<h3 class="wp-block-heading">Is Your Home Totally Gluten Free? How Do You Prevent Cross Contact?</h3>



<p class="wp-block-paragraph">As a celiac, eliminating the possibility of cross contact is of critical importance to me, both personally and for my small business. Therefore, we have zero wheat flour in the home. However, I do stock premade cereals and pasta that contain wheat in my home.</p>



<p class="wp-block-paragraph">I take extensive precautions to eliminate cross contact. This includes fresh and clean clothing, I pulled my hair back and keep it covered. In addition I scrub my hands and nails as well as surfaces, utensils, baking pans and mixers prior to baking. The floors and cabinets are cleaned and wiped down before and after baking. We also restrict who can be in the kitchen when I’m baking.</p>



<h3 class="wp-block-heading">UPDATE &#8211; Products Made at Proud Mitten Shared Kitchen</h3>



<p class="wp-block-paragraph">Rolling Scones recently started selling their products at <a href="https://www.cantoromarket.com/">Cantoro’s</a>, <a href="https://www.reddotcoffeeco.com/">Red Dot Coffee Co</a>, and <a href="https://www.groundcontrolroasters.com/home">Ground Control Coffee Roasters</a>. However, to do so, they must be made in a licensed kitchen. </p>



<p class="wp-block-paragraph">Therefore, Rolling Scones started producing some of their scones at the <a href="https://www.proudmittenkitchen.com/">Proud Mitten Shared Kitchen</a> in Plymouth. To protect gluten free customers, they took the steps to certify these commercially baked products as gluten free. </p>

<h3 class="wp-block-heading">New Gluten Free Certification &#8211; Under 5 PPM</h3>



<p class="wp-block-paragraph">&#8216;&#8221;Every space that we store ingredients and equipment inspected, but so were all of the areas that we use for prep and baking.&nbsp;When tested, after being baked in the shared kitchen, following our own strict procedures, and protocols, our products tested at LESS THAN 5 ppm!&#8221; You can find out more about our certification by <a href="https://gf-finder.com/gluten-free-products/the-rolling-scones/">clicking this link</a>. </p>



<p class="wp-block-paragraph">&#8220;While&#8221; we do use a shared convection oven, before we bake, that oven is dismantled and cleaned out; this involves removing and cleaning all of the racks as well as all of the inside and outside surfaces.&#8221;</p>



<p class="wp-block-paragraph">&#8220;Our commercial partners are aware that we do bake in a shared kitchen, and we do share all the same information with them.&#8221;</p>



<p class="wp-block-paragraph">Our cottage food baking for farmers markets, public events, as well as in state orders and deliveries are still done in our gluten-free kitchen at home. </p>

<h3 class="wp-block-heading">What inspired you to become a baker? Why focus on gluten-free?</h3>



<p class="wp-block-paragraph">When I received my Celiac Disease diagnosis in 2012, giving up gluten-laden tasty breads and baked goods was difficult and unsatisfying. I turned my attention from mass produced, store bought items to home baked goods at local farmers markets.</p>



<p class="wp-block-paragraph">My husband and I often visited the farmers market in Plymouth on Saturdays, always on the lookout for a gluten free treat I could REALLY sink my teeth in. However time after time I left disappointed with the selection, the taste or the price!</p>

<h3 class="wp-block-heading">Gluten Free Scones that AREN&#8217;T Dry and Crumbly</h3>



<p class="wp-block-paragraph">Frustrated, I studied gluten free baking, learning all I could about the pros, cons, ins, outs, and dos and don&#8217;ts. As techniques and products have evolved, so has my baking. My first non-cookie bake was scones. I figured, scones are supposed to be dry and crumbly so how could I possibly mess it up with gluten free flour! </p>



<p class="wp-block-paragraph">Surprisingly, they were tasty and moist! Not at all what I expected. I expanded my flavors and to my delight, my kids LOVED them. My family encouraged me to sell them at the Farmers Market. Therefore, The Rolling Scones Gluten Free Bakery was formed! I have since diversified our menu to include cupcakes, cinnamon rolls, rosemary focaccia and bagels, with more to come.</p>

<h3 class="wp-block-heading">What Other Allergens are Your Baked Goods Free From?</h3>



<p class="wp-block-paragraph">Our baked goods are free from peanuts and sesame. (as well as no fish, nor shellfish.) I can make dairy or egg free scones upon request.</p>



<p class="wp-block-paragraph">Our only tree nut-containing scone is our Almon-Delite which contains almonds, almond paste and natural almond extract. I make this scone LAST on bake day to prevent cross contamination; as I would do with any special allergen specifics bakes/requests or products that in the future might contain nuts (granola). </p>



<p class="wp-block-paragraph">Our scones that contain chocolate chips of any kind also list soy lecithin as an ingredient which MOST soy-sensitive people are ok with. Our Smore&#8217;s scones also contains NON-vegan marshmallows; also indicated on the ingredient label.</p>

<h3 class="wp-block-heading">What steps do you take to ensure that your ingredients are gluten free?</h3>



<p class="wp-block-paragraph">I verify that all our products are certified gluten free and follow purity protocols when required. This includes flours made by King Arthur, Namaste and single flours like rice, sorghum, and tapioca. </p>



<p class="wp-block-paragraph"><strong>Do you use oats or oat milk?</strong> -I use Chobani Oat milk in my non-dairy options and I&#8217;m starting a line of gluten free granola snacks using certified gluten free oats, from One Degree Organic. At this time, I do not bake with oats. </p>

<h3 class="wp-block-heading">Can you share a testimonial from people who have purchased Rolling Scones gluten free baked goods?&nbsp;</h3>



