “Vigilant Sweets” because of how vigilant she in keeping her family and customers safe from ingredients they can’t eat. In addition, her name Sahirah actually means “vigilant.” Which I think is pretty darn cool!

What inspired you to become a baker? Why the focus on gluten-free?

When my youngest was born 17 years ago, she was very sick. Allergy testing revealed she had 15 food allergies, including wheat/gluten. She’s allergic to wheat and severely intolerant to gluten. Later I was also diagnosed with non-celiac gluten intolerance.

Baking has always been something I loved, and that diagnosis was heartbreaking at first. However, it also gave me purpose. I wanted to create desserts that were safe for our family without sacrificing taste. My goal is to create treats that are just as rich and delicious as the gluten containing versions.

Are Vigilant Sweets baked goods free from other allergens?

Yes. In addition to being gluten free, my baked goods are also 100% dairy free, oat free, and made without nuts. Egg-free/vegan options are available as well, depending on the item.

What steps do you take to ensure that your products are gluten-free?

First, my home baking kitchen is 100% gluten-free, with no gluten containing ingredients used in the home or baking area.

In addition, I only use certified gluten-free ingredients. If a label is ever unclear or questionable, I contact the company directly for clarification before using the product

• Do you use oats or oat milk in your baked goods?
  • I don’t use oats or oat milk because many people with celiac disease or gluten intolerance can’t tolerate them. I’m one of those people and can’t tolerate oats, even purity protocol oats, so my baked goods are completely oat free.
• Do you use certified gluten free wheat starch in any of your baked goods?
  • No. I don’t use certified gluten free wheat starch because my daughter and I both have a wheat allergy. I bake with gluten free ingredients that are completely wheat free.

Can you share a story of a customer who’s been greatly impacted by your business? 

A customer shared that she and her daughter have an autoimmune condition and follow a gluten-free diet to help manage symptoms.

She explained that her daughter will only eat my baked goods and can always tell if a gluten-free product comes from another company. Moments like that mean so much to me. It’s bigger than dessert -. It’s knowing I’m providing something they feel safe eating and genuinely enjoy.

What would you like consumers to know about Vigilant Sweets?

I started this business for families with allergies and dietary restrictions who miss being able to enjoy the same desserts as everyone else. I always want my treats to feel safe and inclusive but also rich, flavorful, and actually delicious. I love being able to give people dessert options they can trust and genuinely look forward to.

How Do We Place a Special Order?

Vigilant Sweets does not have a storefront. I prepare all of my gluten free baked goods in my home. People can order through my website for pickup at a designated location, and I also sell at different markets and pop-ups during the spring and summer. I post all upcoming dates and locations on her social media.

How Did You Hear About Hop Hog?

I learned about Hop Hog in a Grand Rapids Area Facebook group many years ago. I finally had the opportunity to visit their Lowell location in the summer of 2024. Before dining, I had the opportunity to speak with owner David Harvey and head chegg Sheila Wilder. Below are some of their answers to FAQ about their menu and gluten free food prep.

Why do you choose to offer gluten free items? 

Owner David Harvey has a long culinary history. He worked in restaurants such as Johnny Carino’s, Gilmore Collection restaurants, as well as The Winchester & Donkey Taqueria. Throughout the years, people would frequently ask questions about gluten free and food allergy options.

He took it up on himself to listen and learn. He even made a study guide for the staff to be able to have more knowledge. It was very comprehensive and it took a lot of work to maintain as our menu changed wildly every season.

When David decided it was time to open his own restaurant, he knew from day one that he wanted to make gluten free and food allergy options the standard, not the exception. David told me “Running a restaurants is hard, and doing Gluten Free the right way is even harder. But it is so immensely rewarding.”

Is your menu also free from any other allergens? I.e, nut free, dairy free?

Our menu features BBQ, burgers, chicken tenders and fries. We also offer pasta. Our kitchens contain no peanuts, tree nuts or shellfish. No egg containing foods are cooked in our fryers.

What kind of oil do you use for frying/cooking at Hop Hog?

