<p class="wp-block-paragraph">Looking for a naturally gluten free recipe for those lazy Saturday mornings? These fluffy gluten free buckwheat pancakes are easy, delicious and exactly what your weekend needs. The added homemade strawberry sauce makes them phenomenal!</p>

<h2 class="wp-block-heading">Pancakes &#8211; A Weekly Tradition</h2>

<p class="wp-block-paragraph">We eat pancakes at our house every Saturday. No joke. Every. Single. Saturday. A standard routine brings such a sense of peace to the weekend. No frantic thinking about what to make for breakfast. Because Saturday = pancakes. (Also, in our house, Sundays = omelettes.)</p>

<p class="wp-block-paragraph">When we started this routine over a decade ago, we started eating gluten free buckwheat pancakes. Why? The buckwheat flour I purchased was healthier than the refined flours, and it was cheaper. At least, at that time. (Hello inflation!) So every Saturday you&#8217;ll find us with our <a href="https://amzn.to/2Icbefa" target="_blank" rel="nofollow noopener">cast iron griddle</a>, straddled over two burners, flipping these gluten free flapjacks.</p>

<h2 class="wp-block-heading">A Word of Caution About Gluten Contamination in Flour</h2>

<p class="wp-block-paragraph">Back then I also failed to realize that &#8220;naturally gluten free&#8221; didn&#8217;t necessarily mean &#8220;truly gluten free.&#8221; After reading this study of &#8220;Naturally Gluten Free Grains and Gluten Contamination&#8221; from Tricia Thompson, I realized how important it is to select products that saw &#8220;gluten free.&#8221;</p>

<p class="wp-block-paragraph">A product fairs even better if it contains a third-party gluten free certification logo. I am a huge fan of<a href="https://thebirkettmills.com/product_cat/buckwheat/" target="_blank" rel="nofollow noopener"> Birkett Mills buckwheat flour</a>. If you have a great blender that can make flour, you can do it from <a href="https://amzn.to/2GFgpHv" target="_blank" rel="nofollow noopener">Bob&#8217;s Red Mill Buckwheat Groats</a>. **Please note &#8211; The Bob&#8217;s Red Mill buckwheat flour is NOT considered gluten-free as it is not milled in their dedicated GF lines. (If you really love buckwheat, try my egg-free recipe for &#8220;<a title="Buckwheat Bread – Gluten-Free &amp; Heart Friendly" href="https://miglutenfreegal.com/2017/02/10/buckwheat-gluten-free-heart-friendly/" target="_blank" rel="noopener">Buckwheat Bread</a>!)</p>

<div class="wp-block-image">
<figure class="aligncenter"><img decoding="async" width="600" height="900" src="https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-overhead-1.jpg" alt="fluffy gluten free buckwheat pancakes overhead" class="wp-image-4630" srcset="https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-overhead-1.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-overhead-1-200x300.jpg 200w" sizes="(max-width: 600px) 100vw, 600px" /></figure>
</div>

<h2 class="wp-block-heading">Peanut Butter on Pancakes??</h2>

<p class="wp-block-paragraph">Now, these fluffy gluten free buckwheat pancakes in our home require one very important condiment. Peanut Butter.&nbsp;I never ate peanut butter on pancakes until I started dating my husband. When I found out this family tradition of smothering their pancakes in peanut butter, I was a bit skeptical. However, out of graciousness, I tried it. I loved EVERY bite! Consequently, I’ve been eating my pancakes that way ever since.</p>

<p class="wp-block-paragraph">Ironically, there is a unique story to this family tradition. The setting takes place in a small family restaurant. One gentleman overhears another man asking for peanut butter for his pancakes. Aloud the evesdropper states, “The only person I know that puts peanut butter on their pancakes is Tim Clegg.” Ironically, the peanut butter requesting customer had indeed been a close childhood friend of my husband&#8217;s uncle. Small world, isn&#8217;t it?</p>

<div class="wp-block-image">
<figure class="aligncenter"><img decoding="async" width="600" height="900" src="https://miglutenfreegal.com/wp-content/uploads/2013/03/Buckwheat-pancakes-sauced-close-up-1.jpg" alt="Fluffy gluten free Buckwheat pancakes covered in homemade strawberry sauce" class="wp-image-4631" srcset="https://miglutenfreegal.com/wp-content/uploads/2013/03/Buckwheat-pancakes-sauced-close-up-1.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2013/03/Buckwheat-pancakes-sauced-close-up-1-200x300.jpg 200w" sizes="(max-width: 600px) 100vw, 600px" /></figure>
</div>