<p class="wp-block-paragraph">I had a repeat customer at the Plymouth Farmer Market place large orders of mini scones for her mother who was homebound and needed to eat gluten free. She said her mom looked forward to their visits a little more, knowing she would get our scones. That made me feel so good!</p>



<p class="wp-block-paragraph">In addition I had a customer who previously lived in Paris. She said our scones were better than the ones she got at the local Parisian patisserie near her home. That was a HUGE compliment!</p>

<h3 class="wp-block-heading">What would you like consumers to know about your products and your business?</h3>



<p class="wp-block-paragraph">I put a lot of time, effort, love and research into each and every Rolling Scones gluten free product I make. Everything I prepare is made in small batches using organic, locally sourced produce whenever possible.</p>



<p class="wp-block-paragraph">Recently, I transitioned from artificial colors to natural colorants from organic produce whenever needed. For example, for my red velvet cake I use beets and beet juice, and no longer use Red No. 40. I thoroughly enjoy what I do and I look forward to sharing new products with my &#8220;Rolling Scones groupies&#8221;!</p>

<h3 class="wp-block-heading">Who Owns The Celiac Shack? Does it have a Storefront?</h3>



<p class="wp-block-paragraph">Beth Schroeder, who lives in Richmond Michigan, is the owner and baker of The Celiac Shack. She does not operate a storefront, and bakes out of her home kitchen under <a href="https://www.michigan.gov/mdard/food-dairy/cottage-food">Michigan&#8217;s cottage law rules</a>. </p>

<h3 class="wp-block-heading">What inspired you to become a baker?</h3>



<p class="wp-block-paragraph">My inspiration for baking initially came from my grandmother. She was a wonderful baker and cook. She always made even simple items special and delicious. </p>



<p class="wp-block-paragraph">Now I gain inspiration from lots of cookbooks and cooking shows. I love Ina Garten and her easy elegant recipes.</p>



<h3 class="wp-block-heading">What’s Your Background in Gluten Free Baking?</h3>



<p class="wp-block-paragraph">I was diagnosed with celiac in 2012. There weren’t many store bought options for treats or bread at the time, and what there was, wasn’t great. </p>



<p class="wp-block-paragraph">Therefore, if I wanted something I learned to make it gluten free. It took practice to adjust to gluten free flours! Now everyone loves the treats, and they don’t miss the gluten!</p>

<h3 class="wp-block-heading">Do you only use certified gluten free flours?</h3>



<p class="wp-block-paragraph">I use only certified gluten free flours. I mainly use Bob’s Red Mill or King Arthur gluten free flours.</p>

<li>Do you use oats, oat flour, or oat milk in your baked goods?

<li>I also use Bob’s Red Mill gluten free oats, which are certified too.</li>



<li>I know some can be sensitive to oats so, I only use whole oats in my recipes like cookies or crumbles. However, I don’t mix oat flour or use oat milk in recipes.</li>

<li>Do you use certified gluten free wheat starch in any of your baked goods?
<ul class="wp-block-list">
<li>No, I never use gluten free flours that contain gluten free wheat starch. </li>

<h3 class="wp-block-heading">What Other Precautions do you take?</h3>



<p class="wp-block-paragraph">Other precautions I take are making sure pans and baking dishes are only used for gluten free. </p>



<p class="wp-block-paragraph">Most importantly, mixers and bowls have only been used for gluten free products.I In addition, I only use butter or gluten free cooking sprays to grease pans.</p>



<p class="wp-block-paragraph">I use a Convection oven for baking, which has strictly been used for gluten free items.</p>



<p class="wp-block-paragraph">The work space in my kitchen is 100% gluten free. There is NO wheat flour used in the home.</p>



<p class="wp-block-paragraph">While there are pre-packaged foods such as crackers in my m house for my grandchildren, they are not allowed in the kitchen while I&#8217;m baking.</p>



<p class="wp-block-paragraph">I follow Michigan cottage law for cleaning and sanitizing my work area.</p>

<h3 class="wp-block-heading">Are your baked goods free from other allergens? </h3>



<p class="wp-block-paragraph">Gluten is the only item my baked goods are completely free of. </p>



<p class="wp-block-paragraph">However, I have a few items that are free of dairy: banana bread, carrot spice mini muffins, peanut butter cookies, bagels, and apple walnut bars.</p>



<p class="wp-block-paragraph">In addition, I also offer vegan chocolate cupcakes. I provide a grain-free chocolate chip cookie made only with almond flour.</p>

<p class="wp-block-paragraph">I offer a little bit of everything! I make gluten free cookies, cakes and crumbles, muffins and scones, and even cinnamon rolls on occasion. </p>

<p class="wp-block-paragraph">I would like consumers to know that I always use the best quality ingredients I can. At The Celiac Shack, I provide the same quality and attention to detail for my clients as I would for myself. For example, I use avocado oil in my baking, which may be a healthier option.</p>



<h3 class="wp-block-heading">If you sell at markets, do packaged goods have labeled ingredients and your business name?</h3>



<p class="wp-block-paragraph">I only occasionally sell at markets. Most of my sales happen right from my front porch, by appointment. I have done pop-ups at Blake&#8217;s Orchard Local Loaf event, and occasionally at the Richmond Farmers Market. </p>



<p class="wp-block-paragraph">My packaging does include labels with ingredients listed, business address, net weight, and Michigan cottage law disclaimer.</p>



<h3 class="wp-block-heading">How should customers place a special order? Do you ship? </h3>



<p class="wp-block-paragraph">If a customer would like to place an order, they can send a message through Facebook Messenger. I typically need a couple days notice. I don’t currently ship.</p>

<h3 class="wp-block-heading">Who Own&#8217;s Sister Sue&#8217;s Bakery? Does it have a Storefront?</h3>



