Mom's Homemade Lemon Curd

Ingredients
In a large saucepan, mix:
3/4
c.
sugar
2
tbsp
cornstarch
1/8
tsp
salt
Add:
1/4
c
lemon juice
grated rind of 1 lemon
Mix together until juice is combined into sugar mixture.
Finally, add
3
egg yolks
beaten
1/2
c
water
2
tbsp
butter
softened
Instructions
Combine all ingredients in a large saucepan and cook. Stirring constantly, cook over medium heat. Cook for approximately 15 minutes. Allow to cool.
