What inspired you to become a baker?

My inspiration for baking initially came from my grandmother. She was a wonderful baker and cook. She always made even simple items special and delicious.

Now I gain inspiration from lots of cookbooks and cooking shows. I love Ina Garten and her easy elegant recipes.

What’s Your Background in Gluten Free Baking?

I was diagnosed with celiac in 2012. There weren’t many store bought options for treats or bread at the time, and what there was, wasn’t great.

Therefore, if I wanted something I learned to make it gluten free. It took practice to adjust to gluten free flours! Now everyone loves the treats, and they don’t miss the gluten!

    • I also use Bob’s Red Mill gluten free oats, which are certified too.

I use a Convection oven for baking, which has strictly been used for gluten free items.

The work space in my kitchen is 100% gluten free. There is NO wheat flour used in the home.

While there are pre-packaged foods such as crackers in my m house for my grandchildren, they are not allowed in the kitchen while I’m baking.

I follow Michigan cottage law for cleaning and sanitizing my work area.

What Do Customers Say About The Celiac Shack?

“If you’re looking for gluten-free treats that don’t compromise on flavor, The Celiac Shack is an absolute must-try!

I recently tried their pumpkin pie and cinnamon rolls, and wow—both were phenomenal.

The pumpkin pie was perfectly spiced, creamy, and had a crust that tasted just like the real deal (maybe even better!).

The cinnamon rolls were soft, gooey, and bursting with cinnamon goodness—honestly, you’d never guess they’re gluten-free.

What I love most is that they’ve managed to create baked goods that feel indulgent and comforting, without the worry for those of us who have family avoiding gluten. The quality and care they put into their products really shines through.

Richmond is lucky to have this bakery, and I can’t wait to go try more of their menu. If you’re gluten-free—or even if you’re not—do yourself a favor and check out The Celiac Shack. You won’t be disappointed! ~ Doug M. (Taken from The Celiac Shack FB page.)

What would you like consumers to know about your products and your business?

I would like consumers to know that I always use the best quality ingredients I can. At The Celiac Shack, I provide the same quality and attention to detail for my clients as I would for myself. For example, I use avocado oil in my baking, which may be a healthier option.

If you sell at markets, do packaged goods have labeled ingredients and your business name?

I only occasionally sell at markets. Most of my sales happen right from my front porch, by appointment. I have done pop-ups at Blake’s Orchard Local Loaf event, and occasionally at the Richmond Farmers Market.

My packaging does include labels with ingredients listed, business address, net weight, and Michigan cottage law disclaimer.

How should customers place a special order? Do you ship?

If a customer would like to place an order, they can send a message through Facebook Messenger. I typically need a couple days notice. I don’t currently ship.