<p class="wp-block-paragraph">Macee Patrick owns Sister Sue&#8217;s Bakery. She started this business after baking for her father who has Celiac Disease, and her own gluten intolerance. Her passion to create excellent gluten free baked goods even inspired her to attend culinary school. </p>



<p class="wp-block-paragraph">It does not have a storefront. Macee bakes out of her house. </p>



<h3 class="wp-block-heading">Is the space where you make your baked foods 100% dedicated gluten free? </h3>



<p class="wp-block-paragraph">The only gluten we have in our home is store bought bread, for other family members. We keep it in a completely separate compartment in the fridge.</p>



<p class="wp-block-paragraph">We also have a small amount of non-gluten-free crackers stored in a separate cupboard away from all baking products. No wheat flour is present in our house. </p>

<h3 class="wp-block-heading">What inspired you to become a baker?&nbsp;</h3>



<p class="wp-block-paragraph">I’ve always loved baking, even when I was younger. I constantly experimented with recipes and trying fun flavor combinations. Recently, I created an orange lemon poppyseed “cinnamon” roll flavor and was thrilled with how they turned out!</p>



<p class="wp-block-paragraph">I attended Escoffier School of Culinary Arts online for Baking &amp; Pastry Arts through their two-year program. I completed all of my assignments with gluten free, and dairy free ingredients. </p>



<p class="wp-block-paragraph">That training taught me so many new techniques that helped me grow both creatively and professionally as a baker. The program gave me an even deeper understanding of baking science and helped me continue improving my recipes and products.</p>



<p class="wp-block-paragraph">It took a lot of trial and error (and definitely some tears along the way), but now I have recipes that I’m truly proud of.</p>

<h3 class="wp-block-heading">What’s Your Background in Gluten Free Baking?</h3>



<p class="wp-block-paragraph">I started focusing on allergy-friendly baking because of both my dad and myself. My dad has had celiac disease for 23 years. Personally, I&#8217;ve lived with a gluten intolerance for the past 11 years. Over time, I realized how difficult it can be to find desserts that are both safe and genuinely enjoyable to eat.</p>

<h3 class="wp-block-heading">What&#8217;s the Story Behind the Name of Your Business?</h3>



<p class="wp-block-paragraph">Another huge inspiration for me was my brother, Cayden. Sadly he passed away from cancer when I was 12 years old. He was always encouraging me to never give up and to keep pursuing the things I loved.</p>



<p class="wp-block-paragraph">As I’ve gotten older, I’ve realized how much that encouragement shaped me. He’s a big reason why I believe I can pursue my dream of owning a bakery someday. He’s also the inspiration behind the name “Sister Sue’s Bakery.” Growing up, he always called me “Sister Sue.&#8221; I wanted him to still be part of this journey with me in some way.</p>



<p class="wp-block-paragraph">One of the things that pushed me toward gluten free baking was frustration with the lack of good options available in stores. So many gluten-free desserts I tried were expensive, dry, crumbly, or disappointing. I missed being able to enjoy things like soft cookies, birthday cake, and fun desserts that actually tasted good.</p>



<p class="wp-block-paragraph">Because of that, I spent about two years testing recipes and experimenting with ingredients before ever selling anything. I wanted people to try my desserts and genuinely say, “Wait… this is gluten free&#8221;?  I wanted my baked goods to feel exciting and comforting — not like people were settling for less.</p>

<h3 class="wp-block-heading">Do you only use certified gluten free flours?&nbsp;</h3>



<p class="wp-block-paragraph">I make sure all of my ingredients are certified gluten free whenever possible. I avoid ingredients that contain wheat or gluten entirely. Personally, I prefer using products that are clearly safe and that I feel fully confident serving to others.</p>

<p class="wp-block-paragraph">All of my baking ingredients and supplies are kept separately to help ensure safety and avoid cross contact. I also fully clean and sanitize the kitchen before baking.</p>

<p class="wp-block-paragraph">All of Sister Sue&#8217;s Bakery baked goods are gluten free, dairy free, peanut free and tree nut free. My mom has a severe nut allergy, so we don’t keep nuts in our home at all. I also have items that can be made vegan upon request.</p>

<p class="wp-block-paragraph">I’ve had a couple really meaningful experiences with customers that have reminded me exactly why I started Sister Sue’s. One person told me they hadn’t been able to enjoy a birthday cake in years because of their allergies. Being able to finally have one again truly made their day. Moments like that mean everything to me.</p>



<p class="wp-block-paragraph">I’ve also had customers tell me they couldn’t believe the desserts were gluten free because they tasted just like — or even better than — traditional baked goods. One order was for a birthday party and another was for a Christmas gathering where many guests didn’t have food allergies at all. I was told multiple people preferred my desserts over the “regular” options.</p>



<p class="wp-block-paragraph">That’s always my goal with baking. I never want people to feel like they are settling for less because something is gluten free or dairy free. I spend a lot of time testing recipes, techniques, and ingredients to make sure my products feel exciting, comforting, and delicious for everyone.</p>

<p class="wp-block-paragraph">I want consumers to know that Sister Sue’s Bakery is built with so much passion, care, and intention. I use quality ingredients and put a lot of thought into creating desserts that not only taste amazing, but also leave people feeling good after enjoying them.</p>



<p class="wp-block-paragraph">Everything is made with love, and I’ve truly poured my heart and soul into this business. Creating Sister Sue’s has been one of the proudest accomplishments of my life.. <p class="wp-block-paragraph">You can find Sister Sue&#8217;s Bakery at the Ovid Farmers Market. That market starts June 4th from 3-7, and runs through October 1st. All packaged products include my business branding as well as full ingredient labels.</p>

