Check out the small batch cheesy potatoes from Dessert for Two. It makes a super small batch, from scratch. The only “gluten” in her recipe is the optional french onion topping. (Which can be left off, or be substituted with potato chips.) Make sure to check out the homemade graham cracker recipe on my site, which you could use for the eclair cake! Love you, friend!

Our Easter dinner will be smaller this year, just the 5 of us. And I’m the only one in my family that likes cheesy potatoes, so I’ll try the instant pot mashed potatoes you have listed. Hope to find a 1/2 ham for us too. And I’ll probably do chocolate eclair cake for dessert, our family’s favorite! Though your lemon desserts sound fabulous (again, I’d be the only one eating it)!