We choose not to use soy oil because of food allergies. We fry our food in sunflower oil, which has a hi-olec, which means it sheens off so the items do not stay greasy or get soggy. Sunflower oil also has a longer fry life, meaning with proper cleaning it will last longer.

Do you have a separate gluten free menu? 

We do in fact have a separate gluten friendly menu. However, our regular menu also highlights “gluten friendly” items. We use the term “gluten friendly” to distinguish ourselves from a completely 100% gluten free restaurant, such as Papa Chops. We know people may not necessarily like that phrase, but we think that it’s important to make that distinction.

What steps do you take to prevent cross contact in the kitchen?

We start by making the majority of our menu without gluten containing ingredients. The utensils that we use on the expo side of the line to put the sides on the plates are ALWAYS gluten free. When the server denotes that the gluten friendly items are an ALLERGY, the kitchen knows to be very careful.

Staff use all new items for preparing the food. One of the other things we do is we have a “bun warmer” that is used for the gluten items to toast the buns. When a gluten free order comes in, we toast gluten free buns in the oven.

Does Hop Hog Have a Dedicated gluten free fryer? 

All three fryers at both the Greenville and Lowell location are completely gluten free. That means anything deep fried food on our menu is totally gluten free. Neither location even has all purpose flour in their kitchen anymore.

Do you have picks or special plates that denote a GF meal?

What’s your most popular gluten free menu item at Hop Hog?

This is hard to pinpoint, since all of our smoked meats are gluten free. I’d say the favorite options among our gluten free clientele are the fish and chips, chicken tenders, nashville hot chicken sandwich or the fried pickles. Most gluten free people love the fact that they can have anything that’s deep fried. Knowing they can have fried chicken (tenders or nashville sandwich), just blows them out of the water.

Do you offer gluten free desserts?

Yes! We’ve recreated our famous carrot cake to be entirely gluten free.

Do you offer gluten free beer/ hard cider/ wine? 

We offer locally made Painted Hard Turtle Cider. If you haven’t had a chance to visit their orchards, plan to leave some time and visit them in person! We also plan to serve Groundbreaker Brewing beer. In addition, we also serve wine by the glass, and Michigan made Gypsy Vodka.

Do You Offer Any Weekly Specials?

On Mondays we offer Burger & Beer Night for $10. Unfortunately, we don’t have gluten friendly beer for this deal. We do offer Burger & Soda for $9, Burger & Wine for $11 and Burger & Cider for $12. (Burgers also come with house made chips.) However please note that there is an additional charge for the Udi’s gluten free bun.

We also offer a lunch menu. Our Lightning Lunch Menu is designed to be size appropriate and quick. In includes more than 10 items for $10 and under, Sun-Fri from 11am-4pm.

While we do offer family meal deals, we do not currently have a gluten free version.

Does Hop Hog Offer Catering?

We offer catering, and the majority of our catering menu is prepared gluten friendly.

Do you have patio seating? Are dogs allowed outside? 

We have a patio at each location. The Greenville location has a very large greenspace that includes an edible garden. Last year we grew tomatoes, zucchini, melons, jalapenos, rosemary, mint & more. We have full permission from the health department to use this produce at the Greenville location.

Lowell has a smaller but very charming patio. It did not get much use in 2024 as we were still getting used to normal dining but will certainly be used in 2025. They are both pet friendly to all nice and friendly doggos.

What unique events do you have at your restaurant? Karaoke? Trivia? Concerts?

The Greenville location has live music every Friday & Saturday evening from 6-9 pm. The Greenville location also has Keno & Pull Tabs. Keep an eye on the events tab on our Greenville Facebook page for future activities.

What additional things would you like my followers to know about your business?

The Lowell location is within the Social District, which allows you to take alcoholic beverages to go. Both restaurants brew their own beer on premise. While none of those beers are GF, we do offer GF beer from Groundbreaker.

The main thing that I would want your followers to understand is we are committed to offering an ever expanding gluten free menu. That includes reworking existing menu items to make them gluten friendly. Our baked beans is our latest example of that.