<p class="wp-block-paragraph">Customers can place special orders through my Instagram or website. I typically ask for at least a week&#8217;s notice for standard orders. For larger events such as weddings or bigger gatherings, I prefer at least 3 weeks notice if possible. <h3 class="wp-block-heading">Who Owns Simply Sweet Gluten Free Bakery?</h3>



<p class="wp-block-paragraph">Katie Haege is the owner and baker behind all the delicious gluten free baked goods you&#8217;ll find through her business. She&#8217;s a student at Northern Michigan University, studying business and entrepreneurship. She runs her business in the summer when she&#8217;s home on break. </p>

<h3 class="wp-block-heading">What inspired you to become a baker? </h3>



<p class="wp-block-paragraph">I&#8217; ve always had a huge passion for baking and being able to be creative in the kitchen. Doctors diagnosed my Celiac Disease at age 9, courtesy of my mother discovering a link to my symptoms.</p>



<p class="wp-block-paragraph">After my Celiac Disease diagnosis, I began to realize just how much those with food allergies have to miss out on when it comes to good food. I always felt left out when everyone around me was able to get a sweet treat, and I was left with no safe option. Truly the worst feeling.</p>

<h3 class="wp-block-heading">Why Did You Decide to Start a Gluten Free Baking Business?</h3>



<p class="wp-block-paragraph">Fast forward to college, I began baking and experimenting a few summers back and realized that this was what I truly wanted to do. I made the decision to switch my major and focus on business, in hopes of turning my small home bakery into a full time business.</p>



<p class="wp-block-paragraph">I wanted to create a bakery where those with celiac are able to get baked goods that are 100% safe and mimic a gluten texture to the best of my ability. It is important to me that those who have allergies are able to be included and not left out when it comes to good food! I got tired of the crumbly, dense, and limited gf options, so I pride my bakery on being the complete opposite!</p>

<h3 class="wp-block-heading">Are your baked goods free from other allergens?</h3>



<p class="wp-block-paragraph">My home bakery is 100% free from any gluten and nut containing ingredients! I use dairy products as well as eggs in my baked goods. However, I am able to accommodate for dairy free upon request. If a customer requests dairy free baked goods, I sterilize all utensils  before baking.</p>

<h3 class="wp-block-heading">Do You Use Certified Gluten Free Flours?</h3>



<p class="wp-block-paragraph">I make my own flour blends for all of my baked goods, using Bob&#8217;s Red Mill products. Any of the other products that I use have to either be certified gluten free, and if they lack a certification label while still saying gluten free on them, I will call the company to ensure the facilities process. I would never use an ingredient I would not eat myself!</p>

<h3 class="wp-block-heading">What&#8217;s Your Most Memorable Interaction with a Customer?</h3>



<p class="wp-block-paragraph">I had a lady reach out to me regarding making her daughter some cookies for her birthday. Her daughter was turning 9 and was obsessed with a TV show called Blaze and the Monster Machines. She requested cutout cookies that looked like Blaze the monster truck.</p>



<p class="wp-block-paragraph">She had told me that her daughter was allergic to nuts, dairy, as well as living with Celiac Disease. I was able to accommodate her daughters&#8217; dietary needs as my kitchen is both 100% gluten and nut free. In addition, I am able to make anything dairy free. She had later messaged me stating that the cookies I had made were super delicious, and how appreciative she was that her daughter was able to enjoy cookies without any worry.</p>

<p class="wp-block-paragraph">I want my customers to know that my main priorities are safety and taste. My baked goods include quality ingredients that are 100% safe, no matter the dietary restriction.</p>



<p class="wp-block-paragraph">Taste and texture are also something that I take very seriously. I strive to undue the the stereotype that gluten free food is crumbly and dry. Not everyone wants a dense cake donut all the time, and that&#8217;s why I have a wide variety of items available!</p>

<p class="wp-block-paragraph">I am open to catering arger venues as well such as weddings, birthday parties I would ideally like to grow my business as much as I can during this summer, before I head back to college in the fall. I prefer 3-5 days notice for small special orders, whereas larger order require at least a week.</p>

<p class="wp-block-paragraph">Rebecca Hatch owns Props to Pat. She operates under Cottage Law, which allows her to bake out of her own kitchen. She lives in Maple Rapids, MI and sells her products via special order, and at local Farmers Markets. </p>



<h3 class="wp-block-heading">What Inspired You to Become a Baker?&nbsp;</h3>



<p class="wp-block-paragraph">My business name &#8220;Props to Pat&#8221;, is named after and in honor of my Grandma Pat. She taught me how to bake and I will forever cherish the memories of working alongside her in the kitchen. No one would ever leave her home hungry, which was an inspiring thing to me.</p>

Therefore, I strive to always make food that brings that &#8220;made with love&#8221; feeling, just like Grandma always did.&nbsp;</p>



<h3 class="wp-block-heading">Do you only use certified gluten free flours?&nbsp;</h3>



<p class="wp-block-paragraph">Yes, all flours I use are certified gluten free. I check into all products and ingredients I use, to make sure they meet the definition for gluten free.&nbsp;</p>

<h3 class="wp-block-heading">What Other Precautions do you take?</h3>



<p class="wp-block-paragraph">All of my bakeware is dedicated strictly to gluten free items. That includes my Kitchenaid Stand Mixer and my blender. No wheat flour is ever used in our home. </p>



<p class="wp-block-paragraph">In the event that something containing gluten is brought into our home (such as takeout or a random bag of pretzels), we have certain pans/dishes that are used for that. I do not allow anything containing gluten in my workspace on market prep days.</p>



<h3 class="wp-block-heading">Are your baked goods completely free from other allergens? </h3>



