<p class="wp-block-paragraph">While there are many gluten free English Muffins on the market, I prefer those from Canyon Bakehouse. They have an &#8220;<a href="https://canyonglutenfree.com/products/original-english-muffin">original recipe</a>&#8221; as well as a &#8220;<a href="https://canyonglutenfree.com/products/gluten-free-honey-whole-grain-english-muffins">honey whole grain</a>&#8221; option. The whole grain option comes in their Stay Fresh packaging. They are also dairy, soy and nut free. (They do contain eggs.) </p>

<h2 class="wp-block-heading">How To Make Eggs with Higher Protein</h2>



<p class="wp-block-paragraph">For this recipe, we&#8217;re basically making scrambled eggs, but baking it. To add some extra protein, we&#8217;re adding cottage cheese and shredded cheese into our &#8220;scrambled&#8221; eggs. One third cup of cottage cheese adds approximately 9 grams of protein. It also makes the eggs fluffier and creamier. I prefer Daisy or Good Culture cottage cheese. </p>

<h2 class="wp-block-heading">Baking Your Eggs VS Cooking Them Individually</h2>



<p class="wp-block-paragraph">There are many ways to make eggs for a gluten free bacon, egg and cheese breakfast sandwich. You could cook the eggs individually. But baking one whole pan of eggs only takes 10 minutes. Plus, you can walk away from them will preparing other things for breakfast. </p>

<p class="wp-block-paragraph">My short answer is yes. I can&#8217;t begin to tell you how many times I use my quarter sheet pan. In a household of 2 people, I&#8217;ve used it to make <a href="https://miglutenfreegal.com/easy-gluten-free-chocolate-chip-blondies/" data-type="post" data-id="5385">gluten free chocolate chip blondies</a>, <a href="https://miglutenfreegal.com/gluten-free-biscuits/">gluten free biscuits</a>, <a href="https://miglutenfreegal.com/gluten-free-pizza-crust-for-one-yeast-free/">gluten free pizza for one</a>, and so much more. </p>



<p class="wp-block-paragraph">I bought my quarter sheet baking pans at Gordon Food Service. I don&#8217;t even remember what company made them, but I&#8217;ve had them for years. You can find them on Amazon (*affiliate) from <a href="https://link.amazon/A0gQaDRQM">Nordic Ware</a>, <a href="https://link.amazon/B0iMULhev">USA Pan</a>, and <a href="https://link.amazon/B08P6lv45">Made In Cookware</a>. <h2 class="wp-block-heading">What is Canadian Bacon? Pork Free Options?</h2>



<p class="wp-block-paragraph">Canadian Bacon isn&#8217;t like the strips of bacon most of us think about. As per <a href="https://www.jonesdairyfarm.com/blog/what-is-canadian-bacon/">Jones Dairy Farm</a>, it is &#8220;unlike the conventional bacon derived from the pig’s fattier belly, Canadian bacon comes from the center of the pig’s back – the area housing the much leaner pork loin.&#8221; It tastes similar to ham. P.S. Jones Dairy Farm is certified gluten free. </p>



<p class="wp-block-paragraph">If you can&#8217;t eat pork, like my husband, I have a great recipe for <a href="https://miglutenfreegal.com/gluten-free-chicken-breakfast-sausage/" data-type="post" data-id="2973">Chicken Sausage breakfast patties</a>. Applegate makes <a href="https://applegate.com/products/natural-chicken-and-maple-breakfast-sausage-patties">Chicken and Maple Sausage Patties</a>, as does <a href="https://amylufoods.com/breakfast-patties-2/no-antibiotics/maple-chicken-breakfast-patties-8oz-2">Amy Lu</a>. </p>

<p class="wp-block-paragraph">Can you make these Gluten Free Bacon, Egg and Cheese Breakfast Sandwiches egg free? Please know that Canyon Bakehouse English Muffins contain egg. <a href="https://www.ju.st/eat/just-egg">Just Egg</a> makes a liquid egg alternative. </p>