<h2 class="wp-block-heading">Peanut Butter and Jelly Pancakes?</h2>

<p class="wp-block-paragraph">Now, one could top these gluten free buckwheat pancakes with peanut butter and syrup. However, my mind immediately went to the idea of peanut butter and jelly. Truth be told we make a large batch of these pancakes every weekend to have extra &#8220;bread&#8221; on hand.</p>

<p class="wp-block-paragraph">You might catch us using them to make a turkey and cheese sandwich or peanut butter and jelly. Since I succeeded in making a homemade blueberry syrup for my <a title="Canyon Bakehouse Heritage Style Bread + Blueberry Breakfast Casserole" href="https://miglutenfreegal.com/2017/02/08/canyon-bakehouse-heritage-style/" target="_blank" rel="noopener">Cream Cheese Stuffed French Toast Casserole</a>, I knew I could make one from strawberries.</p>

<h2 class="wp-block-heading">Homemade Strawberry Syrup</h2>

<p class="wp-block-paragraph">Unsure of proportions, I complete a quick Google search, and immediately decided that Baking Mischief&#8217;s <a href="https://bakingmischief.com/2017/07/12/strawberry-sauce-for-pancakes/" target="_blank" rel="noopener">Quick and Easy Strawberry Sauce for pancakes</a> was exactly what I wanted to make! While she used fresh strawberries, I simply used frozen ones that I grabbed from Aldi.</p>

<p class="wp-block-paragraph">Let me tell you, this tastes like biting into a fresh strawberry on a warm summer&#8217;s day. This sauce is not overly sweet, but thin enough to shed its sweetness on any and everything. As it contains no dairy, you could even but it on top of my <a title="Dairy-Free Banana Ice Cream" href="https://miglutenfreegal.com/2017/07/07/dairy-free-banana-ice-cream/" target="_blank" rel="noopener">dairy free banana ice cream</a>!</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="600" height="900" src="https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-bite-on-fork-1.jpg" alt="fluffy gluten free buckwheat pancakes bite on fork" class="wp-image-4632" srcset="https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-bite-on-fork-1.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-bite-on-fork-1-200x300.jpg 200w" sizes="auto, (max-width: 600px) 100vw, 600px" /></figure>
</div>

<h2 class="wp-block-heading">Dairy Free Option</h2>

<p class="wp-block-paragraph">Doesn&#8217;t this plate of fluffy gluten free buckwheat pancakes look so inviting? So many times we&#8217;ve had gluten free pancakes turn out flat and limp. Not these! Just look at the air pockets in that bite. Amazing! (I think the secret is the soured milk. If you need to eat dairy-free, I have also done this with almond milk!)</p>

<p class="wp-block-paragraph">These gluten free buckwheat pancakes even taste great rewarmed in the microwave the next day. Because can&#8217;t everyone use a quick breakfast idea when the alarm clock goes off at 5 in the morning?! I know I do! (Consequently, Monday mornings also = pancakes in our household. Because this girl needs her sleep!</p>

<p class="wp-block-paragraph">Who doesn&#8217;t love a good breakfast casserole? This sweet and fruity Gluten Free Blueberry Pancake Casserole is a great way to use leftover pancakes. Your household is sure to love this creative spin on a French Toast casserole.</p>

<h2 class="wp-block-heading">Michigan is the Blueberry State</h2>

<p class="wp-block-paragraph">Confession. I used to hate blueberries. Sad thing, considering &#8220;Michigan produces more blueberries than any other state in the nation.&#8221; However, over time I matured, as did my taste buds. Thank goodness, because juicy blueberries are the star in this Gluten Free Blueberry Pancake Casserole. Since blueberries are good for your health, this makes this a health food, right? Therefore one can eat multiple pieces, right? Because after you taste this, you&#8217;re totally going to want more.</p>