<p class="wp-block-paragraph">No. Although my main focus is gluten free baking, I do offer a few vegan items that I bring to my markets. I&#8217;m always willing to accommodate to specific needs and have made several custom orders that included being dairy free, egg free and nut free. </p>

<p class="wp-block-paragraph">I think the customer reviews I&#8217;ve found most satisfying have been from those who have ordered for special events. I love providing delicious gluten free dessert for weddings, showers, birthdays, etc. It can be isolating when you attend an event and you&#8217;re unable to participate in the meal/dessert. It makes my heart happy to show people love, through food.</p>



<h3 class="wp-block-heading">What would you like consumers to know about Props to Pat?</h3>



<p class="wp-block-paragraph">I think you&#8217;ve done a great job asking some of the most important questions! <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f642.png" alt="🙂" class="wp-smiley" style="height: 1em; max-height: 1em;" /> I&#8217;m always open to answering any questions customers may have. Even though Michigan recently passed legislation allowing shipping within the state of Michigan, I do not ship my baked goods. </p>

Advanced notice is always encouraged, especially for large or more more complex orders (wedding/decorated cakes). However, I can accommodate most requests within a weeks notice. </p>

<p class="wp-block-paragraph">Alexa Connelly owns Bear Necessities Bakery, which is an insured <a href="https://www.michigan.gov/mdard/food-dairy/michigan-cottage-foods-information">Michigan cottage law</a>, home based business. <h3 class="wp-block-heading">What Inspired You To Become A Baker? </h3>



<p class="wp-block-paragraph">My journey into baking began with a lifelong passion for culinary experimentation. Personal dietary adjustments led to the development of lactose intolerance and gluten sensitivity. </p>



<p class="wp-block-paragraph">Concurrently, my husband, while not diagnosed with celiac disease, exhibits a significant gluten sensitivity, compounded by a compromised immune system and psoriasis. This necessitated a household free from gluten, nightshades, lactose, and spicy ingredients.</p>

<h3 class="wp-block-heading">What&#8217;s Your Background with Gluten Free Baking?</h3>



<p class="wp-block-paragraph">My initial motivation for baking was to indulge in sweets, particularly cookies. Through extensive trial and error, I refined recipes to achieve a soft and chewy cookie that is both gluten-free and dairy-free, which has become highly popular, especially with my husband.</p>



<p class="wp-block-paragraph">The positive reception from my Bible study group, including both gluten-sensitive and non-sensitive individuals, further encouraged me. A specific request to cater a bridal shower with lemon and chocolate chip cookies prompted further recipe development. </p>



<p class="wp-block-paragraph">This experience, combined with prayer, solidified my aspiration to establish my own bakery. Consequently, I secured my business license and Michigan cottage law certificate, and began developing various flavors, leading to the organic growth of my business.</p>

<li><strong>Yes, we utilize certified gluten-free wheat starch, which is found in <a href="https://shop.kingarthurbaking.com/items/gluten-free-bread-flour">King Arthur gluten-free bread flour</a>. That is only for bread that I am working on and I will be letting buyers know that this bread isn&#8217;t safe for those with a wheat allergy.</strong></li>



<li><em>From King Arthur&#8217;s Website</em> &#8211; &#8220;The gluten-free wheat starch used in this product goes through additional gluten-free testing using both the R5 ELISA Sandwich and R5 ELISA Competitive methods to ensure it meets standards.&#8221;</li>



<li>&#8220;Once produced, the final Gluten-Free Pizza Flour and Gluten-Free Bread Flour are tested again to ensure a strict gluten-free standard of less than 20ppm, with a target of less than 10ppm, is met for the finished product.&#8221;</li>

<h3 class="wp-block-heading">What Other Precautions Do You Take When Baking Gluten Free?</h3>



<p class="wp-block-paragraph">Since our kitchen is not inspected, I always make sure our counters are disinfected with water, soap, and a little alcohol. I always make food for myself before I start baking. I clean after myself so I can ensure safe food handling and make sure my kitchen is clean and safe.</p>



<p class="wp-block-paragraph">However, as we operate under cottage food law and not as a commercial establishment, our products are not subject to official inspection. I transparently communicate this to our customers. </p>



<p class="wp-block-paragraph">I always advise customers that individual sensitivities vary, and I cannot assume liability for their personal dietary choices. It is worth noting that we have family friends with Celiac Disease who have enjoyed our products without issue.</p>

<p class="wp-block-paragraph">Everything we bake at Bear Necessities Bakery contains no gluten or dairy. All ingredients procured are explicitly labeled as gluten-free and dairy-free. The chocolate chips we use are free from the top 9 allergens. </p>



<p class="wp-block-paragraph">However, we consistently disclose the presence of common allergens such as soy and eggs, and peanuts in our peanut butter cookies. We currently use Country Crock Dairy Free Butter, which contains pea protein. </p>

<p class="wp-block-paragraph">I recall two instances where families with multiple allergies were able to enjoy our cookies, which brought me immense satisfaction. While I cannot recall the specific allergens, their positive feedback on our gluten-free and dairy-free treats was deeply rewarding. </p>



<p class="wp-block-paragraph">More recently, a customer purchased three cookies (cranberry, lemon, espresso). She subsequently returned to the same event to express her profound appreciation for our lemon cookies. </p>



<p class="wp-block-paragraph">She shared that they evoked memories of her late mother, who used to bake similar lemon cookies, and commented on the identical taste. She then purchased all eight remaining lemon cookies, resulting in a complete sell-out of that flavor.</p>



<h3 class="wp-block-heading">What Should Customers Know About Bear Necessities Bakery?</h3>



