Why Michigan Agriculture is Important to Us All

Here on my blog, I love to share about gluten free products, especially from Michigan. I would be remiss if I failed to share the extensive agricultural products available in the Great Lakes State. Michigan produce provides over $125.8 BILLION dollars to our state’s economy. 

In addition, those with Celiac Disease often focus on what we can’t eat. However, fruits and vegetables are naturally gluten free. Furthermore, fruits and vegetables provide vitamins and minerals that we may be deficient in, due to malabsorption. What better way to support #MichiganMade than to support Michigan farmers!

1) Tart Cherries – #1 in the world

Michigan grows more Montmorency tart cherries than any other place in the world. (Which is why Traverse City is called the Cherry Capital!) Montmorency cherries contain high levels of healthy antioxidants, and may improve your quality of sleep. 2) Asparagus- #1 in the United States

Michigan produces more asparagus than any other states in the nation. Crops start offering their bounty as early as April. In addition, asparagus contains flavonoids which may lower blood pressure. 3) Dry Black Beans- #1 in the United States

Michigan grows more black beans than any other state in the country. While many people with Celiac Disease fail to consume enough fiber, 1 cup of black beans offers 60% of your daily recommended fiber intake. 4) Winter Squash- #1 in the United States

Michigan also grows more winter squash than any other state in the country. This includes hubbard, acorn and butternut squash. 5) Celery- #2 in the United States

Michigan ranks second in the nation for this green, crunchy vegetable that offers 25 anti inflammatory compounds. While it’s perfect for eating on its own, it’s also great in this recipe for Gluten Free Cream of Celery Soup from Mommy Hates Cooking. Another great option is to pair celery with my easy homemade hummus recipe.

6) Apples – #3 in the United States

There’s nothing better than visiting a Michigan orchard and enjoying cider and gluten free donuts. Michigan ranks 3rd in the nation for apple production. 7) Blueberries- #4 in the United States

I love blueberries. Chances are if you live outside of Michigan, you may be eating berries grown in the Mitten State. Michigan ranks third in the nation among producers of blueberries. 8) Pumpkins – #5 in the United States

Fall in Michigan isn’t complete without a trip to the pumpkin patch. Michigan ranks third in the nation for the production of this orange gourd. Enjoy it in pumpkin pie, pumpkin donuts and pumpkin cake rolls. Michigan also ranks third in the production of Christmas trees, so we appear to have all the holidays covered! 

9) Milk & Dairy Products – #6 in the United States

In 2020 alone, Michigan cows produced more than 11 million pounds of milk! The Mitten State is home to more than 1,500 dairy farms, and ranks 6th in the nation for milk production. While a glass of milk is great on cereal, or with a gluten free cookie, milk is also important in my favorite dairy product- Ice Cream! 10) Potatoes – #7 in the Nation (Eggs #10 in the Nation)

Did you know that Michigan egg farmers supply eggs to all McDonald’s restaurants east of the Mississippi River? It’s true! This is my go-to sugar cookie recipes. The blog post is long. However, this is because Flippin Delicious has taken the time tto answer just about any question one could ask. She does give tips on making this recipe egg free and dairy free. She also discusses which flour blends have worked best for her.

Michigan Cherries

Did you know that Michigan produces more tart cherries than any other state in the country? No wonder Traverse City is designated as the permanent home of the National Cherry Festival! Usually people think of pie or cobbler when baking with cherries.

However, I think these gluten free cherry chocolate chunk cookies should be just as revered. The blend of the tartness of the cherry with the sweetness of the chocolate chunk tastes like a chocolate covered cherry, wrapped up in buttery cookie dough. One bite and you’ll be hooked!

Enjoy Life Foods Chocolate

If you’ve been following me any length of time, you know I love Enjoy Life Foods chocolate. I often write about their dark chocolate morsels or their semi-sweet chocolate mini chips. However, their semi-sweet chocolate mega chunks deserve a shout out as well. I mean, who doesn’t want more chocolate in every bite, right?

