Dear Margaret,
Thank you for sharing your story. I too was excited when NIMA launched. I even organized a Skype interview with the staff for our entire Flint, MI area celiac disease support group. However, as more became known, I realized it was not all that I had hoped it would be. I also wish they could find a cure, or long term treatment, for this disease. Glad to hear that your daughter is doing better, but sorry that it has become so difficult for her.
Sincerely,
(Another) Margaret

I bought a Nima in May hoping it would help our daughter with celiac eat safely at restaurants and eat processed GF foods safely because she has very very delayed and gradual reactions to gluten. For the past 5 years she was frequently feeling bad and getting elevated bloodwork showing she was getting gluten. We could never ever identify any of the foods that were contaminated (our house is even 100% GF). Sadly even after using Nima while going to restaurants and testing packaged processed GF foods... after 4 months her symptoms were back and her bloodwork was elevated again. We went back to no eating at restaurants and no processed GF foods and all her symptoms went away. All I know is it seems like my daughter got small amounts of gluten repeatedly while using Nima. I wish Nima could become more sensitive, reliable, and accurate so my daughter can safely eat at restaurants and safely eat processed GF foods. I really hope a treatment for celiac is discovered soon so she does not even have to worry if she does get gluten. We will get her bloodwork checked again in several weeks to see if it has normalized after going back to only eating non processed gf foods at home. She feels really great while only eating non processed gf foods at home... but that is not very easy to do.

Dear Alex,
Thanks for reading thru it all!
I agree with your concerns, in addition to restaurants being maligned by NIMA results, when in fact the dishes do test below 20 ppm. I've worked with too many wonderful restaurant here in the states to allow their businesses to be hurt by inconsistent technology.

Thank you for this straightforward analysis and breakdown of the issues. Interesting, not long (or it didn't feel so - I read to the end) and worrying.

Aside from the fear this sort of reporting must generate among gluten-sensitive diners, I also worry for the effect it might have on food service providers. Are those who already provide GF options who read these reports going to be motivated to carry on doing so? Are those who don't provide GF options going to see them and think it's just not worth the hassle to begin to do so?

I fear so.