<h2 class="wp-block-heading">Leftover Gluten Free Pancakes?</h2>

<p class="wp-block-paragraph">I wish I could say I am the brain child behind this beautiful Gluten Free Blueberry Pancake Casserole. In fact, that honor belongs to Annalise from <a href="https://www.completelydelicious.com/" target="_blank" rel="noopener noreferrer">Completely Delicious</a>. I came across her <a href="https://www.completelydelicious.com/blueberry-pancake-bake/" target="_blank" rel="noopener noreferrer">Blueberry Pancake Bake</a> while searching for creative ways to use leftover pancakes. What? Leftover pancakes?&nbsp; That week I made gluten-free pancakes for a church event, and went overboard in my portions. Like, 30+ pancakes overboard. Go big or go home, right?</p>

<p class="wp-block-paragraph">Anyway, I found this amazing recipe Annalise created and I updated it to make it gluten-free. Which isn&#8217;t hard really. You only make two subs &#8211; gluten-free pancakes and gluten-free flour in the streusel. (In addition, Annalise started with blueberry pancakes. I say use whatever leftover pancakes you have.)</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="700" height="393" src="https://miglutenfreegal.com/wp-content/uploads/2017/11/Blueberry-Pancake-Casserole-plated-min.jpg" alt="This Gluten-Free Blueberry Pancake Casserole is just popping with Michigan blueberries " class="wp-image-4011" srcset="https://miglutenfreegal.com/wp-content/uploads/2017/11/Blueberry-Pancake-Casserole-plated-min.jpg 700w, https://miglutenfreegal.com/wp-content/uploads/2017/11/Blueberry-Pancake-Casserole-plated-min-600x337.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2017/11/Blueberry-Pancake-Casserole-plated-min-300x168.jpg 300w, https://miglutenfreegal.com/wp-content/uploads/2017/11/Blueberry-Pancake-Casserole-plated-min-320x180.jpg 320w, https://miglutenfreegal.com/wp-content/uploads/2017/11/Blueberry-Pancake-Casserole-plated-min-480x270.jpg 480w" sizes="auto, (max-width: 700px) 100vw, 700px" /></figure>
</div>

<p class="wp-block-paragraph"></p>

<h2 class="wp-block-heading">How to Make a Gluten Free Streusel Topping</h2>

<p class="wp-block-paragraph">That&#8217;s right. This Gluten Free Blueberry Pancake Casserole is covered in the most amazing streusel. Okay, Confession 2 &#8211; I totally said &#8220;streusel&#8221; to my phone to see how to spell it correctly. Is that sad? Does anyone else do that? The placement of the &#8220;e&#8221; and &#8220;u&#8221; totally trips me up.</p>

<p class="wp-block-paragraph">Well, no matter how you spell it, it&#8217;s freakin&#8217; delicious. I mean, how can one go wrong with gobs of brown sugar and butter? With this sweet streusel on top, you don&#8217;t even need to top this Gluten-Free Blueberry Pancake Casserole with syrup. I mean, you can. No shame from over here if you do. Feel free to let you inner Elf out and coat this bad boy in syrup if you want. Just sayin&#8217; it still tastes AMAZING without it.</p>

<h2 class="wp-block-heading">How Many Does This Casserole Serve?</h2>

<p class="wp-block-paragraph">This Gluten Free Blueberry Pancake Casserole makes enough for at least 8 servings. Even more if you&#8217;re serving it as part of a brunch spread with lots of other goodies. </p>

<p class="wp-block-paragraph">(Maybe with this <a title="Homemade Gluten-Free Chicken Breakfast Sausage" href="https://miglutenfreegal.com/2017/03/08/gluten-free-chicken-breakfast-sausage/" target="_blank" rel="noopener noreferrer">homemade gluten-free chicken breakfast sausage</a>?) I hypothesize that you could cut the &#8220;custard&#8221; recipe in half, use less pancakes, and bake it in a 8 x 8 dish. However, I haven&#8217;t tried it.</p>

<p class="wp-block-paragraph">Looking for something even more decadent? Try my<a href="https://miglutenfreegal.com/2017/02/08/canyon-bakehouse-heritage-style/" target="_blank" rel="noopener noreferrer"> Cream Cheese Stuffed, Overnight Blueberry French Toast Casserole</a>. Craving something to feed a family of two? Try my easy gluten free <a href="https://miglutenfreegal.com/2014/01/06/canyon-bakehouse-gluten-free-giveaway/" target="_blank" rel="noopener noreferrer">breakfast casserole for two</a>. </p>

<p class="wp-block-paragraph">Looking  for a bigger <a href="https://miglutenfreegal.com/gluten-free-savory-breakfast-strata/" data-type="post" data-id="3846">savory breakfast strata</a>? <h3 class="wp-block-heading">Almost as Easy as Store Bought</h3>

