Hello, thanks for the recipe! Does the three cups of vegetables refer to three cups of cooked vegetables or three cups before you cook them? Thank you!

Made it for Mother's Day lunch, with fresh garlic, rosemary (from our garden), spinach, and zucchini. My wife told me she had never before seen her sister-in-law have seconds of anything! And I liked it better than an ordinary pie crust.
Thanks!

Here's a link to a Mr. Food recipe that uses sliced potatoes for the crust.
https://www.mrfood.com/Potatoes-Rice/Potato-Crusted-Pizza

I don't think adding cheese to mashed potatoes will make the crust you're looking for.

The Vegan 8 has a recipe that uses mashed potatoes, potato starch and oat flour.

It sounds interesting for sure. I have fallen in love with Yukon GOld potatoes, they are exceptionally creamy and not as textured as Idaho or Russet potatoes.
That being said, I was looking for a crust recipe with potatoes - for PIZZA :-).
Have you ever made that?
I've seen fat dough bread recipes for a keto diet and wondered if adding the mozzarella to mashed potatoes would crisp up enough (we like crispy pizza crust).
Any input?
