In reply to Sara. You may want to turn the stove down to medium or lower while you're simmering the rice. You want to make sure the rice cooks all the way, but doesn't boil over.

In reply to Brittan. Delta Blues Rice is no longer in business. Other rice brands should be fine. Lundberg Brand would be a good choice. Their rice is certified gluten free.

I am grateful for the recipe and excited to try it out! Looking online to find out more info on the Delta Blue rice. It is my understanding that machinery to process wheat/gluten products is often shared with rice processors. Currently I only buy ones that are certified or not processed on shared machines.

Arroz con pollo is a Cuban dish, not Mexican. They are different countries with very different foods.