<p class="wp-block-paragraph">Three tablespoons of Just Egg liquid equals 1 egg. I&#8217;d use 1 1/4 cups of liquid egg for this recipe. In addition, Just Egg makes <a href="https://www.ju.st/eat/just-egg-folded">premade egg patties</a>.</p>



<p class="wp-block-paragraph">Can you make these gluten free bacon, egg and cheese breakfast sandwiches dairy free? Yes, I think an alternative milk should work just fine. I don&#8217;t see a dairy free cottage cheese online. You could substitute it with <a href="https://kite-hill.com/collections/ricotta-alternative">Kite Hill dairy free ricotta cheese</a>. </p>



<p class="wp-block-paragraph">You would need dairy free shredded cheese for the batter, and slices of dairy free cheese to build the gluten free breakfast sandwich. I know <a href="https://www.violife.com/en-us/products/dairy-free-cheese-shreds">Violife </a>is popular with many who follow a dairy free diet.  </p>

<h2 class="wp-block-heading">Can I Freeze These Breakfast Sandwiches for Later?</h2>



<p class="wp-block-paragraph">Yes you can freeze these gluten free bacon, egg and cheese breakfast sandwiches for later. This makes them a quick grab and go breakfast item for busy work or school mornings. </p>



<p class="wp-block-paragraph">If you&#8217;re prepping for later, wrap each individual gluten-free breakfast sandwich, minus condiments or cheese, in foil. Then, place in a gallon ziploc bag and stick in the freezer.</p>



<p class="wp-block-paragraph">They can later be unwrapped, cheese added, and warmed in the microwave for 30 seconds. I prefer to warm them in the foil for 15 minutes in a 350 degree oven.</p>

(blender is preferred to break up the clumps of cottage cheese.) Mix together. </span></div></li><li id="wprm-recipe-90282-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Pour egg batter into a parchment lined quarter sheet pan. (I recommend crumpling it first and then straightening it out to make it easier to get into the corners of the pan. </span></div></li><li id="wprm-recipe-90282-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Bake at 350° for 10-13 minutes. </span></div></li><li id="wprm-recipe-90282-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Remove pan from oven and allow the baked egg to cool for up to 5 minutes before cutting. You can cut the baked egg into squares, or use a circular cookie cutter to make the baked egg the same shape as the English Muffin. </span></div></li><li id="wprm-recipe-90282-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Assemble your breakfast sandwich using the toasted muffin, a section of baked egg, a slice of cheese and 2 slices of Canadian Bacon. Then, place in a gallon ziploc bag and stick in the freezer. </span><div class="wprm-spacer"></div><span style="display: block;">They can later be unwrapped, cheese added, and warmed in the microwave for 30 seconds. I prefer to warm them in the foil for 15 minutes in a 350 degree oven. </span></div></li></ul></div></div>

<h2 class="wp-block-heading">Waffle Makers &#8211; Not a One Hit Wonder</h2>



<p class="wp-block-paragraph">I love to use my waffle maker. Contrary to popular thought, waffle makers are not one hit wonders. I make all SORTS of things in mine. So much so that I recently taught a cooking demo at the Indianapolis GFFA Fest. The title? &#8220;Waffles &#8211; Beyond Breakfast and Syrup.&#8221; </p>



<p class="wp-block-paragraph">I appreciate those who attended, as it was my first cooking demo. Lots of lessons learned, both for attendees and myself! I intended the highlight to be my infamous <a title="Gluten-Free Corn Dog Waffles" href="https://miglutenfreegal.com/gluten-free-corn-dog-waffles/" target="_blank" rel="noopener">gluten free corn dog waffles</a>. However the real star became the waffled chicken in this Waffled Chicken and Waffle Sandwich.</p>

<h2 class="wp-block-heading">The &#8220;Waffled Chicken&#8221;  = Moist &amp; Crispy</h2>