All menu development focuses on not just “good enough for gluten free.” We want our entire menu to be excellent, regardless of ingredients. For too long, people with Celiac have had to deal with substandard products with a hefty price tag. We want to do better than that.

100% Completely, Absolutely Gluten Free

Follow a gluten free diet? You can eat everything on the menu at Papa Chops Eatery. Owner Aaron Muller, lives with Celiac Disease. After struggling to find safe dining options for himself, he decided to roll up his sleeves and create a restaurant without wheat, rye or barley.

However, Muller’s background was in printing and commercial real estate. Therefore, he decided to attend culinary school at the Secchia Institute for Culinary Studies at Grand Rapids Community College. There he met Thaddeus Whorley, who functions as the restaurant’s executive chef. Together, they created the menu for which they’re famous.

What’s On the Gluten Free Menu at Papa Chops Eatery?

Papa Chops Eatery is your typical burger joint, just free from gluten. Muller wanted to offer all the things he missed when he was diagnosed. This includes simple burgers, French fries, and classic American fare. The menu also offers pizza, salads, even a Bluegill sandwich! Soon, they plan to offer wraps, and continue to experiment with menu items.

When I visited with my husband and my niece, we all intentionally ordered different items to try. My (non gf) husband ordered the fried bluegill sandwich, which he thoroughly enjoyed. I ordered the fried chicken sandwich, with onion rings. My (non gf) niece ordered the BLT, and we all shared an order of fried pickles. 

Does Papa Chops Offer Gluten Free Desserts? 

When we visited, baked goods from both Kind Crumbs and Bliss Bakery (a grain & sugar free business) were both available for purchase. I asked Aaron Muller about this business partnership, and he stated he hopes to rotate between some of the local bakeries. In the future he hopes to showcase products from Rise Authentic Baking to showcase some of the amazing products local kitchens are making.

Does Papa Chops Accommodate Additional Allergens? Which Oil Do They Use for Frying? 

Delicious gluten free options is Muller’s primary goal. However, in the future he hopes to make his restaurant as food allergy conscious as possible. For instance, no peanuts are used in his kitchen, and he has attempted to minimize corn and dairy. Currently, the restaurant uses canola oil in their fryers. 

Does Papa Chops Allow Outside Food in Their Restaurant? 

Absolutely not. Muller desires to create a 100% safe gluten free atmosphere for his customers. Staff cannot bring gluten containing items in the kitchen, either. Furthermore, vendors and delivery drivers must wash their hands before entering his establishing. Muller takes the risk of cross contact very seriously. Outside seating is available.

Does Papa Chops Eatery Have a Liquor License? 

At this time, they do not. While Aaron Muller would like to pursue one in the future, it’s not currently an expense he wants to take on. That being said, he’s also not sure how the presence of alcohol will impact the atmosphere of his restaurant. In the meantime, Grand Rapids is home to Michigan’s first dedicated gluten free brewery, Brewery Nyx. Visit them at their taproom, and find their beer in cans at several Grand Rapids grocery stores. 

Does Papa Chops Eatery Deliver?

Great question. First, Papa Chops does offer online ordering. However, delivery is a bit tricky. He feels the large delivery companies (Uber Eats, Door Dash, GrubHub) don’t take care to prevent cross contact with orders from other businesses. That concerns Muller, and he’s looking into other, safer options. 

What’s Next for Papa Chops Eatery? 

I asked owner Aaron Muller what new things he hopes to add to the menu. “I plan on exploring all kinds of food options, from different walks of life and bringing them to Grand Rapids. Our wraps are the next menu item we will be releasing. Finding a good gluten free tortilla wrap is harder than it might seem. Many have a “gummy” aftertaste, or are too brittle to actually wrap anything in. But I’ve found a winner and I’m excited to introduce it soon!”

A Gluten Free Gathering

In 2019, I joined others from the Grand Rapids area at Amore Trattoria Italiana. After hearing friends gush about it, I pounced at the chance to go when invited. We gathered around a table, and prepared for a lunch feast. The restaurant recently started opening for lunch, from 11:30 am to 1:30 pm. Waitstaff faithfully answered every concern or question we tossed their way.