<p class="wp-block-paragraph">We aim for consumers to understand our genuine care and empathy regarding the challenges of finding enjoyable gluten-free and dairy-free sweets and baked goods. <p class="wp-block-paragraph">We accept special orders via phone and can issue invoices for customers who prefer not to use online platforms. Our website facilitates shipping within the state of Michigan. When you order online, everything is $4 each. We continue to offer pickup times on our website and catering request forms.</p>



<p class="wp-block-paragraph">Pick-up at our apartment is strictly by appointment. We also offer catering services, which include delivery with a fee of $1 per mile, in addition to a $15 per hour charge for three hours of my time.</p>



<h3 class="wp-block-heading">Do You Participate in Any Farmers Markets?</h3>



<p class="wp-block-paragraph">We don&#8217;t attend the same shows every weekend. <h3 class="wp-block-heading">Who Owns Born and Bread Bakery?</h3>



<p class="wp-block-paragraph">Briana Distlerath owns Born and Bread Bakery, which is a cottage law business. When she first learned of her issues with gluten, finding organic/non-gmo products without gums or preservatives was such a challenge for her. So she had no choice but to start making her own gluten free breads, tortillas, and sweets at home.</p>



<h3 class="wp-block-heading">What inspired you to become a baker? </h3>



<p class="wp-block-paragraph">My backstory: I love to bake! Bread has always been my thing. I started my bakery in 2021 after being left jobless and lost after covid. Passionate about following an organic diet, and focusing on non-gmo ingredients, I was on a mission to share my family recipes (Italian bread and tortillas primarily) with my community. I had a great following for a few years at the <a href="https://www.newbaltimorefarmersmarket.com/">New Baltimore Farmers Market</a> with my gluten filled items.</p>

<h3 class="wp-block-heading">Tell Me About Your Gluten Free Journey</h3>



<p class="wp-block-paragraph">I suffer from really bad eczema and realized when I would bake it would get worse. No matter what I did to cover my skin and prevent it from coming into contact with the flour, I would always break out terribly. </p>



<p class="wp-block-paragraph">The same thing would happen when I ate gluten. I would sometimes even get hives! After my son was born, my skin got even worse. Therefore, I saw a dermatologist who suggested I stop eating gluten. My eczema almost disappeared completely within a week! </p>



<p class="wp-block-paragraph"><em>(*Note from Margaret- People should seek out <a href="https://miglutenfreegal.com/how-to-get-tested-right-for-celiac/" type="post" id="89">testing for Celiac Disease </a>prior to removing gluten from their diet. Dermatitis Herpetiformis is a rash that can look like eczema, but is actually a dermatological reaction to gluten consumption.)</em></p>



<h3 class="wp-block-heading">Briana&#8217;s Determination to Master Gluten Free Baking</h3>



<p class="wp-block-paragraph">Over the last few years I was completely disappointed with store bought options for Gluten Free bread. So I started experimenting in the kitchen again. After lots of trial and error, and developing and testing recipes, I decided to re-launch my bakery as a dedicated gluten free business. I wanted to keep true to my roots and offer gluten free baked goods made with organic and non-gmo ingredients as well.</p>



<p class="wp-block-paragraph">I’ve done tons of research about cross-contact and ensuring I am offering a safe product for my customers. <em>I’ve always let each customer know my back story and that my oven has processed gluten in the past</em>. All of my ingredients are certified gluten free, always 100% non-gmo, and organic when I can source the ingredients.</p>

<h3 class="wp-block-heading">How Born and Bread Home Bakery Addresses Cross Contact</h3>



<p class="wp-block-paragraph">There is no longer any wheat or gluten present in my home. I’ve replaced my stand mixer, bread linens, any plastic or wooden bowls, spoons, and even wash rags used for cleaning. I only kept mixing bowls or utensils that are stainless steel or glass and could be completely sanitized.</p>



<p class="wp-block-paragraph"><em>The only item left for me to replace is my oven</em>. Even though I haven’t cooked any gluten items in my oven in years I still run a self clean cycle before each bake day. I also choose not to use the convection feature while baking for the bakery out of abundance of caution because I know it’s the fan that carries the risk of cross contact of micro particles of flour.</p>

<h3 class="wp-block-heading">Do You Accommodate Those with Other Food Allergies?</h3>



<p class="wp-block-paragraph">The only allergen my product line is completely free of is gluten. I use almond flour in quite a few of my baked goods, including a peanut butter cookie. </p>



<p class="wp-block-paragraph">Soy comes close, but my turtle cookies have butterscotch chips which have a small amount of soy lecithin in them. All of my gluten free baked goods are also gum free, preservative free, and dye free.</p>



<p class="wp-block-paragraph">In regards to dairy, all my breads are dairy free. However my cookies have dairy. In regards to eggs, my artisan loaf is dairy free and egg free, but my sandwich loaf has eggs. However, I am very careful about cross contact. For example, my egg free loaf has its own loaf pans. I also bake my cookies that contain dairy on a different days than the breads.</p>

<h3 class="wp-block-heading">What steps do you take to ensure that your products are truly gluten-free? only use certified products? call companies?, etc ?</h3>



<p class="wp-block-paragraph">All of my ingredients are certified gluten free. I always source non-gmo ingredients and get organic when I can. I try to find the highest quality ingredients free of added preservatives, enrichments, and dyes. I don’t use any gums in my baking, which sets me apart from other gluten free bakers. My customer base seems to appreciate this about me. The response I’ve gotten has been greater than I ever imagined.&nbsp;</p>



<p class="wp-block-paragraph">For all of my baked goods I blend my own gluten free flours. I like to experiment to see what gives me the best results. For example, most of my cookies are almond flour, aside from sugar cookies which use my own all purpose gf blend. My Sandwich loaf/marble rye is primarily millet flour, which i also use to make my cinnamon rolls.&nbsp;</p>