<p class="wp-block-paragraph">Remember when Starbucks used to have a gluten free breakfast sandwich? Yeah, those were good days. However, they were never available in Flint. Therefore I created my own recipe, which starts with a pancake mix. I used Krusteaz, but I think this should work for any pancake mix. (It also works with &#8220;made from scratch&#8221; pancake recipes.)</p>

<h3 class="wp-block-heading">Only 5 Ingredients</h3>

<p class="wp-block-paragraph">These super simple gluten free breakfast sandwich beauties use only 4 ingredients total. Gather pancake mix, water, milk and eggs, and you&#8217;re good to go.</p>

<p class="wp-block-paragraph">Whip up the batter, scoop two ounces it into your (well greased!) <s>Whoopie Pie pan</s> wells, and you&#8217;re good to go. Bake in a 350 degree oven for 13-15 minutes, rotating the pan once. When they are done, carefully and quickly loosen them and place on a cooling rack. *Note- Wilton no longer makes a Whoopie Pie Pan. Use their <a href="https://amzn.to/4i3jWRi">Muffin Top Pan</a> instead. </p>

<h3 class="wp-block-heading">Can I Make These Without a Pancake Mix?</h3>

<p class="wp-block-paragraph">I made a test batch of these sandwiches, using What the Fork&#8217;s <a href="https://www.whattheforkfoodblog.com/2018/01/06/gluten-free-pancakes/" target="_blank" rel="noopener">Fluffy Gluten Free Pancake</a> recipe. (We use this recipe every Saturday morning, for panckes.) I filled each well using my 3 tbsp scoop, which made 8 pancake rounds. They bake up well, but weren&#8217;t as brown as I would have liked. I&#8217;d suggest baking them for 14-15 minutes.</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="700" height="412" src="https://miglutenfreegal.com/wp-content/uploads/2017/05/Easy-Peasy-Breakfast-Sandwich-Eggs-in-Pan-min.jpg" alt="gluten-free breakfast sandwich prep is easy with a Wilton Whoopie Pie Pan - MI Gluten Free Gal" class="wp-image-3388" srcset="https://miglutenfreegal.com/wp-content/uploads/2017/05/Easy-Peasy-Breakfast-Sandwich-Eggs-in-Pan-min.jpg 700w, https://miglutenfreegal.com/wp-content/uploads/2017/05/Easy-Peasy-Breakfast-Sandwich-Eggs-in-Pan-min-300x177.jpg 300w" sizes="auto, (max-width: 700px) 100vw, 700px" /></figure>
</div>

<h3 class="wp-block-heading">How to Bake Eggs in the Oven</h3>

<p class="wp-block-paragraph">When I did my test run with my gluten free breakfast sandwich recipe, I prepared enough to make nine sandwiches. Therefore I well-oiled my second Whoopie Pie pan, and dusted the wells lightly with rice flour.&nbsp; Then I cracked my eggs into the wells. That&#8217;s right folks, I&#8217;m baking eggs. NO need for all that individual frying and flipping.</p>

<p class="wp-block-paragraph">The trick to baking these eggs is to pierce the yolks <em><strong>gently</strong></em>. Don&#8217;t whip them, just poke it so the yolk lightly seeps into the whites. Then, sprinkle those eggs with some sea salt, and pop them in the oven for 10 minutes. Not one second more. Then put the other batch of gluten-free breakfast sandwich pancake muffin tops in the oven.</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="700" height="393" src="https://miglutenfreegal.com/wp-content/uploads/2017/05/Easy-Peasy-Breakfast-Sandwich-on-Cooling-Rack-min.jpg" alt="gluten-free breakfast sandwich on the cooling rack- MI Gluten Free Gal" class="wp-image-3389" srcset="https://miglutenfreegal.com/wp-content/uploads/2017/05/Easy-Peasy-Breakfast-Sandwich-on-Cooling-Rack-min.jpg 700w, https://miglutenfreegal.com/wp-content/uploads/2017/05/Easy-Peasy-Breakfast-Sandwich-on-Cooling-Rack-min-300x168.jpg 300w" sizes="auto, (max-width: 700px) 100vw, 700px" /></figure>
</div>

<h3 class="wp-block-heading">Can I Eat These Baked Pancakes on Their Own?&nbsp;</h3>