Gluten Free Mangia, Mangia!

While Amore Trattoria Italiana offers a gluten free menu, we ordered off the regular lunch menu (pranzo) menu, which notates gluten free options. While we perused the menu, Chef Jenna Arcidiacono graciously sent fresh, hot gluten free bread to our table. After some discussion, we put in our orders and got to chatting.

Our special lunch gathering included people newly diagnosed with Celiac Disease, as well as long time experts. Conversation included everything from oats, best resources for gluten free recipes, and just every day life. While we waited for our food, Chef Jenna sent out a simple pizza for us to snack on.

Our waitress was a great sport, holding it near the window so the natural light could show off it’s beauty! Amore Trattoria Italiana uses a dedicated pizza oven for gluten free pizza and other items, and use a dedicated gluten free pizza cutter  for their GF pizzas.

Why Does Amore Trattoria Offer Gluten Free Items?

I started my meal with a delicious Spinach and Smoked Gorgonzola Soup. Rich and creamy, and incredibly flavorful. I asked Chef Jenna why she chose to offer gluten free options at Amore Trattoria Italiana. She said “I have loads of friends with gluten allergies/intolerances I wanted to accommodate.”

“I love feeding people and to me that means that everyone who walks through my doors at Amore Trattoria Italiana, regardless of food restrictions, should get a satisfying meal. Since I’m a vegetarian, I got tired of salads and boring items at restaurants. Therefore, I understand how gluten free eaters might feel the same!”

How Does Amore Trattoria Differentiate Gluten Free Orders? 

For my main dish, I ordered the Pasta alla Vodka. I asked Chef Jenna about the intentional steps they take in preparing their gluten free pasta. They boil separate, clean water for all of their gluten free pasta.

When it comes to serving the customer, Amore Trattoria Italiana uses colored, fiestaware bowls for all gluten free meals.  It gives the server a visual reminder that this is a specially prepared meal. By the way, all Amore staff took allergen safety courses. Impressive, as the state of Michigan only requires one person to be trained!

Does Amore Trattoria Serve Gluten Free Dessert?

As mentioned above, Chef Jenna loves to impress. Given enough advance notice, she willing prepares special dishes. For this special gluten free meet up, Chef Jenna went above and beyond by making Gluten Free Tiramisu.

She used Schar ladyfingers, and it tasted better than I could ever imagine. I told her Chef Jenna I had been planning to make it at home, but there’s no way I could come close to creating something as delicious as hers!

Chef Jenna really is a rock star of a chef, while remaining incredibly personable and humble. Named one of 50 most influential women in West Michigan, she wants to create a scholarship fund for young women to grow their culinary skills.

Beyond that, she was a guest chef on Food Network’s Guy’s Grocery Games. The episode was called Flavortown Fright Night, and aired around Halloween. As always, she sported her signature pink hairdo, and represented Michigan well.  Chef Jenna shared, “I loved my time on the Food Network show. Guy, his staff and the judges were all amazing.”

One can aptly describe the gluten-free dining scene in Grand Rapids as “phenomenal.” Seriously, I start salivating when I think of all the great restaurants I’ve tried there. Recently, the owners of Herb and Fire Pizzeria invited to me to try their build – your – own pizza joint. After asking extensive questions about the steps they take to prevent cross -contact, we loaded up the van and headed east.

At first glance, you may think “BYO” means “bring your own.” However, in this case it means “Build Your Own.” Haven’t been to a place like this? Think of it like Subway, except you pick your crust and toppings, and then they bake it. While the “build your own” pizza idea isn’t new, Herb and Fire Pizzeria holds one unique factor. Grand Rapids locals own this joint. No massive national corporate structure, but organized and run by the Uccello’s family. When I visited Herb and Fire Pizzeria, an actual Uccello’s family member managed the restaurant and made my pizza. Love that level of accessibility to management.