<p class="wp-block-paragraph">I tried this waffled chicken for the first time just before my presentation. I snagged the idea from the king of &#8220;waffling,&#8221; Daniel Shumski. His book &#8220;<a href="https://willitwaffle.com/" target="_blank" rel="nofollow noopener">Will It Waffle</a>&#8221; truly opens the imagination to all things possible via a waffle maker. (I downloaded the <a href="https://amzn.to/2CyIGxX" target="_blank" rel="nofollow noopener">Kindle version on Amazon</a> for only $1.99!)  </p>



<p class="wp-block-paragraph">Friends, I tell you the truth. I never want to cook chicken any other way. It cooks quickly and stays moist and CRISP! Truly the shining star in this Waffled Chicken and Waffle Sandwich. I used Aleia&#8217;s Gluten Free Italian Breadcrumbs for this, and I think it made all the difference. (Remember my <a title="Gluten Free Baked Mozzarella Cheese Sticks" href="https://miglutenfreegal.com/gluten-free-baked-mozzarella-cheese-sticks/" target="_blank" rel="noopener">cheese sticks</a>? Yep, same brand.)</p>



<h2 class="wp-block-heading">What Kind Of Waffle Maker Do You Use?</h2>



<p class="wp-block-paragraph">When I did this cooking demonstration in Indianapolis, I had 4 waffle makers at my disposal. I know what you&#8217;re thinking. &#8220;She owns four waffle makers?!&#8221; Don&#8217;t be silly. I own three, one was my dad&#8217;s, ha ha ha. </p>



<p class="wp-block-paragraph">While I own <a href="https://amzn.to/2IIGyDO" target="_blank" rel="nofollow noopener">this Presto Belgian waffle maker</a>, I feel the wells stand too deep to evenly cook the chicken. Therefore I bought this <a href="https://amzn.to/2IJ2ZJ3" target="_blank" rel="nofollow noopener">&#8220;standard&#8221; (or American) Cuisinart Waffle maker</a>. It may just be my new best friend. (My third waffle maker fits in the palm of my hand. Available for $10 at Target, Bed Bath and Beyond, and <a href="https://amzn.to/2RBAAcc" target="_blank" rel="nofollow noopener">Amazon</a>. Great for dessert waffles!)</p>

<h2 class="wp-block-heading">How To Serve Gluten Free Chicken and Waffles</h2>



<p class="wp-block-paragraph">I drizzled a homemade sauce on my Waffled Chicken and Waffle Sandwich, trying to recreate a sandwich I tried at Noble Restaurant in greater Grand Rapids. It comes with the most amazing maple aioli. However, we don&#8217;t keep mayonnaise in our house. </p>



<p class="wp-block-paragraph">Therefore I used Greek yogurt. When we had leftovers for dinner, ranch dressing also tasted great on it. These basic waffles really do make great &#8220;bread&#8221; for any sandwich. Sliced lunchmeat, egg salad, the sky&#8217;s the limit. Totally portable and perfect for lunches too! (Which now makes me want to waffle a grilled cheese. Be right back&#8230;&#8230;)</p>

Then dip both sides in egg. Make sure excess has dripped off. Then, coat each side with bread crumbs. Place coated chicken on plate while coating the remaining breast pieces.&nbsp;</div></li><li id="wprm-recipe-13000-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">After waffles are finished cooking, cook the breaded chicken. I cook mine in my Cuisinart Standard Waffle Maker, on level 3, for 3 minutes. The chicken will not need to be flipped, as the waffle maker is cooking it from both sides.&nbsp;</div></li><li id="wprm-recipe-13000-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">To build sandwich, place one piece of cooked, breaded chicken on half of waffle. Top with spinach or desired toppings (such as the sauce above), then top with remaining half of waffle. Cut down the center and enjoy!&nbsp;</div></li></ul></div></div>