<li>The only time I use oats is with my oatmeal cookies, I use <a href="https://onedegreeorganics.com/products/organic-sprouted-rolled-oats-us/">One Degree Oats</a> which are certified gluten free. My non dairy milk I use is <a href="https://www.kikimilk.com/">Kiki milk</a>, which does contain oats, but it is also certified gluten free.</li>

<h3 class="wp-block-heading">If you sell at markets, do packaged goods have labeled ingredients and your business name?</h3>



<p class="wp-block-paragraph">I do frequent farmers markets &#8211; usually <a href="https://downtownph.com/farmersmarket/">Port Huron Farmers Market</a> or <a href="https://packardprovinggrounds.org/farmersmarket/">Packard Proving Grounds Market</a> in Shelby Township. I also do pop ups at <a href="https://www.facebook.com/p/Fair-Haven-General-Store-100063542921599/">Fair Haven General Store</a> south of Ira Township in St. Clair County. </p>



<p class="wp-block-paragraph">Through the winter season I aim to do 1-2 pop ups per month with porch pickups from my home. I do have fully compliant labels with ingredients, business name and address. </p>



<h3 class="wp-block-heading">Can you share a story of a customer who&#8217;s been greatly impacted by your business?&nbsp;</h3>



<p class="wp-block-paragraph">I have a particular customer that lives over an hour away that meets up with me and places large orders for my gluten free/dairy free/ eggs free bread and tortillas. </p>



<p class="wp-block-paragraph">Her 4 year old daughter recently was diagnosed with a bunch of food allergies and she was having a really hard time getting her &nbsp;to like any gluten/dairy/egg free options at the store. She says she loves that her whole family loves my products so she doesn’t have to buy multiple different breads for the whole family.&nbsp;</p>

<p class="wp-block-paragraph">I recently welcomed my second into the world, so I will slowly get back to the markers this spring and summer. Right now I plan to sell at markets every other week. Every time a customer tells me how grateful they are for my breads and treats it reminds me why I do what I do.&nbsp;<br></p>

<h3 class="wp-block-heading">Who Owns Golly Gee Gluten Free?</h3>



<p class="wp-block-paragraph">So many times, life causes us to pivot. To try something new, or take a different path. This was the case for Amanda O., owner of Golly Gee Gluten Free. When the pandemic hit, the future of her job was in question. Instead of panic, she chose to take a moment to dream of what &#8220;could be.&#8221; What did she really want to do? And with that, her business Golly Gee Gluten Free began.</p>



<p class="wp-block-paragraph">Like so many other gluten free bakers who start a business, Golly Gee Gluten Free is home based. The <a href="https://www.michigan.gov/mdard/food-dairy/michigan-cottage-foods-information">Michigan Cottage Food Law</a> allows her to bake in her home, and sell directly to the consumer. Unfortunately, the Cottage Law prohibits selling wholesale. Therefore you can currently only buy Golly Gee Gluten Free baked goods at farmers markets, or by special order. <h3 class="wp-block-heading">What inspired you to become a baker? Why the focus on gluten-free?</h3>



<p class="wp-block-paragraph">While I don&#8217;t have a culinary background, I love baking and cooking for others. Due to health reasons, I started a gluten free diet five years ago . Therefore, I know personally how difficult finding safe gluten free foods can be. Starting Golly Gee Gluten Free allowed me combine my love of cooking, and helping others.</p>



<h3 class="wp-block-heading">Are Golly Gee Gluten Free Baked Goods Free From Other Allergens?</h3>



<p class="wp-block-paragraph">If the product requires milk I use oat milk. I do still use butter and eggs in most things, although some things are vegan like my focaccia bread. My banana bread and soft pretzels contain no dairy. </p>

<p class="wp-block-paragraph">There is never gluten present in my kitchen, as it makes me sick. My baked goods are made with certified gluten free flours.</p>

<h3 class="wp-block-heading">Can you share a story of a customer who&#8217;s been impacted by your business?</h3>



<p class="wp-block-paragraph">One customer told me Golly Gee Gluten Free cinnamon rolls were the best she had tried, during her five years of eating gluten free. She planned to share them with a friend who had just been diagnosed with Celiac Disease. </p>



<p class="wp-block-paragraph">I also had a teenager visit my booth, who stated she&#8217;d never had a soft pretzel before, due to her Celiac Disease. She was excited to try one of mine. It&#8217;s wonderful to be able to affect people in this way.</p>

<p class="wp-block-paragraph">My business is a leap of faith for me. I want my patrons to know that I appreciate their support so much. The interaction with my customers truly brings me so much joy. When I know I&#8217;ve brought happiness to their life, it reaffirms this is what I was meant to do. I welcome feedback and suggestions.</p>

<p class="wp-block-paragraph">I do not have a storefront. Customers can contact me through Facebook messenger or email. From there, I&#8217;ll arrange to meet you at the market or another location for pickup and payment.</p>

<h3 class="wp-block-heading">Who Owns Vigilant Sweets in Grand Rapids, MI?</h3>



<p class="wp-block-paragraph">Like many small baking businesses in Michigan, Vigilant Sweets is a woman owned company. After living in North Carolina for 12 years and working in early childhood education, she decided to follow her passion for baking and trained as a pastry chef and cake decorator. </p>



<p class="wp-block-paragraph">After relocating back to Michigan, I started my own home bakery. Like many small business owners, she also works outside of her business. This allows her to keep building Vigilant Sweets with the goal of turning it into a full-time career.</p>