So let’s talk gluten-free pizza process, shall we? At Herb and Fire Pizzeria, they use Udi’s gluten-free and dairy-free pizza crust. (While dairy-free, it is not vegan, as it contains egg whites.) They will gladly retrieve fresh sauce and toppings from the back, if you ask. (I did suggest to management that they may want to do that as standard practice when they are alerted that a customer has Celiac Disease. Not every one will think – or feel comfortable- to ask for that accommodation.) Workers change gloves prior to building your pizza, and place it on a smaller screen that is not used for regular pizzas. It is baked in a smaller conveyor oven, separate from the wood fired oven for their regular pizzas.

You can create your own pizza for $9.95, or order one of their signature pizzas if your creativity eludes you. (Gluten-free pizzas do incur a $2 upcharge.) My husband and I joined two friends, who belong to the Grand Rapids area celiac disease Facebook group. (The group used to meet in person, but no longer does.) There were so many options, we chose to go with some of the signature pizzas. My husband and Emma both ordered the Vegetale. This pizzas comes sauced with pesto and topped with “charred artichokes, grilled broccoli, roasted tomatoes, Sicilian olives, grilled red onion, mozzarella, gorgonzola and basil.”

I ordered the Vestito De Blanco. Topped with a white pizza sauce that staff assured me contained no gluten, this pizza comes loaded with with some of my favorite things. On top of the sauce, one finds “grilled zucchini, applewood smoked bacon, garlic wilted spinach, roasted tomatoes, mozzarella and Romano.” It tasted pretty great. I told myself I didn’t need to eat a whole pizza. However after a long meeting at camp and having not eaten anything in about 6 hours, that pizza didn’t stand a chance to my level of hunger.

We all agreed it was a great option to have. Located near Frederik Meijer Gardens and Celebration Cinemas, it becomes a place where one with Celiac Disease can eat out with other friends in a fast casual atmosphere. Especially on Thursdays, when Herb and Fire Pizzeria offers $2 off their gluten-free and vegan pizzas. (They offer Daiya cheese for those wanting a dairy-free pizza.) Each day they boast a happy hour from 8 pm – close. Deals include $2 lemonades, half off (non-gf) drafts, $3 cheesy breadsticks and $5 1-topping pizzas. Every Wednesday, they host trivia night and offer discounts for medical personnel (with scrubs or ID.) Safe to say, Herb and Fire Pizzeria is a pretty happening place.

One other thing of note. Herb and Fire Pizzeria has some seriously unique beverages. They infuse their Herb & Berries Lemonade with blackberries, basil and mint. The Herb & Fire Lemonade includes notes of strawberries, basil and “a hint of chili peppers.” While they were not my proverbial “cup of tea,” they are creative! They also have Uncle John’s Hard Cider and White Claw Hard Seltzer in cans. So while we may not be able to enjoy the Foster’s or Bell’s they may have on tap that night, you can still order an adult beverage with your pizza!

Overall, our pizza was good. Christy and Emma, who are highly sensitive to gluten, enjoyed their meal and experienced no after effects. I was gassy after eating mine. However, that may have been due more to the hefty dose of pureed beans I had the night before instead of this pizza. I watched them closely every single step through preparation, and they followed all the right protocols. For the highly reasonable price and the ability to join friends on a fun night out, I’d definitely try it again.

Rise Authentic Baking (formerly Rise Grand Rapids) started in a small church kitchen. Since then, they expanded to their own store front near John Ball Zoo. While they offer a selection of baked goods daily, they also take special orders for wedding and birthday cakes. I highly recommend the fritters. They are SO good.

While I definitely come for the food, the atmosphere of their location keeps me coming back, too. As their website states, “We believe that food brings people together, and we’re grateful to have a spot where folks can gather in a space where they feel welcome and valued.” Read more about this great business in owner Nick VanLiere’s own words.

1. What inspired you to become a baker? Why the focus on gluten-free?

I became a vegan in high school. Therefore,  I was in charge of making all of my own meals. I enjoyed the challenge of vegan baking and experimenting with different substitutes. Some dear friends of mine must eat gluten-free, and they challenged me to try baking without gluten. I really enjoyed the challenge, and found great success in baking gluten free for other people. Ever since I have continued to experiment with creating new gluten-free recipes.

