Dear Jennie,
How you live your life is definitely your choice. But I would always advise a person who has received a definitive blood and biopsy diagnosis to adhere to a gluten free diet. I do concur that more research could be done about asymptomatic Celiac Disease patients.

I am totally asymptomatic 66 year old just diagnosed. I am still currently resisting a complete gluten free diet in favour of monitoring symptoms. Currently I have no deficiencies and bones that are not perfect but good for my age. Its hard for me to weigh up mildly damaged villi which are not causing me any discernible issues with an immense and unwelcome change in lifestyle- I have recently retired and want to travel, eat out and do all the things I have been dreaming of all my life- and self catering is not one of them! I have assessed the cancer risk and feel that it is minimal or linked to decades of exposure I will never have time for. The other risks I will keep an eye on and I am prepared to pivot if anything jumps out at me. The coeliac community makes me feel this long and carefully considered decision which my GP supports is madness. I feel that asymptomatic celiacs are largely unstudied or the findings are far from unequivocal. Medical orthodoxy shies away from a nuanced approach but maybe it shouldn’t

Playa Bowls did not start in Florida. It was started in 2014 at the Jersey Shore. States so in every store and on the picture that you posted.
Their oatmeal is not certified nor mentioned to be gluten free so I would not consider it safe.
