NEW POST- GF in Detroit
This past March I had the pleasure of finally eating at Union Assembly in Downtown Detroit. I`ve eaten at other Union Joints - Clarkston Union, Honcho and Vinsetta Garage- but hadn`t made it to their newer Detroit location until recently.
Union Assembly offers gluten free sandwiches, soup and even mac & cheese! If you`re going to Fox Theater, Comerica Park, Little Caesars Arena, or Ford Field, Union Assembly is right nearby for gluten free food and drinks.
Fun Fact- The space where the restaurant is used to be a parking garage! AND they have a DJ booth where tunes are spun each week.

Did you know that Michigan is home to three minor league baseball teams?
While many might be familiar with the Lansing Lugnuts or the West Michigan Whitecaps, the Great Lakes Loons play in Midland at Dow Diamond. They are an affiliate of the Los Angeles Dodgers.
Tickets are reasonably priced - $10 dollars for lawn seats and $15 box seats.
Plus they have good gluten free concessions. Everything at their Cactus Carlos stand is gluten free. (Nachos and tacos.) Plus they offer gluten free hot dogs, cheeseburgers and more.

Anna`s House is Open for Easter Brunch
They`ll be open for their regular hours, which means they close at 3 pm.

My Absolute Favorite Brunch Recipe
This Gluten Free French Toast Casserole is layered with blueberries and cream cheese, baked, and then drizzled with a warm blueberry sauce.
Don`t just take my word for it though.

STILL GLUTEN FREE
I swear I`ve seen more than one panicked person on Facebook try to tell others that these Idahoan potatoes aren`t gf anymore.
They are. The Gluten Free label is just in a different spot.
Don`t let people on social media make you anxious.
Did you know that the sweet treat we call Monkey Bread originated in Hungary? It found its way to American households in the late 1940`s.
While many recipes call for using biscuit mix, this gluten free version needs yeast to make our dough "puffy." Therefore, I use Bob`s Red Mill Pizza Crust Mix as the base.
Then the dough balls are rolled in cinnamon and sugar, and then covered with melted butter and brown sugar, and then baked.

Salt Springs Brewery in Saline will be open, and now has a separate toaster for gluten free bread.
Amore Trattoria Italiana in Grand Rapids is now taking reservations for Easter Sunday. (And Mother`s Day.)
St. Johns Resort in Plymouth has a Gluten Free Easter to-go menu

Perfect Object Lesson for Good Friday
It wasn`t until I was a grown adult that I was introduced to Empty Tomb Rolls. (Also known as Resurrection Rolls)
My college degree is in Elementary Education and I LOVE any lesson that can be "hands on." Even better when you can eat it when you`re done!
The main ingredients you will need are-
*my homemade gluten free crescent dough
*melted butter
*a blend of cinnamon & sugar
*marshmallows
The marshmallows are the key ingredient. They melt as you bake them, leaving an "empty" interior. If you avoid animal products, use Dandies Vegan Marshmallows.

You`ll Be Totally Surprised By What I Used to Make the Crust
This gluten free quiche has THE easiest crust you`ll ever make.
No need to roll out a pie crust.
Why? Because the crust is made from mashed potatoes.
You can use homemade mashed potatoes, but I`ve also made it with prepared instant mashed potatoes.
This quiche would be great for your Easter brunch OR make it with your Easter leftovers. (Ham would be great in this!)

Who WIll You Be Spending Easter With?
When I was a kid, my maternal grandmother would host al the holiday meals. It would include my parents, my sister & I, my aunt and uncle and their kids, and sometimes my dad`s parents as well.
It was my very best memory of my childhood. I can still see it all in my mind.
Now I`m 46, and things are much different. My grandmother is gone. As well as my dad, my step dad, and my father in law. Gatherings aren`t as big as they used to be.
But that doesn`t mean we should stop celebrating with those we love. Whether that`s family, or friends. Even if the gathering is small, the important thing is who is around the table.
If you`re planning a smaller gathering this year, I have a list of recipes that are great for a dinner for 2-4 people. It includes beverages, main dishes, rolls and dessert.