I buy them not just because they taste good. Enjoy Life Foods carries a reputation of food allergy safety in all they do. In fact, they earned the first gluten free certification from GIG. In addition to that, these chips are non-gmo, kosher, halal certified, vegan, fodmap friendly, and paleo. I love brands who try to help as many people as possible.

(One of my favorite uses for Enjoy Life Chocolate is this decadent dairy free, Gluten Free Mocha Cake!)

Coconut Oil vs Shortening VS Butter

So, these gluten free cherry chocolate chunk cookies use a blend of coconut oil and butter. Why? Well, shortening and coconut oil in a cookie recipe prevent spread. Since we want the cookies to flatten a little, not a lot, we use an equal blend of both.

Could you use all butter? Sure. However, know that shortening and butter contain different levels of moisture. Butter contains approximately 80% fat and 20% liquid. Shortening and coconut oil contain no liquid. Therefore, if you choose to sub straight butter in a recipe, you will likely need more flour, or reduce the liquid in the recipe.

(Also, why coconut oil vs. shortening? Simply because I use coconut oil for other purposes, and have it on hand. If you want to use shortening, knock yourself out. Well, not literally. That would hurt.)

King Arthur Flour Gluten Free Measure for Measure Flour

Speaking of flour, my gluten free flour preferences have changed over the years. In all honesty, I used to bake with whatever flour I had handy. However, I recently started using King Arthur Flour Measure for Measure gluten free flour in almost all of my baking. Let me tell you why.

First, one 1/4 cup of KAF GF flour weighs approximately the same as wheat flour. This does not hold true for all gluten free flours. Second, it contains no dairy and no gmo’s. Plus, King Arthur Flour fortifies this GF flour with iron, calcium and B vitamins. Not a common practice among other companies.

(Note – For those with additional food restrictions, this product contains none of the top 8 allergens. However, King Arthur Flour informed me they process it on lines shared with milk, egg, soy and almonds.)

Cherries and their Juice

This recipe for gluten free cherry chocolate chunk cookies uses dried cherries soaked in cherry juice.  (No vanilla!) However, it uses only one tablespoon. So, whaddya do with the extra tart cherry juice? Well, drink it, for one. Or use it in this amazing Tart Cherry Glazed Salmon recipe from Running to the Kitchen.

Some research suggests that that cherry juice may help with sleep regulation. Therefore, I’ve been tempted to try these Tart Cherry Sleep Gummies from WellnessMama. Fruit snacks aren’t just for kids anymore, my friends!

Gluten Free Cherry Chocolate Chunk Cookies

• USA Pan Bakeware Half Sheet Pan
• Enjoy Life Semi Sweet Mega Chunks, 10 Ounce Bags (Pack of 6)
• King Arthur, Measure for Measure Flour 3 Pounds

Ingredients

• 1 1/2 c King Arthur Flour Measure for Measure Flour
• 1/2 tsp baking soda
• 1/2 tsp salt
• 1/2 cup dried cherries chopped
• 1 tbsp tart cherry juice (or water)
• 1/4 c butter softened
• 1/4 c coconut oil softened
• 1/2 cup brown sugar
• 1/4 c white sugar
• 1 egg
• 5 oz. Enjoy Life Semi-Sweet Chocolate Mega Chunks

Instructions

• Chop dried cherries and soak in warm tart cherry juice (or water) for approximately 10 minutes.
• Using stand or hand mixer, cream butter and coconut oil. Add sugars, and continue creaming until well combined. Add egg into the creamed sugar mixture. 
• In smaller bowl, mix together flour, salt and baking soda. Gradually add dry ingredients to wet, about one third at a time. Make sure to scrape bowl in between additions to make sure all flour has been incorporated.
• Add soaked cherries and chocolate chunks and stir well with a spoon. 
• Cover dough and chill for at least one hour or longer.
• Remove dough from fridge, preheat oven to 350, and line a cookie sheet with parchment paper.
• After dough has come to room temperature, use your hands to gather about 2 tbsp of dough. Roll into a ball and then flatten. Place cookies on lined cookie sheet and bake in oven for 10 minutes. Let cool on cookie sheet for 5 minutes prior to moving to cooling rack.

