Who Owns Taste Without A Trace?
Monica Vernier is the proud owner of Taste Without a Trace. Based in the greater Lansing, Michigan area, she hopes to help make eating gluten and dairy free easier for those with food allergies and dietary restrictions.
I met Monica and her mother at an event in Mason. The three of us talked for a long time, and felt just like talking to a long time friend. Thanks to her recommendation, I enjoyed a new to me restaurant (Taste of Thai in East Lansing) and had an amazing meal.
What inspired you to become a baker? Why the focus on gluten-free?
I started this business because food is incredibly important in my culture; it’s how we connect and show love. After my daughter’s Celiac Disease diagnosis, I spent a lot of time in the kitchen recreating foods she was missing. It became something we bonded over, and she still loves helping me come up with flavor ideas.

Are Taste Without a Trace Baked Goods free from other allergens?
All Taste Without a Trace Baked goods are gluten free and dairy free. I will make vegan baked goods if I’m comfortable with the type of baked goods being requested.
What steps do you take to ensure that your products are gluten-free?
I do LOTS of research. I belong to Facebook groups and follow pages, such as Gluten Free Watch Dog. Gluten Free certification is something I always look for
I have come across products that I absolutely need and can only find a gluten-free statement. In that case, I reached out to the company personally and ask for more info like is it gluten free because there are no gluten containing products? Are other items made on the same equipment that are gluten containing? Is your PPM rating under 20?
- Do you use oats or oat milk in your baked goods?
- I do, and they are certified gluten-free through Beyond Celiac – the brand is One Degree from Costco. I recently switched to Oatly brand milk because of customer feedback and only a handful of recipes contain oat milk.
- Do you use gluten free wheat starch in your baked goods?
- No, I don’t use wheat starch at all. My daughter has a wheat allergy.

Can you share a story of a customer who’s been greatly impacted by your business?
Not one particular story. One of the compliments I receive all the time is that people who aren’t gluten free say they wouldn’t know the difference if I didn’t tell them. Every smile is a subtle reminder of why I’m doing this.
Here’s a review from my Facebook page– “I ordered a dozen Christmas cookies and they were delivered today! It took me right back to my childhood, eating my nanny’s cookies. They’re delicious even without frosting!”
What would you like consumers to know about Taste Without a Trace?
I want consumers to know that my products come from someone who truly understands gluten-free living. I’ve been in the kitchen several years focusing on creating baked goods that feel nostalgic, joyful, and inclusive. In addition, I focus on sourcing organic and high quality ingredients while minimizing processed ingredients and numbered dyes.

To place a special order it’s best to e-mail or message me on my business Facebook page. I like to talk with people about their vision.
I do deliver if the order is over $15:
Lansing Zone (Free):
Okemos, Mason, Williamston [up till the bridge, Meridian Rd & Grand River], Haslett, Bath, Dewitt, Grand Ledge, Dimondale, Holt, Lansing.
Outside Lansing Zone
Subject to location, as a general rule of thumb, 25+ miles outside of Okemos is $5, anything over 35+ miles is subject to an additional .73 cents per mile on top of the $5.
This pricing does not include catering orders.
Can You Tell Me More About Your Mobile Cafe?
My mobile café operates seasonally from March through October, weather permitting. Because I prepare my baked goods in the trailer, I intentionally limit the menu to comply with state regulations.
From November through February, I participate in select shows and continue offering baked goods, along with a small mobile cart that I bring to businesses when permitted. Catering and special orders are available year-round.