<p class="wp-block-paragraph">I can&#8217;t begin to tell you how AMAZING these taste. Seriously, this endeaveor was a &#8220;fingers-crossed, hope-for-the-best&#8221; situation, and it was all I dreamed it would be. This Krusteaz gluten-free pancake mix has a hint of vanilla and sweetness to them.</p>

<p class="wp-block-paragraph">In all honesty, one could just eat the pancake portion on its own, drizzled with fresh maple syrup. However, they are the perfect base for this gluten free breakfast sandwich, so you may not want to use them for anything else.</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="700" height="394" src="https://miglutenfreegal.com/wp-content/uploads/2017/05/Krusteaz-Breakfast-Sandwich-min-min.jpg" alt="This gluten-free breakfast sandwich is perfect with strawberries and a cup of coffee - MI Gluten Free Gal" class="wp-image-3390" srcset="https://miglutenfreegal.com/wp-content/uploads/2017/05/Krusteaz-Breakfast-Sandwich-min-min.jpg 700w, https://miglutenfreegal.com/wp-content/uploads/2017/05/Krusteaz-Breakfast-Sandwich-min-min-600x338.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2017/05/Krusteaz-Breakfast-Sandwich-min-min-300x169.jpg 300w, https://miglutenfreegal.com/wp-content/uploads/2017/05/Krusteaz-Breakfast-Sandwich-min-min-320x180.jpg 320w, https://miglutenfreegal.com/wp-content/uploads/2017/05/Krusteaz-Breakfast-Sandwich-min-min-480x270.jpg 480w" sizes="auto, (max-width: 700px) 100vw, 700px" /></figure>
</div>

<h3 class="wp-block-heading">Can You Freeze These Breakfast Sandwiches?</h3>

<p class="wp-block-paragraph">You can have a whole batch of these babies ready in less than an hour. The added bonus? They freeze PERFECTLY! Wrap each one in aluminum foil, place in a gallon size Ziploc bag, and you have a quick, ready-to-eat breakfast in just minutes. </p>

<h3 class="wp-block-heading">How Do I Reheat These Gluten Free Breakfast Sandwiches?</h3>

<p class="wp-block-paragraph">To reheat, unwrap and microwave for one minute. Otherwise, place them [still wrapped in foil] in a 350&#8243; oven to warm for 15 minutes. (Directions for reheating in the recipe, below.)&nbsp;</p>

<p class="wp-block-paragraph">One of these simple gluten-free breakfast sandwiches is enough to satisfy and fuel any hungry kiddo. For hungry adults like my hubby, two of these keep him energized all the way until lunch. I like to pair mine with a side of fresh fruit. Want more morning inspiration? <h3 class="wp-block-heading">What Else Can I Put on These Breakfast Sandwiches?</h3>

<p class="wp-block-paragraph">If you want to get really fancy, you could top them with <a title="Homemade Gluten-Free Chicken Breakfast Sausage" href="https://miglutenfreegal.com/2017/03/08/gluten-free-chicken-breakfast-sausage/" target="_blank" rel="noopener noreferrer">my homemade chicken sausage patties</a>. Of course, a slice of cheese is always a good thing! Trying to cut back on grains? Check out these gluten-free <a href="https://boulderlocavore.com/muffin-tin-denver-omelet/" target="_blank" rel="noopener">Denver Omelet</a> muffins from my friend Boulder Locavore. They look amazing!</p>

<h3 class="wp-block-heading">I Don&#8217;t Have a Muffin Top Pie Pan. What Else Can I Use? </h3>

<p class="wp-block-paragraph">Another option is to bake your pancakes in a jelly roll pan. When finished, cut them into squares and then use them to build a breakfast sandwich. Use this <a href="https://www.faithfullyglutenfree.com/gluten-free-sheet-pan-pancakes/" target="_blank" rel="noopener">Sheet Pan Pancakes</a> recipe from Faithfully Gluten Free for more ideas.&nbsp;</p>

<h3 class="wp-block-heading">Store Bought Breakfast Sandwiches</h3>

<p class="wp-block-paragraph">My recipe for gluten free breakfast sandwiches are easy to prep on the weekend. However, if you still want something store bought, these brands all offer a gluten free breakfast sandwich alternative.</p>