Tru Pizza (formerly Renee’s Gourmet Pizzeria) started in Troy, Michigan as a 100% gluten free pizzeria. Since then they have added a location in Plymouth, MI and have recently opened a food truck. You’ll find it mostly in the Metro Detroit area, and in Ann Arbor on Wednesdays at the Farmers Market. Follow them on social media to see their schedule.

Ace’s Donuts – Royal Oak (100% GF)

Veged Out Food Truck – Waterford (GF Options)

While Vedged Out is NOT a 100% gluten free food truck, they have lots of gluten free options. In addition, they’re the old vegan food truck I’d recommend. They have some amazing gluten free wraps. You can usually find them at Oasis Health Foods.

Burger Bus – Marquette (Mostly Gluten Free)

Everything on the Burger Bus food truck is gluten free, except the brioche bun. Even their fried chicken is gluten free! Gluten free buns are available for $2.50 extra.

Fire and Rice – Lansing & Ann Arbor (100% GF)

I discovered paella when in college. My college roommate has Spanish extended family, and she made this often. The blend of saffron and vegetables and artichokes tastes like home to me.

Therefore, imagine my ecstatic joy when I realize that Fire and Rice makes all their paellla to be gluten free. It’s like heaven in a box. Follow them on Facebook to stalk find them near you!

Kona Ice – Multiple Franchise Locations (100% GF)

Many dessert food trucks exist out there. However, this is the only food truck I know where everything is gluten free. True, Kona Ice basically serves snow cones. But how great is it to relive your childhood with creative flavors? Kona Ice is a franchise, so you can find them in lots of cities. I visited a truck while at a Frankenmuth Truck Rally, and the owners reside in Fenton.

Disclaimer. I have not personally eaten at this food truck. Their business popped up frequently when searched for Michigan gluten free food trucks. They offer gluten free bread for any of their sandwiches.

Staff stated they “switch gloves, clean and sanitize surface areas and use separate utensils,” when preparing a gluten free sandwich. Simply let their staff know about your allergen when you visit. Visit their Facebook page to learn more.

Shuck ‘n’ Ladder Corn Roasting – Metro Detroit Area

I ate at Shuck N’ Ladder while at the Michigan State Fair years ago. They serve hot, buttered ears of corn, with different, optional toppings. I felt so excited to find food at the fair that I could eat. I am unsure if their potatoes and walking tacos are gluten free. However, I wouldn’t be surprised if they were. Paul Swanson, on the right, is the man and vision behind this line of gluten-free sauce bases. Their products makes it easier for life to “go back to normal” after a Celiac Disease diagnosis.  Green Bean Casserole becomes easy again with their Cream of Mushroom Sauce Mix. 1. What inspired you to become a food producer? Why the focus on gluten-free?

Well, here is the “short” story:  We have a long family background (over 100 years combined) in the creation of  commercial soups, sauces and gravies.  My mother discovered her intolerance to wheat/ gluten almost 50 years ago.  She felt frustrated about the lack of quality options at the grocery store, so we started making our own. As the gluten free industry grew, we felt there might be real interest in quality soup, sauce and gravy choices like ours.

2. Are there other highlights of your products? Low sodium, fat free, etc?

Full Flavor Foods products are free from gluten, egg, nuts, MSG, hydrogenated oils, and trans fats.  They contain no artificial colors, flavors or preservatives.  In addition, the majority of our products contain no soy. (The beef gravy is the exception.) Our 4 gravies are also dairy-free.  In addition, our Mushroom and Cream Soups/Sauces are also lactose free! (We use coconut oil instead of cream in our cream soups and sauces.)

3. What steps do you take to insure that your products are truly gluten-free?

A company independently tests every batch of Full Flavor Foods mixes before we ship them for sale.  We have never received a result indicating a trace of gluten, using the very best testing, which tests for less than 5ppm. (“parts per million”). Our products are also third- party certified as being gluten-free by the Gluten Free Food Program. (Which is endorsed by the National Celiac Association.)