<h2 class="wp-block-heading">What To Do With Thanksgiving Leftovers?</h2>



<p class="wp-block-paragraph">So when Friday rolls around and you&#8217;re waking up from your Thanksgiving Day coma, you have a question to ask yourself. What are you going to DO with all of those leftovers? </p>



<p class="wp-block-paragraph">Sandwiches made from waffled gluten-free stuffing, that&#8217;s what. Forget your traditional open faced turkey sandwich covered in gravy. This &#8220;wafflewich&#8221; made with waffled gluten free stuffing turns the culinary dial to 11. Be prepared to have your mind blown.</p>

<h2 class="wp-block-heading">How to Waffle Stuffing</h2>



<p class="wp-block-paragraph">It&#8217;s very simple actually to make waffled gluten free stuffing. Of course, I only know the answer because I &#8220;googled&#8221; it myself and did some research. It seems the ratio is 4 cups of stuffing to 2 eggs. (If you have 3 cups of stuffing, use one egg plus one egg white.) </p>



<p class="wp-block-paragraph">I added some water, as my leftover stuffing was a bit dry. Don&#8217;t add too much though, as it won&#8217;t cook correctly if you do. I found that a cooking time of 10 minutes allowed for the outside crispness that I desired. In the Dash Mini Waffle maker, it only took 5 minutes.</p>

<h2 class="wp-block-heading">How To Make a Waffled Thanksgiving Sandwich</h2>



<p class="wp-block-paragraph">From there, making a &#8220;wafflewich&#8221; with your waffled gluten free stuffing is a breeze. This is an excellent time to use leftover turkey, mashed potatoes and gravy. I prefer to use leftover cranberry sauce </p>



<p class="wp-block-paragraph">However, it you want to make this sandwich truly memorable, smother your waffled stuffing with goat cheese. You might not be able to see mine because it&#8217;s topped with juicy chunks of turkey breast. But trust me, it&#8217;s there. This is quite a mouthful, so you might want to attack this beauty with a fork and knife.</p>

However, I highly recommend using the mini Dash waffle maker instead, especially if you plan to use these for sandwiches. Otherwise, if you&#x27;re making a large waffle, I&#x27;d simply add the potatoes, turkey and cranberry sauce on top, and then eat everything with a fork. </span></div></div>

<h2 class="wp-block-heading">What Do You Look For in Gluten Free Bread?</h2>



<p class="wp-block-paragraph">I recently asked my Facebook followers what they defined as the ultimate test of a gluten free bread. One person stated that when it was toasted, she wants the butter to melt into all the nooks and crannies like real bread. Well, the Schar artisan bread definitely stood up to that challenge! Many stated the wanted to be able to eat it fresh from the bag. I definitely find myself wanting to snag a slice right out of the package!</p>

<h2 class="wp-block-heading">Ultimate Test- Gluten Free Grilled Cheese</h2>



<p class="wp-block-paragraph">However, my test for gluten free bread always involves a grilled cheese sandwich. Not matter how old you get, nothing beats a grilled cheese sandwich and tomato soup. The Schar Artisan bread, while sturdy, is a bit rigid. It didn’t make for the most flexible grilled cheese. Regardless, the cheese melted well and the sandwich tasted delicious. I layered spinach and thinly sliced apple in mine. What extras do you like in your grilled cheese, if any?</p>

<h2 class="wp-block-heading">Gluten Free Bread that Doesn’t Fall Apart</h2>



<p class="wp-block-paragraph">Another follower mentioned that they longed for a bread that made a PB + J sandwich that did not fall apart. Well, this Schar Artisan bread definitely passes that test. I actually used sunflower seed butter instead of peanut butter. Between preparing lunches for my husband at school, and running a kids GF camp, I try to use products that are free of as many allergens as possible.</p>



<p class="wp-block-paragraph">If the Schar Artisan bread line contains one fault, it is that it contains soy. I love that the bread is egg and dairy free. I hope that someday they can find a way to remove the soy from their ingredients as well.
