Mom's Homemade Lemon Curd

Ingredients
  

In a large saucepan, mix:

  • 3/4 c. sugar
  • 2 tbsp cornstarch
  • 1/8 tsp salt

Add:

  • 1/4 c lemon juice
  • grated rind of 1 lemon
  • Mix together until juice is combined into sugar mixture.

Finally, add

  • 3 egg yolks beaten
  • 1/2 c water
  • 2 tbsp butter softened

Instructions
 

  • Combine all ingredients in a large saucepan and cook. Stirring constantly, cook over medium heat. Cook for approximately 15 minutes. Allow to cool.