<p class="wp-block-paragraph">Chicago is like the New York City of the Midwest. Huge buildings, big attractions, and throngs of visitors. Did you know one of its nicknames is actually the &#8220;Heart of America?&#8221; That&#8217;s because it is one of the biggest transportation centers in the country, as well as being near the geographic center of the U.S.</p>

With zero concern that my meal could possibly make me sick from ingesting gluten, I wholeheartedly ate without abandon while at <a href="https://wheatsendcafe.com/">Wheat&#8217;s End</a>. Lamb meatloaf, English muffins, and more. It was so amazing I wrote an entire article about it. <a href="https://miglutenfreegal.com/2016/06/01/wheats-end-cafe-gluten-free-chicago/">Read it here</a>!</p>

<p class="wp-block-paragraph">I discovered <a href="https://www.deflouredbakery.com/">Defloured Bakery</a> a few years ago, thanks to the recommendations of MANY friends. This quaint bake shop offers everything from cookies to muffins to S&#8217;mores bars. Yeah, you know I bought one! Located in Andersonville neighborhood, you&#8217;ll also find some adorable shops in the area, too!</p>

<h3 class="wp-block-heading">* Wildfire &#8211;</h3>

<p class="wp-block-paragraph">Again, I have not eaten at this establishment. However, I hear great reviews from many. Wildfire is part of the&nbsp;<a href="https://www.leye.com/restaurants/" target="_blank" rel="nofollow noopener noreferrer">Lettuce Entertain You Restaurant</a>&nbsp;chain. Many I know have stated that many of the restaurants in this chain have undergone training on preventing cross contact with gluten.&nbsp;</p>

<h3 class="wp-block-heading"><a href="https://www.doritedonuts.com/" target="_blank" rel="nofollow noopener noreferrer">Do Rite Donuts</a></h3>

<p class="wp-block-paragraph">This is the photo that blew up my Instagram account. That&#8217;s because there&#8217;s nothing quite like a Do Rite Donut. Gluten Free donuts are prepared in dedicated fryers, and stored in their own separate cases. They are first come, first serve though. So I recommend getting to <a href="https://www.doritedonuts.com/locations/" target="_blank" rel="nofollow noopener noreferrer">one of their locations</a> early!</p>

<p class="wp-block-paragraph">It&#8217;s taken me a few trips to Chicago to finally make it here, and it was everything I dreamed it would be. <a href="https://eggharbor.cafe/">Egg Harbor Cafe</a> has multiple locations throughout Chicagoland. They have an extensive gluten-free menu and serve <a href="https://www.sweetalis.com/" target="_blank" rel="noopener noreferrer">Sweet Ali&#8217;s</a> pancakes and cinnamon rolls.</p>

<p class="wp-block-paragraph"><a href="https://roti.com/" target="_blank" rel="noopener noreferrer">Roti Mediterranean Grill</a> (also available downtown)<br>I first fell in love with Roti in 2014. They offer delicious gluten-free Mediterranean food! This fast casual restaurant is like Chipotle, only with chicken kabobs instead of burritos. They also serve gluten-free falafel. Locations include Chicago and Washington D.C., with new locations in the works.</p>

The most famous attraction is probably the Cloud Gate. It&#8217;s often referred to as the Bean, because it&#8217;s shaped like a kidney bean. This polished stainless steel structure reflects the city skyline.</p>

<p class="wp-block-paragraph">True story, the person at the edge of the photo in the blue shirt is my husband. He was taking a picture of a family on vacation, using their camera. When he was done, we realized they lived in a city less than 20 miles from our house in Flint. Small world, huh?</p>

My favorite show is <a href="https://www.npr.org/programs/wait-wait-dont-tell-me/" target="_blank" rel="noopener noreferrer">Wait, Wait Don&#8217;t Tell Me</a>, and it is taped weekly at the Chase Auditorium. The theater has many other shows that you can take in. From musicians to comedians and more, you&#8217;ll find something to enjoy.</p>

<p class="wp-block-paragraph">Of course there are many other famous places to visit. <a href="https://www.sheddaquarium.org/" target="_blank" rel="noopener noreferrer">Shedd&#8217;s Aquarium</a>, the <a href="https://www.fieldmuseum.org/" target="_blank" rel="noopener noreferrer">Field Museum of Natural History</a>, <a href="https://navypier.org/" target="_blank" rel="noopener noreferrer">Navy Pier</a>, and so much more. <h2 class="wp-block-heading">Travel and Parking</h2>