2. Are there other highlights of your products? Dairy-free, egg-free, nut-free etc?

All of our baked goods are gluten-free, dairy free, egg free, soy-free. Our baked goods are also free from artificial dyes and colors. We have the ability to cater to many different allergies and can make most items soy-free upon request.

3. What steps do you take to insure that your products are truly gluten-free?

We understand the importance of safe gluten free food. We use only gluten free flours and ingredients in our facility.

4. Can you share a story of a customer who’s been greatly impacted Rise?

Many customers comments come to mind. One story that sticks out was a 25-year-old customer who had not had a doughnut ever in his life due to a dairy allergy. Our business is all about creating space for everyone to enjoy celebration, no matter their allergy or dietary preference. We are up for the challenge when customers come to us with special orders that need to accommodate multiple allergies/preferences.

Our products are sold at Bridge St. Market, Kingma’s Market, Harvest Health Foods and South East Market. We also sell our products at various coffee shops in the greater Grand Rapids area. This includes Squibb Coffee & Wine Bar, Outside Coffee Co, and Bodhi Tree Juice Co. In the past we’ve done waffle pop-ups at Roots Brew Shop, and donut pop ups at local cider mills. In Spring of 2025, Rise will open their second location, FIKA. This location will function more like a restaurant. Everything will still be gluten free and plant based. Where is Grand Rapids?

For those unfamiliar with the city, Grand Rapids is located about 35 miles east of Lake Michigan. The Grand River flows through the downtown area, which naturally separates it into east and west sections. Interstate 196 and US 131 also intersect downtown, which separate the city into north and south sections. Grand Rapids is north of Kalamazoo, east of Muskegon and west of Lansing. Grand Rapids is home to Gerald R Ford International airport.

What is Grand Rapids Famous For?

Grand Rapids is popular for so many reasons. Home to furniture manufacturing and Meijer stores, it has a vibrant economy and is also rich in arts and culture. Every year people visit the ArtPrize competition and LaughFest, in honor of the late Gilda Radner.

What Attractions Should I Visit?

With so many great places, it’s hard to pick a favorite. I always recommend John Ball Zoo, with or without kids. Frederik Meijer Gardens on East Beltline is also a “must visit” location. Both the indoor and outside attractions are amazing. The Grand Rapids Public Museum is one of my favorites, and I still need to visit the Gerald R Ford Presidential Museum. Don’t miss the Grand Rapids Childrens’s Museum, also located downtown!

Love baseball? Catch a West Michigan White Caps minor league game. They offer gluten free concessions, too! Visit Van Andel Arena for Griffins hockey, and music concerts. Make sure to add Fulton Street Farmers Market and the Downtown Market to your itinerary, also. I love Bridge Street Market and Harvest Health for delicious gluten free groceries. Why Does Grand Rapids Offer So Many Gluten Free Options?

At one point, there was a strong and active Celiac Disease Support Group in the area. They helped educate physicians, hospital systems, grocery stores and restaurants on gluten free dining. Support group leaders visited restaurants to inspect their facilities and teach them how to minimize the risk of cross contact. The city also had a gluten free food fair.

While the group and the fair no longer exist, the prelimary work they did made a lasting impact. Area restaurants realized that the more they accommodated those with dining restrictions, the more people would frequent their business. In addition, as awareness of Celiac Disease continues to grow, so do available dining options.

Where Should I Eat?

I developed the list below with the help from those in the former support group. In full disclosure, I have not eaten at all of these locations. I placed an asterisk at restaurants where I have personally dined. In addition, please remember that food preparation methods can change, so ALWAYS ask questions before ordering. This list is not exhaustive, but compiled with the help of those who know to ask questions about cross contact, including shared fryers, etc.

Another comment in regards to “where.” I grew up in Lansing, and not Grand Rapids. In assigning eateries to areas, I started with the downtown area, and grouped them into areas, due to their geographic location to the downtown area.