<p class="wp-block-paragraph">She chose the name &#8220;Vigilant Sweets&#8221; because of how vigilant she in keeping her family and customers safe from ingredients they can&#8217;t eat. In addition, her name Sahirah actually means &#8220;vigilant.&#8221; Which I think is pretty darn cool! </p>

<h3 class="wp-block-heading">What inspired you to become a baker? Why the focus on gluten-free?</h3>



<p class="wp-block-paragraph">When my youngest was born 17 years ago, she was very sick. Allergy testing revealed she had 15 food allergies, including wheat/gluten. She’s allergic to wheat and severely intolerant to gluten. Later I was also diagnosed with non-celiac gluten intolerance.</p>



<p class="wp-block-paragraph">Baking has always been something I loved, and that diagnosis was heartbreaking at first. However, it also gave me purpose. I wanted to create desserts that were safe for our family without sacrificing taste. My goal is to create treats that are just as rich and delicious as the gluten containing versions. </p>



<h3 class="wp-block-heading">Are Vigilant Sweets baked goods free from other allergens?</h3>



<p class="wp-block-paragraph">Yes. In addition to being gluten free, my baked goods are also 100% dairy free, oat free, and made without nuts. Egg-free/vegan options are available as well, depending on the item.</p>

<h3 class="wp-block-heading">What steps do you take to ensure that your products are gluten-free?</h3>



<p class="wp-block-paragraph">First, my home baking kitchen is 100% gluten-free, with no gluten containing ingredients used in the home or baking area. </p>



<p class="wp-block-paragraph">In addition, I only use certified gluten-free ingredients. If a label is ever unclear or questionable, I contact the company directly for clarification before using the product</p>

<li>I don’t use oats or oat milk because many people with celiac disease or gluten intolerance can’t tolerate them. I’m one of those people and can’t tolerate oats, even purity protocol oats, so my baked goods are completely oat free.</li>

<li>No. I don’t use certified gluten free wheat starch because my daughter and I both have a wheat allergy. I bake with gluten free ingredients that are completely wheat free.</li>

<p class="wp-block-paragraph">A customer shared that she and her daughter have an autoimmune condition and follow a gluten-free diet to help manage symptoms. </p>



<p class="wp-block-paragraph">She explained that her daughter will only eat my baked goods and can always tell if a gluten-free product comes from another company. Moments like that mean so much to me. It’s bigger than dessert -. It’s knowing I’m providing something they feel safe eating and genuinely enjoy.</p>



<h3 class="wp-block-heading">What would you like consumers to know about Vigilant Sweets?</h3>



<p class="wp-block-paragraph">I started this business for families with allergies and dietary restrictions who miss being able to enjoy the same desserts as everyone else. I always want my treats to feel safe and inclusive but also rich, flavorful, and actually delicious. I love being able to give people dessert options they can trust and genuinely look forward to.</p>

<p class="wp-block-paragraph">Vigilant Sweets does not have a storefront. I prepare all of my gluten free baked goods in my home. People can order through my website for pickup at a designated location, and I also sell at different markets and pop-ups during the spring and summer. <h3 class="wp-block-heading">Who Owns Taste Without A Trace?</h3>



<p class="wp-block-paragraph">Monica Vernier is the proud owner of Taste Without a Trace. Based in the greater Lansing, Michigan area, she hopes to help make eating gluten and dairy free easier for those with food allergies and dietary restrictions. </p>



<p class="wp-block-paragraph">I met Monica and her mother at an event in Mason. The three of us talked for a long time, and felt just like talking to a long time friend. Thanks to her recommendation, I enjoyed a new to me restaurant (<a href="https://tasteofthaiel.com/">Taste of Thai in East Lansing</a>) and had an amazing meal. </p>



<h3 class="wp-block-heading">What inspired you to become a baker? Why the focus on gluten-free?</h3>



<p class="wp-block-paragraph">I started this business because food is incredibly important in my culture; it’s how we connect and show love. After my daughter&#8217;s Celiac Disease diagnosis, I spent a lot of time in the kitchen recreating foods she was missing. It became something we bonded over, and she still loves helping me come up with flavor ideas.</p>

<p class="wp-block-paragraph">I do LOTS of research. I belong to Facebook groups and follow pages, such as Gluten Free Watch Dog. Gluten Free certification is something I always look for</p>



<p class="wp-block-paragraph">I have come across products that I absolutely need and can only find a gluten-free statement. <p class="wp-block-paragraph">Not one particular story. One of the compliments I receive all the time is that people who aren’t gluten free say they wouldn’t know the difference if I didn’t tell them. Every smile is a subtle reminder of why I’m doing this.</p>

<p class="wp-block-paragraph">I want consumers to know that my products come from someone who truly understands gluten-free living. I’ve been in the kitchen several years focusing on creating baked goods that feel nostalgic, joyful, and inclusive. In addition, I focus on sourcing organic and high quality ingredients while minimizing processed ingredients and numbered dyes.</p>

<p class="wp-block-paragraph">Outside Lansing Zone<br>Subject to location, as a general rule of thumb, 25+ miles outside of Okemos is $5, anything over 35+ miles is subject to an additional .73 cents per mile on top of the $5.</p>



<p class="wp-block-paragraph">This pricing does not include catering orders.</p>



<h3 class="wp-block-heading">Can You Tell Me More About Your Mobile Cafe?</h3>



<p class="wp-block-paragraph">My mobile café operates seasonally from March through October, weather permitting. Because I prepare my baked goods in the trailer, I intentionally limit the menu to comply with state regulations.</p>



<p class="wp-block-paragraph">From November through February, I participate in select shows and continue offering baked goods, along with a small mobile cart that I bring to businesses when permitted. Catering and special orders are available year-round.</p>