<p class="wp-block-paragraph">As downtown Chicago is a busy place, I HIGHLY suggest getting a <a href="https://www.transitchicago.com/travel_information/fares/unlimitedridecards.aspx" target="_blank" rel="noopener noreferrer">Ventra Card</a>. This multi-use transportation card gets you on all the bus lines and some of the trains. The rates are very affordable and it makes getting around the city SO much easier. I also recommend using the <a href="https://spothero.com/" target="_blank" rel="nofollow noopener noreferrer">SpotHero app</a> to find close and affordable parking.</p>

<p class="wp-block-paragraph">If you travel often, I recommend investing in an <a href="https://www.getipass.com/" target="_blank" rel="nofollow noopener">I-Pass</a>. It&#8217;s a transponder that helps you pay tolls, as you drive. The transponder also works with toll systems in 15 other states, such as Ohio, Indiana, Kentucky, New York and New York. The money you add to your I Pass account doesn&#8217;t diminish over time.&nbsp;</p>

<p class="wp-block-paragraph">Every autumn, the world goes nuts for Pumpkin Spice EVERYTHING. However, I&#8217;m more of an apple girl. Which is why I LOVE these Gluten Free Apple Spice Pancakes. Don&#8217;t forget the cooked apple topping!</p>

</div>

<h3 class="wp-block-heading">What Is In Apple Pie Spice?&nbsp;</h3>

<p class="wp-block-paragraph">While one can purchase apple pie spice at the store, it&#8217;s fairly simply to put together yourself. According to various articles on the internet, Apple Pie Spice is primarily composed of</p>

<ul class="wp-block-list">
<li>Cinnamon</li>

<li>Cloves</li>

<li>Nutmeg</li>

<li>Ginger</li>

<li>Allspice (occassionally)&nbsp;</li>
</ul>

<p class="wp-block-paragraph">My recipe for Gluten Free Apple Spice Pancakes use individually measured spices. However, you could use 2 tsp prepared apple pie spice in this recipe. However, I haven&#8217;t tried that, so I can&#8217;t tell you exactly how that would taste. Also, this recipe doesn&#8217;t just use an apple spice blend. It also includes applesauce, for real apple flavor.</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="600" height="900" src="https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Whole-1-1.jpg" alt="gluten free apple pie spice pancakes topped with cooked apples" class="wp-image-12783" srcset="https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Whole-1-1.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Whole-1-1-200x300.jpg 200w" sizes="auto, (max-width: 600px) 100vw, 600px" /></figure>
</div>

<h3 class="wp-block-heading">What Gluten Free Flour Do You Use?&nbsp;</h3>

<p class="wp-block-paragraph">When I looked at other gluten free apple pancake recipes, almost all of them contain oats. Which is fine if your stomach tolerates certified gluten free oats. However, my stomach doesn&#8217;t, and I know there are many people out here in the same boat. For my recipe, I used King Arthur Measure for Measure Gluten Free Flour Blend.</p>

<h3 class="wp-block-heading">What Other Tips Do You Have for Making Apple Spice Pancakes?</h3>

<p class="wp-block-paragraph">As a general rule, gluten free batters benefit from a resting period. That allows the flour to absorb all of the moisture. For these gluten free apple spice pancakes, I allowed the batter rest for 10 minutes, whild chopping up my apples. Also, I recommend adding just a touch of vinegar to your milk. This gives the leaveners more to react to, creating fluffier pancakes.&nbsp;</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="600" height="900" src="https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Cooked-Apples-Spices-1-1.jpg" alt="cooked brown sugar and cinnamon apples" class="wp-image-12782" srcset="https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Cooked-Apples-Spices-1-1.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Cooked-Apples-Spices-1-1-200x300.jpg 200w" sizes="auto, (max-width: 600px) 100vw, 600px" /></figure>
</div>

<h3 class="wp-block-heading">Tell Me More About The Cooked Cinnamon Apple Topping</h3>

<p class="wp-block-paragraph">While these Gluten Free Apple Spice Pancakes taste great with just syrup, these simple cooked apples take this recipe over the top. It requires very few ingredients- butter, water (or cider), brown sugar, and chopped apples. Then, you cook all of that together in a small pot.&nbsp;</p>