4.  Do you have any stories of customers who reported back to you how important your products have been in their life?

I had a woman in Texas literally break into tears after tasting our Southern Style Breakfast Sausage Gravy (made with our Cream Soup/Sauce Base mix).  She had not enjoyed it in years because she could not find anything GF or make it correctly without using wheat flour. So, it feels like we are make a small difference in people’s lives, helping them recreate many of those comfort foods they miss.

5.  What would you like consumers to know about your products and your business?

We want consumers to know our products are safe for those with Celiac Disease. Not only that, but they are quite delicious, very versatile (check out our GF Recipe Booklet) and better than most similar products found in the marketplace. Why? Because we care about quality.  Where other companies make “brown gravy,” our beef gravy mix is made from real beef.

To us, this company is more than just a business.  We understand (from firsthand experience) about the challenges faced by those with Celiac Disease or Gluten Intolerance . We know they still want, and deserve, great tasting food.  Being gluten-free does not mean consumers have agreed to settle for substandard food!

We also want to spread the word that our mixes now come in bulk for food service customers and larger families. Our larger bags can make up to a full gallon of sauce or gravy. Orders have mostly been from grocery chains (with commissary operations), nursing homes, schools, and hospitals. However even larger families love our bigger, resealable bags.

Who is NSF?

NSF International, based in Ann Arbor, Michigan offers third party gluten free certification. Originally known as the National Sanitation Foundation, they have been ensuring consumer safety since 1944. In the 50’s they created “standards for the sanitation of soda fountain and luncheonette equipment.” Today they are an international company that tests products for many safety factors.

Where is NSF and What is Their History of Certification?

I recently had the chance to tour their Ann Arbor headquarters. It contains 150,000 square feet of laboratory space. They take the integrity of their work and the privacy of the companies they certify very seriously. Therefore I wasn’t allowed into individual labs. A few times they covered up work stations as we walked past in the hallways.

In 2004, NSF acquired QAI, one of the largest certifying organizations of organic foods and products. QAI had a long history of certification standards, since 1989. NSF created their gluten free certification standards from the organic testing protocols from QAI. In addition, NSF and QAI had gluten free standards of 20 ppm per million long before the FDA did.

What is NSF’s Process for Gluten Free Certification?

There are 5 steps to gaining gluten-free certification through NSF.

1) Application – Companies must submit an application, necessary documents & a signed application.

2) Product Review – NSF reviews the product, which includes product labeling, raw ingredients and the company’s allergen procedures and protocols.

3) Onsite Inspection – A team member travels to the manufacturing plant and visually inspects the premises to make sure all things disclosed in the paperwork are accurate.

4) Sample Testing – Staff take a random product sample while on premises. NSF staff then send back to the lab to verify it contains less than 20 ppm of gluten content.

5) Certification – Once a product is certified, the NSF certification mark can be used on packaging. It is also allowed on advertising literature and on the company website. Certification is an ongoing process. NSF audits businesses every year. Also, they make unannounced visits to verify that companies are maintaining their standards.

How Easy Is It To Get Certified thru NSF?

If you think this is a stringent process, you’re right. Brandon Rudolph, one of the writers of the gluten-free certification protocols, told me that many businesses never get past the second step. As someone with Celiac Disease himself, Brandon fully understands just how important this process is.

Have you seen the NSF certification mark on products? It’s a blue circle with the letter “NSF” written in the center, in white. The NSF gluten-free certification logo also includes a white ring around it with the words “certified gluten-free.” Some products that bear this logo inclue Toffee-Tastic gluten-free girl scout cookies made by Little Brownie Bakers, and Twin Lab children’s Wicked Smart Gummies.

Why Is Third-Party Gluten Free Certification Helpful?

Living with Celiac Disease can cause trust issues when it comes to food. Even though the FDA has finally defined what gluten-free means, it may not always mean that producers (or consumers) understand. Gluten can show up both in ingredient sourcing and in food production.