<p class="wp-block-paragraph">I use these same cooked apples in my <a href="https://miglutenfreegal.com/gluten-free-mini-apple-cheesecakes/">Grain Free Mini Apple Cheesecakes</a>. They also taste great on top of <a href="https://miglutenfreegal.com/congee-chinese-savory-rice-porridge/">Congee</a>, for a sweet, and fruity breakfast porridge. You could also add them on top of my <a href="https://miglutenfreegal.com/gluten-free-apple-dumplings/">gluten free apple dumplings</a>, for more added apple deliciousness. </p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="600" height="900" src="https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Bite-removed-1-1.jpg" alt="gluten free apple pie spice pancakes topped with cooked apples" class="wp-image-12784" srcset="https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Bite-removed-1-1.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2015/01/Apple-Spice-Pancakes-Bite-removed-1-1-200x300.jpg 200w" sizes="auto, (max-width: 600px) 100vw, 600px" /></figure>
</div>

<h3 class="wp-block-heading">Can I Make These Pancakes Egg Free or Dairy?</h3>

<p class="wp-block-paragraph">I have not tried this recipe using any ingredient substitutions. My Gluten Free Apple Spice recipe does use melted butter and milk. I theorize that you could use a dairy free milk and oil, instead. If you need gluten free, egg free pancakes, try these <a href="https://allergyawesomeness.com/gluten-free-vegan-pancakes/" target="_blank" rel="noreferrer noopener">Gluten Free Fluffy Vegan Pancakes</a> from Allergy Awesomeness. Simply add the apple pie spices to your batter.</p>

<h3 class="wp-block-heading">Can I Make These Pancakes with Grain Free Flours?</h3>

<p class="wp-block-paragraph">If you need a grain free recipe, you cannot simply substitute almond flour or coconut flour for the all purpose flour blend. (You might be able to substitute&nbsp; <a href="https://www.ottosnaturals.com/pages/about-cassava-flour" target="_blank" rel="nofollow noopener">3/4 of Otto&#8217;s Cassava Flour</a> for the 1 cup of gluten free Measure for Measure blend I use, per Otto&#8217;s website.) For a grain free pancake recipe, try <a href="https://www.loveandlemons.com/almond-flour-pancakes" target="_blank" rel="noopener">Love and Lemons Almond Flour Pancakes</a>.</p>

<h3 class="wp-block-heading">Does This Recipe Contain Tapioca Starch?</h3>

<p class="wp-block-paragraph">Yes. King Arthur&#8217;s Measure for Measure blend contains tapioca starch. A follower recently asked me about gluten free flour blends that are almond free and tapioca free. <a href="https://www.krusteaz.com/products/baking-mixes/gluten-free-all-purpose-flour/" target="_blank" rel="nofollow noopener">Krusteaz Gluten Free All Purpose Flour</a> fits both of those requirements. In fact, it&#8217;s the only premade gluten free flour blend I&#8217;ve found that doesn&#8217;t use tapioca. You *should* be able to use that flour in this recipe, as well.&nbsp;</p>

<div class="wp-block-image">
<figure class="aligncenter"><img loading="lazy" decoding="async" width="600" height="900" src="https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-bite-on-fork-1.jpg" alt="fluffy gluten free buckwheat pancakes bite on fork" class="wp-image-4632" srcset="https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-bite-on-fork-1.jpg 600w, https://miglutenfreegal.com/wp-content/uploads/2013/03/buckwheat-pancakes-bite-on-fork-1-200x300.jpg 200w" sizes="auto, (max-width: 600px) 100vw, 600px" /></figure>

<h2 class="wp-block-heading">Other Gluten Free Pancake Recipes</h2>

<p class="wp-block-paragraph">We eat pancakes in our house every Saturday. When I crave something heartier, we make these <a href="https://miglutenfreegal.com/gluten-free-buckwheat-pancakes/" target="_blank" rel="noreferrer noopener">gluten free buckwheat pancakes</a>. I&#8217;ve recently fallen in love with these <a href="https://www.whattheforkfoodblog.com/2018/01/06/gluten-free-pancakes/" target="_blank" rel="noopener">light and fluffy gluten free pancakes</a> from What the Fork. If you still crave Pumpkin pancakes, try this <a href="https://www.kingarthurbaking.com/recipes/gluten-free-pumpkin-pancakes-recipe" target="_blank" rel="nofollow noopener">Gluten-Free Pumpkin Pancake recipe</a> from King Arthur. It uses the same Measure for Measure flour blend. </p>