When we’re trying a new product, we don’t necessarily know the manufacturer personally, or their level of gluten free knowledge. Having a process, audited by an outside organization, we can trust is beneficial. It may make items cost more due to the certification process costs they incur, but I think it’s worth it to keep our health.

But Still Read the Label

Please know that, while certification logos are helpful, these processes aren’t fool proof. Companies sometimes add gluten ingredients to their products, even certified products. (They get recalled. Malt and barley are most often the culprit, or wheat in soy sauce.) Also, brands that are not certified occassionally use the logos without the organization’s permission. At the end of the day, you will  always be your best advocate for your health. Read the label.

1. A dairy cow must get pregnant once a year to produce milk.

Yeah, I know, this should be obvious. I’ve been watching way too many movies and stories of sheep being born in the spring. Fun fact about about dairy cows and babies. Almost all dairy cows are artificially inseminated.

2. Fraternal twin cows do not produce milk.

If a cow has twins, and one is female and the other male, the female cow will never produce milk. Therefore, the farmer sells her. I learned this at Paulen Farms in Howard City. This family dairy farm has been around in one way or another for over 100 years. The day we visited him, we were lucky enough to see twin calves that were born the night before.

3. Cows are pretty shy animals and don’t have top teeth.

When I first talked to Andy, I asked him if I could pet the cows and if they would try to bite me. He explained cows are pretty shy creatures. They become nervous around large crowds and generally don’t come near enough to let you pet them. Another interesting fact? They have no upper teeth!

4. Cows only sleep 3-4 hours a day

As a person who easily needs 6-7 hours of sleep, this astounded me. I admit that life seems pretty easy for a cow on a dairy farm. It pretty much involves eating, relaxing, and producing milk.

5. Cows need to keep cool to make milk.

Above 72 degrees, cows will stop eating and therefore stop producing milk. I actually learned this at the Pyle Farm. We were all amazed at how cool it was inside the barn, even on a hot summer day. 

6. Michigan dairy farmers are part of one large co-op.

This is because they believe in working together as an industry instead of being in competition with each other all the time. In this dog eat dog world, I’m amazed that each  Michigan dairy farm chooses to work together as an industry. I don’t think I know of ANY other industry that does this. Michigan even has a United Dairy Industry. You can follow them on social media at @milkmeansmore to learn all sorts of facts, recipes, and learn about events.

7. Michigan ranks 6th in the entire nation for milk production

An average Michigan dairy farm cow produces over 2,000 gallons of milk a year. We’re not just huge in milk production. We’re #1 in the nation in the production of lowfat ice cream mix. Since August 19th is National Soft Ice Cream Day, we all have a lot to celebrate in this state!

8. Milk containers with the first two digit code of “26” indicates it is Michigan milk.

We often see notifications on Facebook, Twitter, and other places about making sure to check your produce for codes that specify it is organic. Who knew that dairy uses a similar coding system!

9. A dairy farm can be a dangerous place to work.

I’ve known that Andy has worked long hours at his dairy farm for a long time. Because farm work is never “done,” he often misses family functions. There are many times that farmers pay a much larger sacrifice than of just their time and talents. Andy told me of a local farmer that died within the past few years because he was killed by a bull.

10. Farmers are 3.5 more likely to commit suicide

A 2024 PBS article talks about the high stress and suicide levels in farming. A 2023 article from DairyHerd.Com states that ““Forty-five percent of farmers’ and ranchers’ suicides in the last 15 years were committed by people aged 65 and older.” I say these things not to cause uproar over safety in the farming industry. I say these things because, with the growth of supermarkets, we lose the connection to the people who produce the food we eat.

We disconnect from the needs and concerns of those who make it possible for us to take in nourishment every day. It makes it easy for us to lose our sense of gratitude for what they do for us.

So the next time you drink a glass of milk, eat some ice cream, or sprinkle cheese on your pizza or salad, remember that there is someone working, literally, all the time to make it possible. Someone who cares for the animals and for our communities. Someone who deserves our gratitude and respect.
